Abstract: Resumo: A secagem é, dentre as práticas de pós-colheita, uma das mais importantes, pois tem como finalidade: diminuir o teor de água do produto, permitir a armazenagem por períodos mais longos sem o perigo de deterioração do produto; antecipar a colheita; manter o poder germinativo por longos períodos; impedir o crescimento de microorganismos e insetos; minimizar a perda de produto no campo; e reduzir o volume e o peso a ser transportado.
