The study was conducted in 2 urbanized areas of the Baikal region of Russia. These are the cities of Shelekhov and Tayshet with their suburbs. Aluminum production has been carried out in Shelekhov for over 60 years and in Tayshet for 5 years. The purpose of the study was to determine the pollution of urban soils with toxic elements—Al, F, Be, Li, as well as Cr, Ni, Pb, and so on under the influence of industrial enterprises (aluminum and cable plants, thermal power plants). Also, the purpose of the research was to determine the effect of increased fluorite (F) in the environment on children’s health. Pure aluminum is used much less frequently than in alloys. The addition of various elements (Be, B, Li, Fe, Si, Mg, Mn, Zr, Ag, Pb, Cu, Ni, and others) increases the hardness, density, thermal conductivity, and other properties of the alloys. The area of high F content in urban soil is 15 times higher than the regional context. The maximum content of Na, Be, and Al is 2 to 4 times higher than the regional background. An increased Li content is marked only near aluminum smelters. The F content in urine samples from children living in areas with long-term pollution exposure (Shelekhov) is 1.5 to 2 times higher than in the group of children with a short exposure period (Tayshet).

In the modern food industry special attention is paid to improving the quality of functional products. The problem of food shortages has given way to its low nutrient composition. Regular imbalance in the intake of vitamins and trace elements can lead to the development of disorders in the body, called vitaminosis or micronutrientosis. Regional peculiarities of the food production area, the influence of anthropogenic factors on the environment, the quality of drinking water and others contribute to the emergence of an imbalance of elements. Diet correction can be used as a mechanism for regulating violations of the elemental status of the population. In this case, it is advisable to use fortified foods. One way to enrich and preserve the necessary component is to immobilize its colloidal structure on the surface of a biopolymeric carrier. Insoluble or gel-forming natural sorbents and carriers with a protein structure are most suitable for immobilization. These include: agar, pectin, chitosan, collagen, starch, cellulose, carbon, etc. An important criterion for selecting a carrier is low toxicity, solubility in the body, and the ability to provide a stable fixation of the dispersed phase. The choice of the immobilization method is important to increase the fixation of the introduced component and reduce the obstruction of its absorption in the body.

The aimof the work is to study the state of health and peculiarities of metabolic reactions in adolescents, representatives of the small Siberian ethnos - tofalars and caucasians.Materials and methods.Clinico-biochemical examination of children and adolescents, representatives of a small ethnic group – Тofalars and Caucasians, permanently residing in the territory of Tofalaria in the Irkutsk region. The metabolic status of adolescents was assessed using spectrophotometric (total cholesterol, diene conjugates), fluorometric (superoxide dismutase activity, α-tocopherol and retinol levels), immunoenzymes (determination of thyroid-stimulating hormone concentrations, free fractions of triiodothyronine and thyroxine, cortisol).Results. An increased incidence of diseases of the musculoskeletal system and connective tissue, as well as diseases of the endocrine system and eating disorders – among Тofalars; diseases of the genitourinary system – among Сaucasians. For practically healthy Тofalar teenagers, in contrast to Сaucasians of the newcomer population, adaptive metabolism reactions are characteristic, which is expressed by a reduced level of total cholesterol and increased values of antioxidant factors (the level of fat-soluble vitamins – α-tocopherol and retinol), and adaptive changes in the system of neuroendocrine regulation.Сonclusion. An assessment of the health status of children and adolescents in Tofalaria has shown the need for more intensive monitoring of the incidence rate in the specified region, with the obligatory consideration of the ethnic factor for the development of regional ethno-specific preventive measures.
