Show more

“…Geraldi et al 8 evaluated the total anthocyanin content by the differential pH method in yogurt samples containing juçara pulp (E. edulis; 7.0 g/100 g juçara pulp), which revealed an average total anthocyanin value of 2.0 mg/100 g of expressed equivalent to C3G, a lower value than obtained by Ribeiro et al 17 and Costa et al, 18 who reported anthocyanin content in juçara pulp of 235.8 mg/100 g and 110.09 mg/100 g respectively. However, the evaluation method used was different between the work of Geraldi et al 8 and the studies performed by Ribeiro et al 17 and Costa et al 18 Barroso et al 19 determined the content of C3R and C3G. The content ranged from 4.25 ± 0.08 mg g −1 C3R for E. edulis, and for E. oleracea it was from 2.13 ± 0.12 mg g −1 and 2.68 ± 0.93 mg g −1 for C3R and C3G respectively.…”

“…Similar data were observed by Bezerra et al (2019) in Cyperaceae extracts. The absence of these compounds in green (for leaves) and brown (for roots) extracts is justifiable because anthocyanins are pigments belonging to a subgroup of flavonoids that occur mainly in fruits, vegetables, and flowers, presenting a wide variety of colors from intense red to violet and blue (Patras et al, 2010;Petroni and Tonelli, 2011;Ribeiro et al, 2011;Bezerra et al, 2018).…”
