The problem of health saving of the Russian population is one of the key problems that cannot be solved without the development of functional foods, which include fortified foods, and their systematic use as part of diets of different age groups of the population. The development of fortified food products, and, above all, bakery products with food additives is the most promising direction in the field of creating functional food products. The algorithm for the development of enriched bakery products food additives has been proposed considering the importance of the problem of health saving of the Russian population of different age groups by enriching traditional bakery products with food additives, which are essential food and are in stable demand of the population, allowing for their systematic use to correct nutritional deficiencies in the diet, and therefore reduce the risk of socially significant diseases. The algorithm for the development of enriched bakery products with the use of food additives provides for the implementation of several stages, including the scientific justification of the choice of a food additive for enriching a traditional bakery product; the rationale for choosing the recipe of a traditional bakery product for its enrichment with a food additive; the scientific justification of the effective dosage of a food additive for its inclusion in the recipe of a traditional bakery product; development of the formulation and technological modes of the production processes of a bakery product enriched with a food additive; study of the consumer properties of the developed enriched bakery product and its effectiveness when consumed by the population of different age groups; assessment of the competitive potential of the developed enriched bakery product compared with traditional bakery product; development of technical documentation: technical specifications, RC and TI for the production of enriched bakery product. The implementation of the proposed algorithm will make it possible to create enriched bakery products with the use of food additives, the systematic use of which will ensure the normalization of the nutritional status of the Russian population, and therefore will contribute to health conservation.
В статье приведены данные, характеризующие состав макро-и микронутриентов вторичных ресурсов переработке тыквывыжимок тыквы. Установлено, что выжимки тыквы являются ценным сырьем для производства пищевой добавки, так как в их составе содержатся белки, пищевые волокна, в том числе пектин и протопектин, минеральные вещества, а также такие биологически активные вещества, как витамин С, β-каротин и Р-активные вещества. С применением метода ядерно-магнитной релаксации (ЯМР), показано, что предварительная обработка выжимок тыквы в электромагнитном поле сверхвысоких частот ЭМП СВЧ определенных параметров перед ИК-сушкой позволяет перевести часть связанной влаги, содержащейся в выжимках, в свободную влагу, что позволяет интенсифицировать последующий процесс ИК-сушки. Разработана инновационная технология производства пищевой добавки из выжимок тыквы, защищенная патентом РФ на изобретение и имеющая «ноу-хау». Оценено влияние фруктовых пищевых добавок «Яблочная» и «Грушевая», полученных из вторичных ресурсов переработки фруктов, на формы связи воды в тесте из пшеничной муки. Добавки вносили в образцы теста из пшеничной муки 1-го сорта в количестве 6, 8 и 10% к массе муки. Измерение ядерно-магнитных релаксационных характеристик образцов теста осуществляли на ЯМР-анализаторе АМВ-1006М при температуре 23°С. Установлено, что внесение в образцы теста добавки «Яблочная» или «Грушевая» в количестве 10% к массе муки позволяет повысить содержание прочносвязанной воды в тесте на 6,5 или 4,9% соответственно, что объясняется более высоким содержанием в добавке «Яблочная» по сравнению с добавкой «Грушевая» пектина (3,7% против 2,1%), в значительной степени проявляющего водоудерживающую способность. Результаты, полученные с применением метода ЯМР, согласуются с данными, полученными при исследовании влияния указанных пищевых добавок на водопоглотительную способность теста. Повышение в тесте содержания воды, находящейся в прочносвязанном состоянии, позволит при дальнейшей выпечке тестовых заготовок снизить упек хлебобулочного изделия и, следовательно, увеличить его выход. The influence of fruit food additives «Apple» and «Pear», obtained from secondary resources of fruit processing, on the forms of water connection in the wheat flour dough was evaluated. Additives are added to the test samples from wheat flour of the 1st grade in the amount of 6, 8 and 10% by weight of flour. Measurement of the nuclear magnetic relaxation characteristics of dough samples was performed using an NMR-analyzer AMV-1006M at a temperature of 23°C. It was found that introduction additives «Apple» or «Pear» to the dough samples in an amount of 10% by weight of flour allows increasing the content of strongly bound water in the dough by 6,5 or 4,9% respectively, which is explained by the higher content in additive the «Apple» compared to the additive «Pear» of pectin (3,7% vs. 2,1%), largely showing water-retaining ability. The results obtained using the NMR method are consistent with the data obtained in the study of the effect of these food additives on the water absorption capacity of the dough. Increasing in the dough the content of water, which is in a strongly bound state, will allow for further baking of dough blanks to reduce baking loss and, consequently, increase yield of products.
