Elektrophoretische Untersuchungen von β‐Lactoglobulin nach Umsetzung mit Lactose in Gegenwart von 10% Feuchtigkeit ergeben in Polyacrylamidgelen mit Acetatpuffer bei pH 4,0 abnehmende Wanderungsgeschwindigkeiten mit zunehmender Erhitzungsdauer. In Barbituratpuffer bei pH 8,6 ist dagegen keine Differenzierung der Reaktionsprodukte zu erreichen. Die Bestimmung der Teilchengröße von β‐Lactoglobulin nach der Reaktion mit Lactose bei 37 und 55 °C in Gegenwart von 10% Feuchtigkeit führt mit Hilfe der Gelfiltration an Sephadex G‐100 und der Ultrazentrifugation übereinstimmend zu dem Ergebnis, daß eine geringfügige Erhöhung des Molekulargewichtes des Proteins stattfindet, die auf die Bindung von Kohlenhydratresten zurückzuführen ist.
Die MAILLARD‐Reaktion von β‐Lactoglobulin mit Lactose bewirkt bei einem Feuchtigkeitsgehalt der Gemische von 10% eine unterschiedliche Zerstörung an Lysin, die von der Höhe der Temperatur und der Dauer der Temperatureinwirkung abhängt. Die Abnahme des Lysingehaltes beträgt nach 40tägiger Lagerung bei 37 °C etwa 30%, nach Erhitzung auf 55 °C für 4 lage bzw. auf 96 °C für 4 h etwa 40%. Bei etwa 0 °C gelagerte Proben lassen nach 35 Tagen signifikante Verminderung des Lysingehaltes nicht erkennen; nach 90 Tagen ist dagegen eine Abnahme um 7% erfolgt. Arginin und Histidin sowie die sauren und neutralen Aminosäuren werden gemäß der Bausteinanalyse bei der thermischen Behandlung in Gegenwart von Lactose nicht geschädigt.
In a prospective study we investigated the changes of lipoprotein metabolism under therapy with high doses of oestrogens or androgens, applied to stop the excessive growth of very tall girls or boys. Therapy with 2 mg ethinyl oestradiol sulfonate per week for one year in 11 girls resulted in an increase in serum triglycerides, which was reversible after cessation, and a minimal rise of total cholesterol and HDL-cholesterol in the phase of adaptation to this treatment. Therapy with 1000 mg testosterone oenanthate per month for one year lead to a fall of triglycerides and HDL-cholesterol. These changes are considered as a regulative phenomenon, without consequences for the application of the high dosage therapy with these steroid hormones in the treatment of excessive growth.
