In recent years, Russian and international breeders have produced a great many of new varieties of Vitis vinifera grapes as well as interspecies hybrids, distinguished by a high quality of fruit and other useful economic and biological features. Having a big reserve of technologically important substances and hygienic factors of grapevine, the resistant varieties may prove especially efficient for the production of premium-class wines. The appearance of high-end Russian wines with protected geographical indication (PGI) and protected appellation of origin (PAO), first of all, fits in with the requirements of international markets. It is a necessary criterion for product quality and safety assurance at the highly competitive global market, and development of universally recognized brands. It also helps resolve a number of socio-economic issues, such as formation of winemaking culture, and production of wines of guaranteed quality from own grapes. This study is devoted to substantiating the necessity for development of methods of formation of single information databases on characteristic features of PGI and PAO wines, including their distinctive organoleptic, physical and chemical properties (extract components – the cation-anion composition, organic acids, total phenolic and anthocyanin content; unique colour characteristics), as well as the application of the system of organoleptic assessment of wines with the use of descriptive analysis of wine colour, flavour and taste. It is well-timed and relevant to determine the regularities of realization of the varietal potential of a grapevine plant in terms of climatic conditions of growing and geographical origin based on the study of the endogenous and exogenous components of wines with the use of the methods of high-performance capillary electrophoresis, spectral photometry, organoleptic analysis, and statistical techniques. This research generalizes and puts forth a contemporary view of varietal and geographical identification of wines. It is shown that the proposed research guideline is highly sought-after, and it is of fundamental and practical importance for the development of regional and national selection, genetic, viticultural and winemaking industries.

An increase in ambient temperature affects the quality of wines, which is largely due to a change in the metabolism of phenolic substances in grapes. A possible solution to the problem is the use of autochthonous varieties adapted to unfavorable conditions. The influence of agroecological conditions of 4 vineyards on the phenolic complex of the Crimean grape variety ‘Kokur Belyi’ has been studied. Methods of geoinformation and mathematical modeling, HPLC were used. It is established: vineyards differ in heat resources in the row: Vilino < Privetnoe < Solnechnaya Dolina < Morskoe. An increase in the heat supply of territories caused the accumulation of phenolic acids, flavonols, (+)-D-catechine and procyanidins B4 in grape seeds and a decrease in the content of phenolic acids, (-)-epicatechine, procyanidins B3 in skin and pulp. The highest content of procyanidins in seeds and the lowest content of monomeric phenolic components in skin and pulp was determined in grapes from the village of Morskoye. Grapes from Vilino contain 3.7 times less procyanidins in the seeds, 6.5 and 3.6 times more monomeric components in the skin and pulp. Conclusion: the heat supply of vineyards contributes to both the biosynthesis of monomeric phenolic components and their polymerization during the ripening of grapes, leads to a significant differentiation of the phenolic complex of grapes ‘Kokur Belyi’.

The biologization of viticulture is considered as a necessary attribute of its effective functioning, aimed at reducing environmental and economic risks. Comparative studies of the effect of conservative system of agriculture, including chemical crop protection, and the organic system with using preparations Extrasol, Respecta, Chitosan, Tiovit Jet on physicochemical indicators and quality of grapes and wines were carried out. We used grape cultivar ‘Bastardo magarachskiy’ from the South Coast area of Crimea. It was found that using preparations in the organic farming system contributed to the accumulation (α<0.05) of sugars in berries on average by 15%, phenolic compounds – by 13-22%, anthocyanins – by 23%, and PPO activity of the must. Experimental schemes of treatment did not influence the accumulation of aldehydes in berries. Their effect on the content of ketoacids was determined by the crop year conditions. Experimental wines were distinguished by a higher (α<0.05) content of ethyl alcohol, phenolic compounds (on average by 46%), anthocyanins (1.6 times), pyruvic and α-ketoglutaric acids (1.6 and 1.9 times) and a lower (by 20 %) concentration of aldehydes. Experimental schemes of treatment did not influence on the organoleptic of wines. The best result was shown by the complex of Tiovit Jet and Extrasol.
