Lutein belongs to the diverse group of pigments known as oxygenated carotenoids, also known as phytochrome and macular pigment, demonstrating excellent biological activity. However, its application is limited due to the difficulty of dissolution, poor stability, and low bioavailability. To solve these problems, delivery systems are considered to be one of the most promising choices. These delivery systems can improve the physical, chemical, and biological properties of lutein to a certain extent. Moreover, the system can also be adapted to the needs of production in our daily life. In this paper, the construction of lutein-loaded nano delivery systems and their influences on the bioactivity of lutein were reviewed based on previous researchers. The main materials were classified, and assistant substances, basic parameters, and properties were collected. The mechanisms were analyzed in terms of enhancing cellular uptake, improving bioavailability, and achieving targeted delivery. These results show that different materials have their own characteristics. This review aims to provide references for the production and application of lutein in the food industry.
Nonalcoholic fatty liver disease (NAFLD) is characterized by diffused hepatocyte bullous fat in the liver, which is not caused by alcohol or drugs like amiodarone and tamoxifen. Presently, no drug is approved for NAFLD treatment. Therefore, it’s important to extract effective components from natural plants to alleviate NAFLD. In this study, we extracted and purified raspberry ketone, a natural phenolic compound from red raspberry (Rubus ideaus L.) by an ultrasonic-assisted ethanol extraction method. The structure of red raspberry ketone (RRK) was determined using Fourier-transform infrared spectroscopy and the purity of RRK was found as 80.06 ± 1.19%. After 28 days of intragastric administration of RRK, the bodyweight of NAFLD model rats decreased significantly (p < 0.05). Besides, the levels of low-density lipoprotein cholesterol, total cholesterol, and total triglyceride (TG) decreased and the content of high-density lipoprotein cholesterol in serum increased drastically. Moreover, the level of liver damage indicators (aspartate aminotransferase, alanine aminotransferase, and alkaline phosphatase) and the levels of glucose, insulin, free-fatty acid, tumor necrotic factor-α in the liver decreased distinctly. The levels of TG and malondialdehyde in the liver decreased, whereas the levels of superoxide dismutase, total glutathione, and glutathione peroxidase drastically increased. We also found that RRK reduced the uneven size of liver cells and blurred boundaries of hepatic lobules, and alleviated hepatic steatosis and inflammation caused by NAFLD. We inferred that RRK could relieve NAFLD progression by regulating glucose and lipid metabolism and alleviating oxidative stress in vivo. This study sheds new light on the use of RRK as a functional food for NAFLD prevention.
This study aimed to enhance the utilization value of sweet corn cob, an agricultural cereal byproduct. Sweet corn cob polysaccharide-ron (III) complexes were prepared at four different temperatures (40 °C, 50 °C, 60 °C, and 70 °C). It was demonstrated that the complexes prepared at different temperatures were successfully bound to iron (III), and there was no significant difference in chemical composition; and SCCP-Fe-C demonstrated the highest iron content. The structural characterization suggested that sweet corn cob polysaccharide (SCCP) formed stable β-FeOOH iron nuclei with −OH and −OOH. All the four complexes’ thermal stability was enhanced, especially in SCCP-Fe-C. In vitro iron (III) release experiments revealed that all four complexes were rapidly released and acted as iron (III) supplements. Moreover, in vitro antioxidant, α-glucosidase, and α-amylase inhibition studies revealed that the biological activities of all four complexes were enhanced compared with those of SCCP. SCCP-Fe-B and SCCP-Fe-C exhibited the highest in vitro antioxidant, α-glucosidase, and α-amylase inhibition abilities. This study will suggest using sweet corn cobs, a natural agricultural cereal byproduct, in functional foods. Furthermore, we proposed that the complexes prepared from agricultural byproducts can be used as a potential iron supplement.

Kvass beverage can significantly improve the gastrointestinal function of rats, which may be because it can improve the contents of ghrelin, MTL, GAS, and VIP in both the serum and gastric antrum by regulating the expression of short-chain fatty acids in the colon.
