RESUMO -O objetivo neste trabalho foi avaliar a qualidade da carne do músculo longissimus thoracis de bovinos durante a maturação. Amostras de 22 bovinos Nelore e 22 Red Norte machos, com 24 meses de idade, foram coletadas às 24 horas post mortem, mantidas a 2oC e analisadas aos 1, 7, 14 e 21 dias. Os animais foram terminados em confinamento (112 dias) com silagem de milho (50%) e concentrado (50%) à vontade. Os valores de pH final, perda por cocção, umidade, proteína, gordura e cinzas foram semelhantes entre as amostras de animais Nelore e Red Norte. O teor de vermelho (a*) e a intensidade de amarelo (b*) foram semelhantes entre as carnes dos dois grupos genéticos, porém a luminosidade (L*) foi maior nas amostras de animais Red Norte. A maturação afetou significativamente a luminosidade, o teor de vermelho e amarelo, croma (C*), o ângulo de tonalidade (H*) e a percepção subjetiva da cor (ΔE), de forma que as alterações de cor mais importantes ocorreram entre 7 e 14 dias. A força de cisalhamento na carne dos animais Red Norte foi cerca de 0.9 kg inferior às dos animais Nelore. A maturação influenciou a força de cisalhamento ao longo da maturação e determinou reduções de 1,09; 0,21 e 0,56 kg nos períodos de 1 a 7; 7 a 14 e 14 a 21 dias, respectivamente. O índice de fragmentação miofibrilar foi maior na carne dos animais Red Norte e nas amostras maturadas por 21 dias. A carne dos animais Red Norte apresentou maior luminosidade e maciez. A maturação melhora a maciez das carnes, por reduzir a força de cisalhamento, porém modifica a cor, cujas alterações mais importantes acontecem entre 7 e 14 dias. Animal temperament is a trait of economic relevance and its use as a selection criterion requires the identification of environmental factors that influence this trait, as well as the estimation of its genetic variability and interrelationship with other traits. The objectives of this study were to evaluate the effect of the covariates dam age at calving (ADC), long yearling age (YA) and long yearling weight (YW) on temperament score (T) and to estimate genetic parameters for T, scrotal circumference (SC) at long YA and age at first calving (AFC) in Nellore cattle participating in a selection program. The traits were analyzed by the restricted maximum likelihood method under a multiple-trait animal model. For all traits, contemporary group was included as a fixed effect and additive genetic and residual as random effects. In addition to these effects, YA, YW and ADC were considered for analyzing T. In the case of SC and AFC, the effect of long YW was included as a covariate. Genetic parameters were estimated for and between traits. The three covariates significantly influenced T. The heritability estimates for T, SC and AFC were 0.18 6 0.02, 0.53 6 0.04 and 0.23 6 0.08, respectively. The genetic correlations between T and SC, and T and AFC were 20.07 6 0.17 and 20.06 6 0.19, respectively. The genetic correlation estimated between SC and AFC was 20.57 6 0.16. In conclusion, a response to selection for T, SC and AFC is expected and selection for T does not imply correlated responses with the other traits.

Assessment of carcass bruises in steers and cull females, classified during unloading at the slaughterhouse according to genetic dominance in zebu and taurine cattle, and the presence of horns, including polled, horned and mixed batches. We considered horned the batches that included more than 20% of horned animals and mixed the batches that included less than 20% horned animals. The data were collected in a commercial slaughterhouse and included 93 batches, with a total of 2,520 animals, from different regions in Rio Grande do Sul. After evisceration, the bruises were identified and recorded in the different carcass regions: hip, round, ribs, forequarter and loin area per animal and batch. The weights of the removed tissue due to bruising was based on the average weights of various samples of bruises according to their degree of severity. Regarding the number of bruises per animal, no differences (P > 0.05) were observed between genetic groups, however, when comparing the total bruises per batch, differences were observed in all carcass regions, except for the forequarter, with a greater number of injuries in zebu than in taurine carcasses. The individual assessments showed 86.2% (P < .05) more bruises in the ribs region in horned than in polled animals carcasses. Horned batches had higher bruises mean (P < .05) compared to the polled, with increases of 65.1; 131.7 e 132.8 % in total bruises in the carcass, ribs and forequarter, respectively. The mixed batches did not differ from polled and horned batches. Zebu animals were responsible for higher industry loss totaling 1.21 kg, resulting in a economic loss of R $ 15.48 per carcass. The presence of horns resulted in greater carcass loss, 1.13 kg, with economic loss of R $ 16.11 per carcass. The bruises on carcasses are affected by the breed group and presence of horns, with zebu and horned groups leading to greater economic losses for the meat production chain. ResumoFoi realizado um estudo para avaliar as contusões na carcaça de machos castrados e fêmeas de descarte, classificados ao desembarque no frigorífico segundo a predominância genética em taurinos e zebuínos, e a presença de chifres, incluindo mochos, aspados e mistos. Foram considerados aspados os lotes que incluíam mais de 20% de animais aspados, e mistos menos de 20% de animais aspados. coletados em uma empresa frigorífica do RS, por intermédio da análise de 93 lotes, totalizando 2.520 animais, provenientes de diferentes regiões do estado. Após a evisceração, na linha de abate, foram identificadas as contusões e contabilizadas de acordo com as regiões da carcaça: quadril, traseiro, costela, dianteiro e lombo, por animal e total do lote.
