In limited water (<30%), the gelatinization temperature of starch increases as the moisture content decreases. When sugar is dissolved in water, the sugar displaces part of the water. Therefore, the moisture content of a wheat starch granule in a sugar solution is always less than 30%; thus, the gelatinization temperature is increased. When sugar is dissolved in water, the Aw is decreased. This decreased Aw was shown to increase the onset melting point of crystallized dextrins. Thus, the well known effect of sugar increasing the onset temperature of starch gelatinization appears to be a result of the displacement of the water inside the starch granule and the lower Aw.

The effects of genetics and environmental factors on isoflavone content of soybean (Glycine max L.) cultivars grown in different locations in Brazil in 1993/94 were evaluated. Seeds of different cultivars were analised by high performance liquid chromatography (HPLC). In Rio Grande do Sul (RS), Paraná (PR), and Mato Grosso do Sul (MS) States, a significant difference in the isoflavone total content average of the cultivars IAS 5 and FT-Abyara (163.9, 116.4 and 79.5 mg/100 g, respectively) was observed. In general, IAS 5 contained higher isoflavone than FT-Abyara. Cultivars IAS 5 and FT-Abyara grown at Vacaria, RS (28°30' S latitude) with temperature average of 19°C, had the highest isoflavone concentrations (218.7 and 163.8 mg/100 g, respectively). In Palotina, PR (24°27' S latitude), where temperature average was 24°C, the isoflavone concentrations were 105.9 and 86.8 mg/100 g, respectively. The lowest isoflavone contents were observed for FT-Estrela and FT-Cristalina, (27.6 and 46.5 mg/100 g, repectively) at Rondonópolis, MT (16°20' S latitude), where the temperature was 27°C.

Defatted soy flour (DSF) was pretreated with Viscozyme L to hydrolyze cell wall polysaccharides with the objective of enhancing protein extraction. Response surface methodology (RSM) was used to study the effects of treatment variables, Viscozyme L concentration (15–45 fungal beta‐glucanase units [FBG]/10 g solids) and temperature (45–65C), on protein extraction and reducing sugars released from DSF. The regression model represented the relationship between the independent variables and the responses. Protein extraction from DSF was mainly affected by temperature, whereas the content of reducing sugars was affected by the enzyme concentration. From the RSM‐generated model the optimum conditions for maximum hydrolysis of carbohydrates occurred at temperature of 45C with Viscozyme L concentration of 45 FBG/10 g of DSF, but the most carbohydrate hydrolysis did not result in higher protein extraction which was affected mostly by the temperature of pretreatment, with higher extraction at the higher temperatures (55 and 65C). Practical Applications The enzyme treatment to legume or cereal flours have been recognized in the food industry and the main objective is to improve the utilization of nutrients in raw materials. The multicomponent nature of Viscozyme L, which contained a wide range of carbohydrases including arabanase, cellulase, hemicellulase and xylanase seemed to be advantageous in cleaving the linkages within the polysaccharide matrix, and hence liberating more intercellular constituents like nitrogen. However, preprocessing of soy flour with Viscozyme L for the extraction of protein has not been previously reported. This study provides very important information about the optimum Viscozyme concentration and temperature that is useful for increased protein extraction and to produce the best quality products.

O consumo de soja [Glycine max (L.) Merrill] e derivados tem sido associado a redução do risco de doenças crônicas [15,16]. As isoflavonas, compostos fenóli-cos encontrados na soja, estão envolvidas em atividade anti-carcinogênica, redução da perda de massa óssea e diminuição do colesterol sérico [1,11,12,16,21]. As isoflavonas compreendem as agliconas daidzeína, genisteína e gliciteína, os respectivos β-glicosídios e os conjugados malonil-glicosídios e acetil-glicosídios [10]. A concentração de isoflavonas nos grãos de soja é geneticamente controlada e influenciada pelas condições ambientais, sendo a temperatura durante o desenvolvimento do grão o fator mais importante [5,22]. Segundo , soja plantada em regiões com temperaturas médias de 20 o C apresentaram concentração média de isoflavonas de 147,8mg/100g (FTAbyara) e 180,1mg/100g (IAS 5) e quando plantadas em regiões com temperatura média de 25 o C apresentaram 73,5mg/100g e 85,5mg/100g, respectivamente.As isoflavonas também estão presentes em alimentos à base de soja, como tofu, miso e tempeh, 33,7mg, 29,4 e 62,5mg/100g (b. u.), respectivamente, que são consumidos há milhares de anos por asiáticos e que constituem uma fonte destas substâncias [25]. No Brasil, segundo produtor mundial de soja, cerca de 70% do farelo de soja é destinado à exportação e os 30% restantes utilizados em ração animal e uma proporção reduzida como matéria-prima industrial na forma de isolados e concentrados protéicos. O processamento da soja dá origem a diferentes matérias-primas como farinhas de soja, extratos hidrossolúveis e proteínas texturizadas que podem ser utilizados na produção de alimentos que fazem parte da dieta ocidental [9,24]. Nos últimos anos, a procura por alimentos derivados de soja tem aumentado devido a divulgação dos benefícios à saúde atribuídos ao consumo desta leguminosa.A presença e a concentração das isoflavonas nos produtos à base de soja dependem das condições de processamento, principalmente a temperatura de tratamento do material [8,25].
