Menthol gehort zu den monocyclischen Terpenalkoholen und ist der H'aupt.bestandteil des Pfefferminzols, da.s wohl auch heute noch der wichtigste Ausgangsstoff zu seiner Gewinnung ist. Man kennt Oleinsbesondere japanischer Herkunft mit so hohem Gehalt an Ment,hol, daW dieses sich bereits bei Zimmertemperatur kristallin ausscheidet ; in anderen Fallen gelingt dies erst mit Hilfe des ,,Ausfrierens" bei tieferen Temperaturen. Durch Abschleudern oder Abpressen erhalt nian ein fast) reines Menthol, das unter dem Nanien c r y s t a l s gehandelt wird und in der kosmetischen und Lebensmittel-Industrie vielfach ohne weitere Reinigung verwandt, wird; seine besonderen geruchlichen und geschmacklichen Eigenschaften werden nicht zuletzt auf die anhaftenden Reste von Pfefferminzol zuruckgefiihrt. Auch durch fraktionierte Destillation von Pfeffermineolen unter vermindertem Druck gewinnt man heute Menthol. Dem DAB 6 entsprechen die genannten Qualitaten aber nicht, da liier gefordert wird, da13 Menthol beim Pressen zwischen glattem, weiljem Papier auf cliesem krine Flecke zurucklassen darf. Das pharmazeutisch verwendet,e Produkt muO somit von anhaftendem 0 1 befreit werden, was meist durch Umkrist.allisieren geschieht. Eine bet,dchtliche Verteuerung ist die Folge dieser Operation, die andererseihs geschmacklich und geruchlich nicht unbedingt, eine Verbesserung bedirigen soll. Nebeu diese Gewinnung von Menthol aus Pfefferminzol sind in den letzten Jahrzehnten synt,hetische Verfahren getreten. Um die hierbei zv uberwindenden Schwierigkeiteii verstehen zu konnen, mu13 man sich vor Augen halten, daW Menthol (I} drei asymmetrische Kohlenstoffatome hat' und damit in acht optisch aktiven und vier Racemformen auftreten kann. Die lronfigurativen Beziehungen erkennt man am besten bei der Ruckfuhrung auf das durch Oxydation des Ment,hols entstehende Keton (II), dasMenthon bzw. Isonienthon, das nur noch zivei asynimetrischeKohlen-st>offat,ome enthalt uiid damit vier optisch akt>ive Formen und zwei Racemformen bildetl).
