Unconventional Food Plants considered as "bush", weeds, exotic fruits that are no longer consumed by the population, among other definitions, are part of the plant diversity in our country. They can grow on crops of conventional cultivation; however, despite the ecological value, most of these plants can also be classified as food plants. They can appear in the form of tubers, roots, rhizomes, leaves, stems, corms, flowers, fruits, and seeds. In the state of Pernambuco, there are agroecological fairs that sell organic products and some of these plants. The study aimed to conduct cataloging of Non-Conventional Food Plants (PANC) that are marketed in agroecological fairs located in large urban centers. Visits were made to four main agroecological fairs, and the collected plants were subjected to classification and analysis of their chemical composition. The composition of these plants had valuable nutritional content. Therefore, it was found a variety of PANC being commercialized in agroecological fairs that were classified and analyzed in their nutritional content, which helps in the diffusion of new products to the consumer's table, in addition to recognizing the work of family farmers who work with this type of plant.
RESUMOO Brasil é um grande produtor de frutas. Elas são fundamentais na alimentação e pelo seu diferencial em agregar saúde. Conservá-las para longos períodos tem início desde primórdios da civilização. No entanto, ao serem processadas partes importantes podem ser desperdiçadas pelo processo de industrialização ou pela exigência do mercado. No Brasil o percentual de resíduo orgânico é muito alto. E isto não é bem diferente quando o alimento é de origem vegetal, em especial as frutas. A ameixa desidratada quando comercializada pode ser revendida na forma de ameixa com caroços e sem caroços. Esses resíduos (caroços) são denominados de endocarpos lignificados, que contêm em seu interior amêndoas. O objetivo desta pesquisa foi determinar a composição da amêndoa do endocarpo da ameixa desidratada (AEAD). Realizaram-se análises para caracterizar a composição centesimal da AEAD seguindo os métodos descritos nas Normas Analíticas do Instituto Adolfo Lutz (IAL, 2008). Também foram realizadas análises de acordo com a legislação vigente no Brasil, Instrução Normativa n°60 (BRASIL, 2019), para avaliação da qualidade sanitária da amêndoa. O estudo mostra que o resíduo amêndoa do endocarpo da ameixa desidratada (AEAD), apresenta um excelente conteúdo de macronutrientes, com destaque para o conteúdo de proteínas, que embora sejam de origem vegetal, podem ser agregadas a outros ingredientes alimentícios na elaboração de novos produtos. E ainda, explica-se que para a utilização desses resíduos em propostas alimentares é necessário um planejamento educacional da população, pois ela ainda não está preparada para este tipo de costume.Palavras-chave: resíduo alimentar, amêndoa, endocarpo lignificado, partes alimentícias não convencionais, composição centesimal.
