O arroz é uma cultura extremamente versátil, que se adapta a diferentes condições de solo e clima, e é considerada a espécie de maior potencial de aumento de produção no combate à fome do mundo (GOMES; MAGALHÃES JÚNIOR, 2004).Mas, quando o arroz é armazenado, sofre danos pelas mais diversas causas, tais como temperatura, umidade, ataque de roedores, microrganismos e insetos, sendo os insetos os prin- AbstractThe objective of this research was to verify the viability of the gamma radiation as polished rice (Oryza sativa L.) conservation method. The samples were irradiated with doses of 0.5; 1.0; 3.0; and 5.0 kGy. Analysis of the grain breakage during the enriching process, longevity and reproduction of the Sitophilus oryzae L., centesimal composition, apparent amylose content, starch paste properties, color (instrumental), and the sensorial evaluation of raw and cooked rice were performed. It was verified that the irradiation did not change the percentage of grain breakage during the enrichment process, and it caused a negative effect on the development of insects. The irradiation did not change significantly the centesimal composition and the apparent amylase content. The Tukey test (p ≤ 0.05) was conducted to verify the differences between the treatments. Gamma irradiation affected the pasting properties of the rice flour. Pasting parameters as temperature, peak, final viscosity, and setback values showed decreasing values with irradiation doses. Differences were detected in the sensorial aspect among the samples, and the sample irradiated with the dose of 1.0 kGy presented greater averages. Regarding the instrumental color parameter, it was observed the difference in the values b* indicating that the rice changed the white color for yellowish with the increase in the irradiation dose. The irradiation dose of 1.0 kGy proved the best to meet the objectives of this study. Keywords: rice; irradiation; sensorial; starch; Sitophilus oryzae L. The objective of this study was to characterize the diversity of mites on coffee plants of the Mundo Novo cultivar in two important coffee producing areas (Jeriquara and Garça) in the state of São Paulo. Samples of leaves, branches and fruits were fortnightly collected, from April 2001 to June 2003, from the middle third of 10 plants randomly taken from each field. Twelve leaves (each leaf from the third or forth pair from the distal part of each branch), 12 branches (apical 25 cm) and 100 fruits. A total of 13,052 specimens were collected in the two studied places, 7,155 in Jeriquara and 5,897 in Garça. From a total of 108 mite species collected from coffee plants in this study, forty five species were collected in both studied fields, which presented 56% of similarity. The number of species found exclusively in Jeriquara (47) was approximately three times higher than the number of species observed only in Garça (16). For Jeriquara, the diversity of mites on surface of leaves, as well as in domatia, and on branches and fruits was higher than for Garça. In both studied areas, Brevipalpus phoenicis (Geijskes, 1939) and Oligonychus ilicis (McGregor 1919) were the most abundant and frequent phytophagous mite species. Stigmaeids and phytoseiids were the most abundant and frequent predaceous mites in both localities.
Light-based methods are being further developed to meet the growing demands for food in the agricultural industry. Optical imaging is a rapid, non-destructive, and accurate technology that can produce consistent measurements of product quality compared to conventional techniques. In this research, a novel approach for seed quality prediction is presented. In the proposed approach two advanced optical imaging techniques based on chlorophyll fluorescence and chemometric-based multispectral imaging were employed. The chemometrics encompassed principal component analysis (PCA) and quadratic discrimination analysis (QDA). Among plants that are relevant as both crops and scientific models, tomato, and carrot were selected for the experiment. We compared the optical imaging techniques to the traditional analytical methods used for quality characterization of commercial seedlots. Results showed that chlorophyll fluorescence-based technology is feasible to discriminate cultivars and to identify seedlots with lower physiological potential. The exploratory analysis of multispectral imaging data using a non-supervised approach (two-component PCA) allowed the characterization of differences between carrot cultivars, but not for tomato cultivars. A Random Forest (RF) classifier based on Gini importance was applied to multispectral data and it revealed the most meaningful bandwidths from 19 wavelengths for seed quality characterization. In order to validate the RF model, we selected the five most important wavelengths to be applied in a QDA-based model, and the model reached high accuracy to classify lots with high-and low-vigor seeds, with a correct classification from 86 to 95% in tomato and from 88 to 97% in carrot for validation set. Further analysis showed that low quality seeds resulted in seedlings with altered photosynthetic capacity and chlorophyll content. In conclusion, both chlorophyll fluorescence and chemometrics-based multispectral imaging can be applied as reliable proxies of the physiological potential in tomato and carrot seeds. From the practical point of view, such techniques/methodologies can be potentially used for screening low quality seeds in food and agricultural industries.
IntroduçãoAs frutas constituem parte essencial na dieta equilibrada e balanceada, pois são importantes fontes de vitaminas e minerais, nutrientes indispensáveis para uma vida saudável. Dentre as frutas consumidas mundialmente, o morango encontra uma posição de destaque, sendo consumido em grande quantidade.Em decorrência da alta produtividade e do seu gosto atrativo, o morango talvez seja considerado o fruto de maior importância entre as frutas pequenas. Apesar das dificuldades e dos riscos que envolvem a sua produção, o cultivo do morango é muito lucrativo (PADOVANI, 1991).A rápida deterioração pós-colheita de morangos em temperatura ambiente tem sido atribuída à elevada taxa respiratória e ao aumento da produção de etileno (KADER, 1992). Outros fatores, como a suscetibilidade à lesão mecânica, a perda de água (NUNES et al., 1995) e a deterioração causada por fungos, especialmente Botrytis cinerea (PADOVANI, 1991), contribuem para diminuir o período de conservação. Além desses fatores, alterações na cor e na firmeza da polpa e a perda do brilho natural também são observadas após a colheita. Por ser um produto de alto valor comercial, principalmente no mercado in natura, o morango requer a utilização de tecnologia adequada para melhorar sua conservação.Uma técnica que auxilia na conservação de frutas e vegetais é a irradiação, que vem sendo utilizada em diversos países. AbstractStrawberries have a short postharvest life due to the rapid spoilage caused by fungal infections, even when stored under refrigeration. The present research had the objective of evaluating the physical and chemical alterations in irradiated strawberries. Strawberries (Fragaria anassa Duch.) of the Sweet Charles variety, harvested in the region of Valinhos-SP, Brazil, were irradiated one day after harvest with a source of 60 Co in the doses of 0.5; 1.0; 1.5 and 2.0 kGy and control, stored under refrigeration (4 °C) for 1, 8, 15, 22 and 29 days. The control sample was not submitted to irradiation. For the characterization of the fruits, the chemical composition was determined. The fruits were evaluated as to total soluble solid content (°Brix), total titrimetric acidity, pH and total and soluble pectin at the different time periods. Irradiation did not cause alterations in any of the parameters analyzed between irradiated samples and the control, but the periods of storage were responsible for the differences observed in all the parameters. It was concluded that the irradiation process did not change the amount of pectin, soluble solid content (°Brix), total titrimetric acidity and pH, but storage time had an influence on these parameters.
RESUMOO objetivo dessa pesquisa foi o de avaliar os aspectos sensoriais do feijão preto submetido à radiação gama do Co. O estudo envolveu oito provadores, na faixa etária de 17 a 23 anos, selecionados e treinados para Análise Descritiva Quantitativa. Os provadores verificaram alterações quanto à aparência, aroma, sabor e textura em feijão preto irradiado com doses 2, 4, 6, 8 e 10kGy e feijão preto não irradiado. Para a análise estatística dos resultados obtidos foram aplicados, o teste F, ANOVA e o teste de Tukey (5%) com o uso de computadores e do programa específico para análise sensorial Compusense Five e SAS. As amostras irradiadas apresentaram diminuição do sabor amargo, cor acentuada e brilhante e a não irradiada textura seca. Deste modo, a irradiação como método de conservação pode ser utilizada para o feijão preto com as doses avaliadas no presente estudo.irradiação de alimentos; conservação de grãos; sensorial; leguminosas. -INTRODUÇÃOO feijão é conhecido como fonte de proteína, sendo que seu valor biológico é mais baixo quando comparado com proteínas de origem animal. Tem especial importân-cia no Brasil, não somente pelo país ser o maior produtor e consumidor mundial, mas também por ser o feijão um dos principais alimentos protéicos do povo brasileiro [7,11].Além de ser uma boa fonte de proteínas, o feijão, possui também carboidratos complexos e fibras, baixo teor de lipídios e sódio, e não contém colesterol. A principal reserva de carboidratos está na forma de amido, com pequenas quantidades de mono e dissacarídeos, como por exemplo, a sacarose. Outros carboidratos presentes são fibras, substâncias pécticas, arabinogalactanas e xiloglicanas [7].Dada a sua composição, o feijão proporciona vários benefícios à saúde, sendo indicado na prevenção e no tratamento de várias doenças como: distúrbios cardíacos, diabetes mellitus, obesidade e câncer. Os feijões são alimentos que preenchem as principais recomendações dietéticas para a boa saúde: aumento do consumo de fibras, amido e outros carboidratos complexos e diminuição no consumo de lipídios e sódio. Assim, as principais instituições internacionais de apoio e promoção à saúde indicam a ingestão diária de uma ou mais porções de feijão [5,12].Além dos benefícios para o bom funcionamento do organismo, o feijão preto apresenta em sua composição compostos fenólicos, entre os quais os taninos, que recebem grande destaque. Estes são responsáveis pelo sabor adstringente e podem interagir com as proteínas do feijão, decrescendo a sua digestibilidade e utilização [3].Ocorrem perdas desses grãos a cada colheita devido, entre outros fatores, ao ataque de insetos e roedores, além de alterações físico-químicas, por transformações estruturais de seus componentes, resultando em feijões que apresentam elevada resistência à cocção, com modificações das propriedades organolépticas e nutricionais [8,15].Para combater essas perdas, o processo de irradiação dos feijões é uma alternativa mais atrativa e saudá-vel, quando comparada aos tratamentos químicos, por exemplo, brometo...
