Во многих действующих в настоящее время инструкциях по применению кислородактивных дезинфицирующих средств на основе перекиси водорода и надуксусной кислоты указана возможность их использования без последующего смывания. Подавляющее большинство молочных предприятий используют эти дезинфектанты в качестве основных в циркуляционных системах санитарной обработки и руководствуются при проведении санитарно-гигиенических мероприятий данными инструкциями, как регламентирующими документами. Вместе с тем безопасность подобного использования вызывает сомнения. В статье представлены результаты исследований, направленных на изучение влияния остаточных количеств кислородактивных дезинфицирующих средств на ингибирование заквасочных культур и потенциально на технологический процесс производства кисломолочных продуктов. Для достижения поставленной цели процессы проведения экспериментов осуществляли разными методами, применяя различные способы химической контаминации объектов исследований и поверхностей заквасочной тары, имитирующей технологическое оборудование. Данные опыты проходили трехкратно для составления эмпирической базы и анализа кинетики проводимого эксперимента. В ходе экспериментов было подтверждено, что даже незначительные количества кислородактивных препаратов ингибируют кисломолочные микроорганизмы и влияют на ферментативные процессы. Несмотря на нестабильность и достаточно быструю разлагаемость перекиси водорода и надуксусной кислоты, эти субстанции способны оказывать негативное воздействие на заквасочные культуры, в частности на биопрепараты на основе Lactococcus lactis и Streptococcus thermophilus. Результаты проведенных исследований убедительно продемонстрировали необходимость выполнения заключительного ополаскивания контактных поверхностей оборудования с полным удалением остаточных количеств кислородактивных дезинфицирующих средств на основе перекиси водорода и надуксусной кислоты в процессе санитарной обработки оборудования. В заключении отмечено, что производствам требуется внедрение предикативной диагностики систем санитарной обработки, в том числе применение различных методов контроля удаления остаточных количеств кислородактивных дезинфицирующих растворов с верификационными и валидационными процедурами. Many current instructions for the use of hydrogen peroxide and peracetic acid-based oxygen disinfectants indicate that they can be used without subsequent flushing. The vast majority of dairies use these disinfectants as the main disinfectants in circulating sanitary treatment systems and are guided by these instructions as regulatory documents when carrying out sanitary and hygienic measures. At the same time, the safety of such use raises doubts. The article presents the results of the research aimed at studying the influence of residual amounts of oxygen-active disinfectants on the inhibition of starter cultures and, potentially, on the technological process of production of sour-milk products. To achieve the goal, the processes of the experiments were carried out by different methods, using different ways of chemical contamination of the research objects and surfaces of the fermentable containers, simulating technological equipment. These experiments were carried out three times, in order to compile an empirical basis and analyze the kinetics of the experiment conducted. During the experiments, it was confirmed that even small amounts of oxygen-active preparations inhibit sourdough microorganisms and affect enzymatic processes. Despite the instability and fairly rapid degradability of hydrogen peroxide and peracetic acid, these substances can have a negative effect on starter cultures, in particular on the biopreparations based on Lactococcus lactis and Streptococcus thermophilus. The results of these studies clearly demonstrated the need to perform a final rinse of contact surfaces of equipment with complete removal of residual amounts of oxygen-active disinfectants based on hydrogen peroxide and peracetic acid in the processes of sanitary processing of equipment. In the conclusion it was noted that industries need to implement predictive diagnostics of sanitary treatment systems, including application of various methods of controlling the removal of residual quantities of oxygen-active disinfectant solutions with verification and validation procedures.
Рассмотрены процессы формирования адгезионных отложений, изменяющих физико-химические свойства поверхностей и представляющих определенные проблемы для удаления в процессах санитарной обработки. Представлен анализ основных факторов, влияющих на работу адгезии молочных продуктов с субстратом. Определены значения поверхностного натяжения восстановленных молочных продуктов-адгезивов при комнатной температуре, и рассчитана работа адгезии на субстратах (стекло и нержавеющая сталь). Исследование направлено на измерение и сравнение работы адгезии различных молочных продуктов по отношению к субстрату - поверхности из нержавеющей стали, используя краевой угол смачивания и поверхностное натяжение. The article discusses the processes of formation of adhesive deposits that change the physicochemical properties of surfaces and present certain problems for removal in the processes of sanitization. The analysis of the main factors influencing the work of adhesion of dairy products to the substrate is presented. The values of the surface tension of reconstituted dairy products - adhesives at room temperature were determined and the work of adhesion on substrates (glass and stainless steel) was calculated. The study aims to measure and compare the adhesion performance of various dairy products in relation to a stainless steel substrate using contact angle and surface tension.
Совершенствование мероприятий по обеспечению безопасности производства, соблюдению санитарного законодательства и выпуска качественной пищевой продукции, исключающее причинение вреда потребителю, является одной из важнейших задач производителей молочной продукции. Использование эффективных и безопасных гигиенических решений на предприятиях молочной промышленности сокращает риски всевозможных загрязнений выпускаемой продукции, в частности попадания в нее различного рода химических веществ, способных ингибировать заквасочные культуры микроорганизмов, влиять на качество и безопасность выпускаемой продукции, нанести вред здоровью человека вплоть до развития пищевых отравлений. В статье представлены некоторые действующие вещества дезинфицирующих средств, разрешенных к использованию на молочных предприятиях, и проведен детальный анализ их эффективных бактерицидных концентраций. Результаты анализа сопоставлены со значениями, приведенными в основном действующем документе по определению ингибирующих веществ в молоке - ГОСТ 23454-2016. Приведенные в статье концентрации используемых компонентов, входящих в составы средств санитарной обработки, сопоставимы со значениями чувствительности диагностических методов определения ингибирующих веществ, а в некоторых случаях превышают их более чем в 10 раз. Использование разнообразных биоцидов и активных действующих веществ в составах моющих и дезинфицирующих средств, таких как йодсодержащие галогены и хлоргексидин, неионогенные и катионные поверхностно-активные вещества, полимерные производные гуанидинов, третичные алкиламины и различные органические и неорганические кислоты, диктует востребованность в методах оценки их ингибирующих свойств и удаления остаточных количеств при проведении процессов санитарной обработки. По результатам анализа сделано заключение, что существующий документ не позволяет полностью адекватно оценивать влияние средств санитарной обработки на их ингибирующие свойства в молоке. Требуются дальнейшие научные и практические исследования, посвященные определению остаточных количеств моющих и дезинфицирующих средств в молоке и молочных продуктах, установлению возможных критических значений и методов контроля на предприятиях молочной промышленности для принятия предупреждающих мер. Improvement of measures to ensure the safety of production, compliance with sanitary legislation and the release of quality food products, excluding harm to the consumer, is one of the most important tasks of dairy producers. The use of effective and safe hygienic solutions in the dairy industry reduces the risks of all kinds of contamination of its products, in particular, getting into it all kinds of chemical substances that can inhibit the starter cultures of microorganisms, affect the quality and safety of products, harm human health up to the development of food poisoning. The article presents some active substances of disinfectants approved for use in dairy plants and a detailed analysis of their effective bactericidal concentrations. The results of the analysis are compared with the values given in the main current document on the definition of inhibitory substances in milk - GOST 23454-2016. The concentrations of the components used in the compositions of sanitizing agents given in the article are comparable with the values of sensitivity of diagnostic methods for determining inhibitory substances, and in some cases exceed them by more than 10 times. The use of biocides and active ingredients in detergents and disinfectants such as iodine-containing halogens and chlorhexidine, nonionic and cationic surfactants, polymeric guanidine derivatives, tertiary alkylamines and various organic and inorganic acids dictates the demand for methods of evaluating their inhibiting properties and removing residual amounts in sanitary treatment processes. Based on the results of the analysis, it is concluded that the existing document does not allow to fully adequately assess the effect of sanitizing agents on their inhibitory properties in milk. Further scientific and practical researches are required, devoted to determination of residual quantities of detergents and disinfectants in milk and dairy products, establishment of possible critical values and methods of control at the enterprises of the dairy industry for taking preventive measures.
В статье представлены результаты экспериментов, согласно которым общепринятые концентрации 0,5; 1,0; 1,5 % рабочих щелочных растворов характеризуются более высоким поверхностным натяжением, чем вода. Введение комплексоната в растворы щелочных электролитов практически не влияет на эти показатели. При этом достигается степень удаления отложений с контактной поверхности на 14-17 % в зависимости от концентрации гидроксида щелочного металла. По результатам определения поверхностного натяжения и эмульгирующей способности различных видов поверхностно-активных веществ (ПАВ) выявлены наиболее рациональные из них. Для удаления отложений с преимущественным содержанием белковой фракции и функциональных добавок акцент следует направить на применение неионогенных ПАВ с наименьшим показателем поверхностного натяжения при концентрациях щелочной основы 1,7-2,5 %. При наличии значительных отложений жировой фракции и функциональных добавок необходимо использовать анионные ПАВ в смеси с диспергаторами, снижающими пенообразующую способность моющих растворов. Концентрация щелочных компонентов в процессе мойки может варьировать в пределах 0,5-1,2 %. The article presents the results of experiments, according to which the generally accepted concentrations 0.5; 1.0; 1.5 % of working alkaline solutions are characterized by a higher surface tension than water. The introduction of a complexonate into solutions of alkaline electrolytes has practically no effect on these indicators. In this case, the degree of removal of deposits from the contact surface is achieved by 14-17 %, depending on the concentration of alkali metal hydroxide. Based on the results of determining the surface tension and emulsifying abilities of various types of surfactants, the most rational of them were identified. To remove deposits with a predominant content of the protein fraction and functional additives, the emphasis should be on the use of nonionic surfactants with the lowest surface tension at alkaline base concentrations 1.7-2.5 %. In the presence of significant deposits of the fat fraction and functional additives, it is necessary to use anionic surfactants in a mixture with special dispersants that reduce the foaming ability of washing solutions. The concentration of alkaline components in the washing process can vary within 0.5-1.2 %.
