Estudo do comportamento reológico de polpas de caju (Anacardium occidentale, l.), acerola (Malpighia emarginata, d.c.) e manga (Mangifera indica, l.)

Abstract: The knowledge of the fruit tropical pulps rheological behavior have a great importance for the consumers and food process industries. In this work it was studied the rheological behavior of the cashew apple (Anacardium occidentale, L.), mango (Mangifera indica, L) and acerola (Malpighia emarginata, DC) single strength, frozen and pasteurized pulps. “…Feitosa et al (1997), avaliaram o perfil microbiológico de polpas de acerolas congeladas dos estados do Ceará e Rio Grande do Norte, obtendo contagens de coliformes a totais e termotolerantes < 3NMP/g em todas as amostras analisadas; e contagens de bolores e leveduras variando entre < 10 a 8,9 x 10 3 UFC/g de polpa. Resultados semelhantes aos obtidos por Silva et al (2012), que analisaram polpas de acerolas pasteurizadas e congeladas do estado do Ceará, obtendo contagens de coliformes totais e termotolerantes < 3NMP/g em todas as amostras analisadas; e contagem de bolores e leveduras de 10 UFC/g.
