Modifications of nutritional properties (amino acids, available lysine, protein digestibility, fatty acids, fiber, inositol phosphate (IPs), free and bound phenolics, and antioxidant properties) of whole rice ingredients processed by soaking, germination, and/or extrusion cooking were evaluated. Soaking and germination reduced proteins by lixiviation and hydrolysis, respectively. Lysine was the limiting amino acid. Polyunsaturated fatty acids increased after germination. Protein digestibility was 100% for germinated rice, decreased to 75% after the extrusion process. Fiber content decreased around 73% after the extrusion of soaked and germinated flours. Soaking‐extrusion combined processes produces >50% IPs reduction. Germination‐extrusion produced flours with the highest antioxidant capacity (54 µmol trolox g−1), which was in accordance with the highest content of free and bound phenolics (66 and 69 mg GA 100 g−1, respectively). Grain treatments changed nutritional properties of flours resulting in low antinutrient whole grain ingredients, which could be used to develop whole grain‐based foods. Practical applications Phytic acid (PA) is an antinutrient having negative effects on mineral bioavailability and protein digestibility. There are processes such as soaking, germination, and extrusion, which alone or combined can decrease PA. However, nutritional composition and functionality of flours can change. We observed PA was highly reduced by soaking or germination combined with extrusion and antioxidant capacity and phenolic content increased in germinated and germinated‐extruded flours compared to the other treatments. These modified whole grain rice flours low in anti‐nutrients could be used in the production of expanded products or pre‐cooked ingredients to develop whole grain based foods nutritionally improved.

ARTIGOS TEMÁTICOS / THEMATIC ARTICLES Avaliação química de macronutrientes e minerais de dietas enterais artesanais utilizadas em terapia nutricional domiciliar no sistema único de saúde Chemical evaluation of macronutrients and minerals from handmade enteral diets used in homecare nutritional therapy in the brazilian national health system Resumo Objetivo: este estudo objetivou avaliar quimicamente a composição de macronutrientes e minerais de dietas enterais artesanais prescritas para terapia nutricional domiciliar. Métodos: Foram coletadas fichas técnicas de dietas enterais artesanais padrão e padrão sem lactose, prescritas na alta hospitalar por hospitais públicos e pelo Núcleo de Apoio à Saúde da Família. Após preparo das formulações e avaliação de viscosidade, estabilidade, odor, cor e custo, foram selecionadas dietas de cinco locais, sendo agrupadas de acordo com as semelhanças na composição em Grupo A e Grupo B, e encaminhadas para análise química de macronutrientes e minerais. Os resultados foram comparados com as necessidades nutricionais propostas pelas Recomendações Dietéticas de Referência para homens de 51-70 anos. Resultados e Discussão: As dietas analisadas apresentaram distribuição normoproteica, normolipídica e normoglicídica. A quantidade total de fibra alimentar nas dietas do Grupo A ficou entre 12 g e 15 g, com 48% de fibra solúvel. No Grupo B, a fibra alimentar foi de 3,40 g, e na dieta padrão sem lactose, entre 6 e 8 g, apresentando 65% de fibra solúvel. Quanto aos minerais, todas as formulações estavam adequadas em ferro e a maioria, em cálcio, zinco, fósforo, cobre e sódio. Nenhuma formulação avaliada encontrou valores adequados de potássio e magnésio. Observou-se ainda baixa adequação de muitos minerais nas formulações de 1.200 Kcal. Conclusão: As formulações analisadas têm composição de macronutrientes adequada, necessitando de ajustes em fibras. Quanto aos minerais, aqueles deficientes precisam ser suplementados enquanto as adequações dietéticas não forem realizadas.

Dietas enterais com alimentos convencionais são usadas em terapia nutricional domiciliar para fornecer macronutrientes e obter dietas individualizadas de menor custo (SILVA et al., 2005). No entanto, mais estudos científicos são necessários para quantificar quimicamente os nutrientes, melhorar o valor nutricional das dietas naturais e obter maior confiabilidade e segurança nas formulações, bem como melhorar o teor de fibras alimentares. Em terapia nutricional enteral, as fibras são prescritas para favorecer a tolerância à formulação, prevenir complicações (CATALANI et al., 2003;NAKAO et al., 2002) e alterações da mucosa intestinal e evitar a translocação bacteriana. A presença de fibras na dieta pode modificar a microbiota intestinal e conferir maior proteção aos colonócitos. As fibras auxiliam na regularização do trânsito intestinal não só em pacientes que seguem a terapia nutricional por períodos prolongados, mas também em pacientes que apresentam diarreia importante e/ou hábito intestinal instável (ora diarreia, ora obstipação) (ARAÚJO, W. Eggplant, carrot, chicory, lettuce, guava and tamarind were studied as sources of soluble and insoluble fibers for use in enteral diets or as oral nutritional supplements, added to a domestic enteral formulation and also prepared in aqueous solution. The following physical-chemical characteristics were determined: soluble and insoluble fibers, proximate composition, pH and water activity. Drip tests were carried out with the formulas containing the experimental foods and as an oral nutritional supplement the best proportion of food/ water was shown to be 150 g/2 L, whereas when added to the formula, the best proportion was 100 g food/2 L of formula. The amounts of each food added to the enteral formula were equivalent to two daily portions (100 g) of each food per 2 L or 2000 kcal. Of the foods tested, the guava contributed the greatest amount of fiber and the eggplant the least. The values for water activity were between 0.95 and 1.00, indicating that these diets should be consumed immediately after preparation.
