Die MAILLARD‐Reaktion von β‐Lactoglobulin mit Lactose bewirkt bei einem Feuchtigkeitsgehalt der Gemische von 10% eine unterschiedliche Zerstörung an Lysin, die von der Höhe der Temperatur und der Dauer der Temperatureinwirkung abhängt. Die Abnahme des Lysingehaltes beträgt nach 40tägiger Lagerung bei 37 °C etwa 30%, nach Erhitzung auf 55 °C für 4 lage bzw. auf 96 °C für 4 h etwa 40%. Bei etwa 0 °C gelagerte Proben lassen nach 35 Tagen signifikante Verminderung des Lysingehaltes nicht erkennen; nach 90 Tagen ist dagegen eine Abnahme um 7% erfolgt. Arginin und Histidin sowie die sauren und neutralen Aminosäuren werden gemäß der Bausteinanalyse bei der thermischen Behandlung in Gegenwart von Lactose nicht geschädigt.
