ABSTRAKPenelitian ini bertujuan untuk mempelajari perubahan parameter sensori pada penurunan kesegaran ikan patin (Pangasius hypopthalmus) selama pengesan menggunakan metode demerit point score (DPS). Percobaan dilakukan dengan mematikan ikan patin secara hypothermia, menyusunnya dalam kotak berinsulasi yang berisi es dengan perbandingan es : ikan = 2:1 (b/b), dan menyimpan kotak tersebut pada suhu ruang. Penggantian es yang mencair dilakukan setiap hari. Penurunan kesegaran ikan diamati secara sensori berdasarkan metode demerit point score (DPS) selama 25 hari dengan interval waktu pengamatan setiap 5 hari terhadap atribut kenampakan, mata, insang, perut, anus dan rongga perut menggunakan skala 0-3 untuk setiap parameter pada masing-masing atribut. Hasil kajian menunjukkan bahwa parameter utama yang menentukan perubahan sensori secara signifikan pada patin segar adalah kenampakan dan kekakuan pada atribut kenampakan umum, kejernihan dan bentuk pada atribut mata, warna dan bau pada atribut insang, bau pada atribut anus, dan stains pada atribut rongga perut. Adapun beberapa parameter yang relevansinya rendah terhadap penilaian panelis pada penurunan kesegaran patin antara lain lendir permukaan pada atribut kenampakan umum, darah pada atribut mata, lendir pada atribut insang, kekakuan dan diskolorasi pada atribut perut, dan kondisi pada atribut anus, sedangkan parameter kulit tidak memiliki relevansi terhadap penilaian panelis pada penurunan kesegaran patin. SUMMARYSensory and physico-chemical freshness indices (QI score, Torrymeter readings, pH and WHC) were evaluated in gilthead sea bream of commercial size reared in Italy in: land based facilities (recirculation systems), lagoons and net-cages. Fish were stored under ice for 0, 1, 3, 6, 9, 12 and 16 days: at each sampling time analyses were performed to determine the evolution of each freshness index within sea bream sources. Significant differences emerged among farming conditions following the application of the Quality Index Method. Torrymeter readings gradually decreased with the number of days of ice storage. pH values remained practically constant over the 16 days of storage. For WHC the effect of both time of storage and farming conditions was statistically significant. Key wordsGilthead sea bream (Sparus aurata), freshness, farming conditions INTRODUZIONE L'orata (Sparus aurata) rappresenta una delle specie ittiche maggiormente apprezzate dal consumatore italiano: l'applicazione di diverse tecniche per il suo allevamento, determina la realizzazione di un prodotto finale con caratteristiche specifiche: tale eterogeneità risulta per molti parametri descritta dalla comunità scientifica, come per esempio compendiato in un lavoro di Grigorakis e coll. (1). L'approccio ispettivo-legislativo nei confronti della valutazione della freschezza del pesce si avvale nella pratica quotidiana di metodi sensoriali basati sull'applicazione dello Schema UE [Reg. (CE) N. 2406/96] (2): questo schema risente di svantaggi applicativi fra i quali la mancanza di specie-specificità, mentre un altro schema sempre riconducibile al contesto sensoriale del Category Scaling, lo schema QIM, presenta una specifica griglia per ogni specie ittica per cui è stato messo a punto (3).Con il presente lavoro si è voluto verificare l'eventuale presenza di caratteristiche peculiari in orate provenienti da diverse forme d'allevamento che si riflettessero sulla conservabilità del prodotto, proprio attraverso l'applicazione di metodiche di facile applicabilità sia sensoriali che chimico-fisiche. Ciascun pool di pesci è stato prelevato senza intervenire su alcuna caratteristica gestionale al fine di ottenere un campione che fosse quanto più "specchio" di ciascuna forma d'allevamento e ne riflettesse le peculiarità legate alla shelf-life che sono in larga misura determinate dal "corredo" microbico ed enzimatico endogeno di ciascun pesce. Si è così cercato di valutare se e quanto la risposta alla conservazione sotto ghiaccio fosse influenzata dal fattore "Allevamento" a proposito di una stessa specie ittica.
