El objetivo del estudio fue comparar el comportamiento productivo de dos líneas cárnicas de cuyes (Cavia porcellus) criados a nivel de la costa central del Perú. Se utilizaron dos líneas genéticas de cuyes durante la etapa de crecimiento y engorde: un grupo con 20 cuyes machos, progenie de cuyes mejorados en la sierra peruana, línea cárnica G, y otro grupo con 20 cuyes machos, mejorados en la costa peruana, línea cárnica H. Los cuyes fueron criados en jaulas individuales a partir del destete (15±2 días) hasta la semana 11, recibiendo un mismo régimen alimenticio a base de maíz chala forrajera, afrecho de trigo y agua fresca. El peso al nacimiento para los cuyes G y H fue de 146.5 ± 28.2 y 119.0 ± 19.2 g, respectivamente, el peso al destete fue de 306.5 ± 49.1 y 227.0 ± 58.2, respectivamente, y el peso a la semana 11 fue de 965.5 ± 100.1 y 868.0 ± 91.6, respectivamente (p<0.05 en todos los casos). No se encontró diferencia significativa en ganancia diaria de peso por día, ganancia de peso total, índice de conversión alimenticia y rendimiento de carcasa; sin embargo, los cuyes de la línea H mostraron un mayor consumo diario de alimento y consumo total de alimento y menor peso de carcasa que los cuyes de la línea G (p<0.05). Se concluye que los cuyes G presentan un mayor peso al beneficio (semana 11), así como un mayor peso de canal y mejor retribución económica que los cuyes H.
The nutritional quality and digestibility in vivo of the Puya llatensis for cobayo feeding was evaluated. The chemical analysis indicated 87.2% humidity, 2.3% protein, 0.75% ether extract, 15.43% crude fiber, 70.43% nitrogen free extract, 11.07% ashes, 0.04% calcium and 0.38% phosphorus on dry base. Moreover, the content of ascorbic acid (Vitamin C) was 7.74 mg in 100 mg of fresh sample. A digestibility test was conducted on 10 male cobayos of 12 weeks of age and 650 g body weight. The coefficients of digestibility were: Dry matter (75.96%), total protein (28.86%), crude fiber (54.89%), ether extract (49.58%), nitrogen free extract (80.56%), and ashes (87.25%). For the feeding trial, 25 male cobayos of 30 days of age and 290 g body weight were used. Animals were distributed at random in five groups: T 1 (control) = (barley + alfalfa 100%), T 2 (barley + alfalfa 75% + Puya llatensis 25%), T 3 (barley + alfalfa 50% + Puya llatensis 50%), T 4 (barley + alfalfa 25% + Puya llatensis 75%), T 5 (barley + Puya llatensis 100%). Body gain weight, feed intake and feed conversion were evaluated at three periods: initial (0-28 d), final (28-56 d), and total (0-56 d), and no statistical differences were found between T 1 , T 2 and T 3 groups (p>0.05). It was concluded that the use of Puya llatensis till levels of 50% alfalfa replacement do not affect the productive performance of cobayos. El análisis proximal registró 87.2% de humedad, 2.3% de proteína, 0.75% de extracto etéreo, 15.43% de fibra cruda, 70.43% de extracto libre de nitrógeno, 11.07% de cenizas, 0.04% de calcio y 0.38% de fósforo en base seca. Además se determinó un contenido de 7.74mg/100mg de ácido ascórbico (Vitamina C) en base húmeda. Se realizó una prueba de digestibilidad con 10 cuyes machos de 12 semanas de edad y peso promedio de 650 g. Los coeficientes de digestibilidad aparente fueron: materia seca: 75.96%, proteína total: 28.86%, fibra cruda: 54.89%, extracto etéreo: 49.58%, extracto libre de nitrógeno: 80.56% y ceniza: 87.25%. Para la prueba de alimentación se utilizaron 25 animales machos de 30 días de edad y con peso promedio de 290 g. Los animales fueron distribuidos al azar en cinco grupos de alimentación: T 1 (Control = cebada + alfalfa 100%), T 2 (cebada + alfalfa 75% + Puya llatensis 25%), T 3 (cebada + alfalfa 50% + Puya llatensis 50%), T 4 (cebada + alfalfa 25% + Puya llatensis 75%), T 5 (cebada + Puya llatensis 100%).
El objetivo del estudio fue determinar el efecto de la infección con Salmonella Typhimurium sobre la composición química y calidad microbiológica de la carne de cuy (Cavia porcellus). Se utilizaron 30 cuyes machos de engorde que fueron distribuidos en 3 tratamientos con diez (10) repeticiones cada uno; T1: alimentación mixta + solución salina (control), T2: alimentación mixta y desafiados experimentalmente con Salmonella Typhimurium, T3: alimentación mixta + APC (antibiótico promotor de crecimiento) y desafiados experimentalmente con Salmonella Typhimurium. Los animales del T1 fueron dosificados vía oral con solución salina, mientras que los T2 y T3 fueron desafiados vía oral con una dosis infectiva (2 x 106 UFC) de Salmonella Typhimurium, por única vez el día 11 de iniciado el experimento. A pesar de manifestarse la enfermedad en los animales desafiados a Salmonella no se presentaron diferencias en la concentración de materia seca, cenizas y el extracto no nitrogenado de la carne, pero si mostraron diferencia (p<0.05) en la concentración de proteína y extracto etéreo en base seca. Los resultados microbiológicos mostraron la presencia de la Salmonella en los ganglios linfáticos, hígado, pulmón, bazo y vesícula biliar en los animales infectados experimentalmente. El uso de APC en T3 no mejoró la composición química de la carne de cuy.
The prevalence of the bovine herpesvirus 1 (BHV-1) was studied in cattle raised under an extensive rearing system and without history of vaccination. Herds were located in the province of San Pablo, department of Cajamarca, Peru. Blood samples from 480 bovine were collected for detection of antibodies against BHV-1 by viral neutralization test. The seroprevalence was 0.6 ± 0.7% (3/480). The three positive Holstein cows, older than 6 years, were part of the same herd and the antibody titers were 1:64 (2) and 1:32 (1). The results indicated that the BHV-1 is now widely distributed in cattle of the studied region.
