To describe anaerobic fermentation, many mathematical models have been suggested. A commonly accepted hypothesis in microbial growth is the speed of cellular reproduction, which is proportional to the concentration of cells at that instant. The constant of proportionality between the speed of growth and cell concentration is called cell growth rate, μ. In many occasions, the cell growth rate is considered constant. This leads to conclude that the concentration of cells versus time presents an exponential function. The consideration of this equation provides a good adjustment in the beginning of central phase of the anaerobic fermentation process. However, it moves away from the measurements when there is a limited reproduction due to lack of nutrients and competition between the cells in the environment. This produces a sigmoidal variation in concentration. To find a suitable fit function for all phases of the process, Gompertz proposes a model that considers the cell growth rate as variable. In this chapter, the Gompertz model, kinetic models, transference, and cone models are evaluated. Different adaptations to fit the variables to the obtained values in the experiments have been reviewed.

RESUMENEl objetivo principal fue evaluar el efecto de la refinación física sobre las características del aceite de la almendra del fruto de la palma corozo (Acrocomia aculeata). La metodología se inició con un plan de muestreo que permitió obtener una muestra representativa del fruto del lugar de estudio. Se extrajo el aceite utilizando la operación de prensado en frío, luego se realizó una refinación física que consistió en un desgomado, blanqueado, desodorizado y desacidificación. Al aceite crudo y refinado se le determinó el perfil de ácidos grasos. En la etapa de desacidificación y desodorización el índice de peróxido fue de 1,974 miliequivalente de O 2 kg -1 de aceite. El grado de acidez determinado como ácido oleico para el aceite crudo y refinado fue de 0,620 y 0,100%, respectivamente. La refinación física aplicada redujo el olor y el grado de acidez de forma apreciable, pudiéndose recomendar para la purificación de este aceite. The methodology, it began with a plan of sampling that allowed to obtain a representative sample of the fruit of the place of study. The oil was extracted using the operation of pressing in cold, then there was realized a physical refining that consisted of a degumming, bleaching, deodorized and desacidification. To the raw and refined oil there decided the profile of oily acids. In the stage of desacidification and deodorized the index of peroxide was of 1,974 miliequivalent of O 2 kg -1 of oil. The degree of acidity determined as acid oleic for the raw and refined oil was of 0,620 and 0,100%, respectively. The physical refining applied reduced the smell and the degree of acidity of valuable form, being able to be recommended for the purification of this oil.

The current methodology used in quality control of Ecuadorian beverages such as Pájaro azúl, Puro and Pata de vaca is carried out by using conventional gas chromatography; however, it does not allow the fingerprinting of these Ecuadorian spirit beverages and their possible cases of adulteration. In order to overcome this drawback, comprehensive two-dimensional gas chromatography–mass spectrometry (GC × GC–MS) was combined with multivariate data analysis, revealing that compounds like citronellal, citronellol, geraniol, methyl anthranilate, (−)-trans-α-bergamotene, (−)-cis-α-bergamotene and d-limonene can be considered key elements for pattern recognition of these traditional beverages and product adulteration cases. Thus, the two-dimensional chromatographic fingerprints obtained by GC × GC–MS coupled with chemometric analysis, using Principal Component Analysis and Fisher-ratio can be considered as a potential strategy for adulteration recognition, and it may used as a quality assurance system for Ecuadorian traditional spirits.

ResumenSe evaluó el efecto del almacenamiento de granos de maíz amarillo (Zea mays) sobre la calidad del aceite obtenido del mismo. Se determinaron los parámetros de calidad del maíz al momento de la recepción, los índices de acidez, peróxido, y el color del aceite extraído de granos almacenados en un silo de concreto por 0, 30, 60 y 90 días, utilizando los procedimientos descritos en las normas vigentes en Venezuela. Se encontró un efecto adverso significativo (P<0.05) del almacenamiento sobre los índices analizados, causado por la humedad e impurezas del grano recibido, así como una deficiencia de 704 m 3 min -1 de aire fresco suministrado al silo, lo cual no favorece un adecuado almacenaje. La calidad de los granos no sólo es afectada por las operaciones de secado, sino también por factores ambientales como la temperatura y la humedad durante el llenado de los mismos, por las prácticas de almacenamiento y por su transporte (INTA, 2006).De acuerdo a Alfaro et al. (2004), en Venezuela, el maíz amarillo representa apenas 10% de la producción nacional, el 90% restante es proveniente en su mayoría de los Estados Unidos (USA). El maíz producido en USA se mantiene frío y húmedo durante la época de cosecha y durante los primeros seis meses de almacenaje. Según Reed (2001), almacenar maíz del USA enfrenta desafíos difíciles, ya que el proceso de exportación con tanto manejo del grano causa más rotura y polvo, por otra parte, la temperatura ambiente y la humedad relativa son frecuentemente más altas en climas tropicales como el de Venezuela que en los USA.
