Análise centesimal dos cortes da carcaça de cordeiros Santa Inês e Bergamácia

Abstract: Os principais componentes químicos do corpo são: água, proteína, gordura e cinzas. Com o avançar da idade, ocorre um incremento na proporção de gordura, acompanhado por uma diminuição de água e proteína no corpo.
