Испания, Франция, Китай, Италия, Турция и США владеют более чем половиной всех виноградников. Мировое производство вина составило 260 млн гкл. Спад производства вина в странах ЕС компенсируется ростом в Южном полушарии. Италия, Франция, Испания, США, Аргентина, Чили, Австралия и ЮАР произвели три четверти всего объема вина. Наибольшее потребление вина зафиксировано в США, Франции, Италии, Германии, Великобритании, Испании и Китае. Экспорт вина составил 112 млн дкл. Основные экспортеры - Испания, Италия, Франция, Чили, Австралия. Среди импортеров ведущие места занимают Германия, США и Великобритания. Индекс интернационализации рынка, который представляет собой отношение объемов экспортируемого и потребляемого вина, в 2021 г. составил 47%, против 27% для 2000 г. The latest data on the production and world market of wine are presented. The total area of vineyards in the world in 2021 amounted to 7.3 million hectares. Spain, France, China, Italy, Turkey and the USA own more than half of all vineyards. World wine production amounted to 260 million gcl. The decline in wine production in the EU countries is offset by growth in the Southern Hemisphere. Italy, France, Spain, the USA, Argentina, Chile, Australia and South Africa produced three-quarters of the total volume. The largest consumption of wine was recorded in the USA, France, Italy, Germany, Great Britain, Spain and China. Wine exports amounted to 112 million dkl. The main exporters are Spain, Italy, France, Chile, Australia. Germany, the USA and the UK occupy the leading places among importers. The internationalization index of the market, which is the ratio of the volumes of exported and consumed wine, in 2021 was 47%, against 27% for 2000. That is, almost every second bottle of wine consumed accounted for foreign products. The data on the estimated volume of production in 2022 in the Southern Hemisphere are given.
Важнейшей проблемой в безалкогольной отрасли, в частности упакованных минеральных вод, на современном этапе является появление на рынке фальсификата и контрафакта. Четкая система идентификации минеральных вод для устранения фальсификата и контрафакта - важнейшие факторы для улучшения качества продукции, защиты прав, как потребителей, так и честных производителей. Для природных минеральных вод, особенно лечебно-столовых и лечебных, основной задачей является подтверждение ее подлинности. Цель работы - разработка идентификационных показателей для природной минеральной воды «Ессентуки № 17» на основе комплексного органолептического, физико-химического и изотопного анализов. Работа проведена в ВНИИПБиВП - филиале ФГБНУ «Федеральный научный центр пищевых систем им. В. М. Горбатова» РАН, Москва. В качестве объектов исследования были выбраны промышленно разлитые воды минеральные природные лечебные «Ессентуки № 17» различных производителей, упакованные в потребительскую упаковку из полиэтилентерефталата, стекла и алюминиевые банки, а также нативная вода из скважин (всего 13 образцов). Качество воды оценивали по органолептическим (прозрачность, цвет, вкус и запах) и физико-химическим показателям (основной состав, минерализация, биологически активные компоненты, токсичные металлы). Аналитические исследования изотопных характеристик воды проводились на изотопном масс-спектрометре Delta V Advantage с модулем GasBench II. Испытания образцов минеральной воды проведены на соответствие действующим техническим регламентам и документам по стандартизации. Ретроспектива исследования 2019-2022 гг. Получены новые экспериментальные данные по качеству минеральной воды «Ессентуки № 17», которые позволили установить идентификационные показатели для данного вида вод. Проведен сравнительный анализ скважин Центрального и Новоблагодарненского участков Ессентукского месторождения. Установлено, что по традиционным идентификационным показателям все исследованные пробы соответствовали установленным требованиям. Выявленные различия в концентрации макро- и микрокомпонентов позволят использовать их в качестве маркеров при идентификации упакованной минеральной воды «Ессентуки № 17». The purpose of this work is to develop identification indicators for natural mineral water Essentuki No. 17 based on complex organoleptic, physico-chemical and isotope analyzes. The work was carried out at VNIIPBiVP, a branch of the Federal State Budgetary Scientific Institution «Federal Scientific Center for Food Systems named after V. M. Gorbatov» RAS, Moscow. The objects of study were industrially bottled mineral natural healing waters Essentuki No. 17, various manufacturers, packed in consumer packaging made of polyethylene terephthalate, glass and an aluminum can, as well as native water from wells (13 samples in total). Water quality was assessed by organoleptic parameters (transparency, color, taste and smell), and physicochemical parameters (basic composition, mineralization, biologically active components, toxic metals). Analytical studies of the isotope characteristics of water were carried out on a Delta V Advantage isotope mass spectrometer with a GasBench II module. Mineral water samples were tested for compliance with current technical regulations and standardization documents. Research retrospective 2019-2022 New experimental data on the quality of Essentuki No. 17 mineral water were obtained, which made it possible to establish identification indicators for this type of water. A comparative analysis of the wells of the Tsentralny and Novoblagodarnensky sections of the Essentuki field was carried out. It was established that according to the traditional identification indicators, all the studied samples met the established requirements. The revealed differences in the concentration of macro- and micro components will make it possible to use them as markers in the identification of packaged mineral water Essentuki No. 17.
Вопрос выявления фальсифицированной винодельческой продукции не теряет своей актуальности. В связи с этим одним из перспективных направлений исследований в области идентификации вин является установление места его географического происхождения. В данной работе представлены результаты анализа взаимосвязи изотопных характеристик кислорода водной компоненты вина и геоклиматических факторов места их производства. В период с 2017 по 2021 год, в сезоны сбора винограда, было отобрано и переработано в лабораторных условиях 234 образца винограда из основных винодельческих регионов России (Краснодарский край, Республика Крым с г. Севастополь и Республика Дагестан). Показано, что в зависимости от года наблюдения выборки вин из разных винодельческих зон по значениям показателя δO водной компоненты могут различаться статистически значимо. Установлены значимая положительная корреляция значений δO водной компоненты вин со среднегодовым количеством осадков, с максимальным суточным количеством осадков и значимая отрицательная корреляция в пределах исследуемого временного периода c годом урожая. Построена множественная регрессионная модель влияния геоклиматических параметров и года сбора урожая на значения изотопных характеристик кислорода водной компоненты вин. Выявленные зависимости усилят статистическую модель и, как следствие, позволят проводить идентификацию вин по месту их происхождения с более высокой степенью достоверности. The issue of wine identification does not lose its relevance. High-quality wines with a controlled place of origin bring high incomes to producers, and deductions from profits to the state. However, at the same time there is a danger of substitution of authentic products with wines produced from grapes of other wine-growing zones. In this regard, confirmation of the authenticity of the geographical place of origin of wines is a priority condition that contributes to the protection of bona fide producers of high-quality products. This article presents the results of the analysis of the relationship between the isotopic characteristics of oxygen of the water of wine and geoclimatic factors of the place of their production. In the period from 2017 to 2021, during the grape harvest seasons, 234 samples of grapes from the main wine-growing regions of Russia (Krasnodar region, the Republic of Crimea with Sevastopol and the Republic of Dagestan) were selected and processed in laboratory conditions. It is shown that, depending on the year of observation, samples of wines from different wine-growing zones may differ statistically significantly in the values of the indicator δO of the water of wine. A significant positive correlation of the values of δO of the water of wines with the average annual precipitation, with the maximum daily precipitation, and a significant negative correlation within the studied time period with the harvest year were established. A multiple regression model of the influence of geoclimatic parameters and the harvest year on the values of oxygen isotopic characteristics of the water of wines is constructed. The revealed dependencies will strengthen the statistical model and, as a result, will allow the identification of wines by their place of origin with a higher degree of reliability.
