As balas moles cristalizadas são tradicionalmente feitas à base de sacarose e xarope de glicose. No entanto, a crescente demanda dos consumidores por produtos saudáveis tem impulsionado as indústrias de alimentos a buscar alternativas para a substituição de determinados ingredientes, p. ex. açúcar, de suas formulações. No caso das balas o açúcar é geralmente substituído por agentes que proporcionem características semelhantes, destacando-se ospolióis. Porém essa substituição tende a interferir negativamente em determinados aspectos das balas e os agentes de textura podem seradicionados com a finalidade de conferir melhorias aos produtos. O objetivo do estudo foi verificar o impacto dos agentes de textura (pectina e gelatina) na percepção do sabor de morango e nas características físico-químicas (cor, textura instrumental e atividade de água) de balas sem açúcar. Foram produzidas seis formulações de balas, sendo umacom açúcar, uma sem açúcar e quatro formulações de balas sem açúcar adicionadas dos agentes de textura (duas com gelatina e duas com pectina), variando as concentrações de aroma de morango (0,06 % e 0,12 %).
