Научный журнал НИУ ИТМО. Серия «Процессы и аппараты пищевых производств» Исследовали перспективность интенсификации процесса охмеления пивного сусла. В эксперименте использовали хмелевой экстракт, предварительно приготовленный в роторно-пульсационном аппарате (РПА) с целью более полной экстракции и изомеризации горьких веществ, по сравнению с существующими способами. В данном аппарате на суспензию воздействуют ударные, акустические, истирающие нагрузки. В первой части исследований в экономических целях хмелевой экстракт состоял из воды и хмеля. Использовали гранулированный хмель сорта «Магнум» с содержанием α-кислоты 13%, производства Словения. Определяли технические параметры работы РПА, при которых полученный в нем экстракт имел максимально возможное содержание изогумулона -основного компонента горьких веществ. Содержание изогумулона Cиз в полученных образцах определялось методом, основанным на экстракции его из суспензии изооктаном и последующем нахождении оптической плотности полученного изооктанового экстракта на спектрофотометре при длине волны 275 нм. Для определения степени влияния технических параметров работы РПА на содержание изогумулона Cиз использовался метод множественного регрессионного анализа в программе Statistica 6. Получены уравнения регрессии, позволяющие спрогнозировать значение зависимой переменной Сиз, а также поверхности отклика. Установлен оптимальный режим работы аппарата для лучшего выхода изогумулона: температура среды 85°C, частота вращения ротора 3000 об/мин, время обработки 3 мин. Содержание изогумулона Сиз в водном хмелевом экстракте при этом составило 63,2 мг/л. Вторая часть исследований состоит в приготовлении хмелевого экстракта из пивного сусла и хмеля этого же сорта в РПА при установленных оптимальных технических параметрах. Предварительные опытные данные показали, что содержание изогумулона в охмеленном пивном сусле составляет 51,41 мг/л, что на 19% больше по сравнению с образцом, полученным классическим способом с суслом сорта «Жигулевское». Доказано, что применение РПА на стадии охмеления пивного сусла дает увеличение выхода горьких веществ, вследствие чего появляется возможность снижения норм внесения хмеля и сокращения длительности процесса кипячения при охмелении с 2 до 1 ч. This article proposes an improvement in the mashing stage in the preparation of malt extract using new modern equipment-a rotary pulsation apparatus. During the operation of such devices, pulsations, deformations, vibrations in the extractant medium, cavitation and grinding occur in them. In the proposed new design of the rotary pulsation apparatus, the time spent on the presence of the processed product inside the apparatus is increased by organizing the recirculation of the material flow, which leads to an increase in the efficiency of the extraction process and, as a consequence, to an increase in the yield of the target components. On the basis of the studies, the optimal and rational technical and technological operating parameters of the apparatus have been determined: the inter-cylinder clearance is 0.1 mm, the rotor speed is 1500 rpm, the duration of the process is 12 minutes, and the temperature of the medium is 70 ° C. The time of the process of mashing by the new technology has been reduced 12 times, in comparison with the classical one. Mathematical models corresponding to the actual extraction process have been developed, since the relative error between experimental and theoretical values is no more than 8%.

The most important stage in the production of tinctures and aromatic alcohols is the extraction process. The paper aims to study the process of extracting target compounds from fruit and berry raw materials for the production of alcoholic tinctures. The research was carried out using a Soxhlet extractor. The experimental results were processed using the method of multiple regression analysis. As a result of processing the experimental data, the optimal technological regime parameters for the production of aromatic cranberry alcoholic tincture were selected. The cranberry tinctures produced at these parameters have a high content of target substances and reach maximum scores for taste, aroma and color. The obtained regression equations allow predetermining the quality of the resulting drink with a confidentiality of more than 90%. The use of the Soxhlet extractor allowed reducing the duration of the preparation of the cranberry tincture to 15 minutes, which is by times different from the classic method of tincture production. The use of the Soxhlet extractor allows reducing the consumed amount of solvent and raw materials, due to the almost maximum rate of the extraction. All this, in turn, affects the cost of the final product and the costs of the manufacturer.

The results of investigations of extraction of oak chips by 50% aqueous-alcoholic solution during the ripening of the viscous beverage are presented. Studies were carried out in an extractor of the original design using oak chips "Sweet Vanilla". When extracting chips, the gas mixture with oxygen extractor, extraction, oak chips, whiskey, optical density, polyphenols, dry substances was periodically treated. The results of determining the optical density, the content of polyphenols and dry substances in the extract for 350 days of aging are obtained. As a result of the analysis of the obtained data, rational parameters of the ripening process of the viscous beverage are determined. The results of the investigations testify to the intensification of the process of obtaining whiskey during periodic saturation of the system of interacting phases with an oxygen medium.

The article contains a mathematical description of the process of mixing bulk materials in a drum aggregate using elements of mathematical statistics, theory of probability and averaging models. A random stationary process is a flow that is formed by means of dispensers in this case. The correlation function is used as its parameter. It is a measure of the stability of the process. The relationship between the variances of the input and output signals is established by means of a correlation analysis. It allows predicting the degree of homogeneity of the material flow (smoothing ability of the mixer) at the output for the given parameters of the input signal: the coefficients of recycling, the time of its presence in the mixer and the dispersion of the input signal. The correlation analysis of the flow of material allowed the development of a new design of a continuous drum mixer. As a result, we found that the organization of external and internal recycling circuits greatly affects the reduction of fluctuations in the input signal. This reduces the variance of components and increases homogeneity of the mixture.
