The article presents the results of research on the development of custard technology using amaranth flour, starch complex, sunflower oil and protein-polysaccharide mixture (BPS). To enrich the custard, instead of butter, sunflower oil was introduced, which is a source of vitamin E and essential fatty acids (linoleic and linolenic), does not contain cholesterol, and also serves as a source of energy and plastic material for humans. Soy protein isolate and dry whey were intended as a protein in BPS, and sodium alginate, gum arabic and pectin were intended as polysaccharides. On the basis of physical and chemical studies, the optimal combinations of polysaccharides, the percentage of amaranth flour and starch in the cream have been established. It was found that soy-based protein has better physicochemical and organoleptic characteristics in comparison with whey. Research results show that encapsulation in BPS improves the structure of the cream, reduces the density and cost of the product. Custard recipes have been developed based on soy protein isolate and whey powder, with the addition of vegetable oil and amaranth flour. The use of encapsulation allows you to enrich the product with useful oils and dietary fiber. A functional product has been obtained, without the addition of dairy products and wheat flour.
ИССЛЕДОВАНИЕ ВЛИЯНИЯ СОСТАВА СТЕНОВОГО МАТЕРИАЛА ИНКАПСУЛИРОВАННОГО ОРЕХОВОГО МАСЛА НА СТРУКТУРУ И КАЧЕСТВО МОЛОЧНОЙ ПОМАДЫАннотация. Молочная помада обладает большим потенциалом для использования в качестве универсального полуфабриката в производстве корпусов конфет, начинки для карамели и глазури для тортов и пирожных. Молочную помадную массу приготавливают из сахара, патоки, сгущенного молока и сливочного масла. Цель работы -совершенствование рецептуры и технологии молочной помады путем обогащения жидким растительным маслом в оболочках из белок-полисахаридных смесей (БПС) и оценка влияния состава стенового материала инкапсулированного орехового масла на качество и структуру молочной помады. Проведены исследования и анализ рецептур конфетных масс, выявлены линейные взаимосвязи между сахаристыми и белок-жировыми компонентами, позволяющие создавать новые рецептуры с заменой малоэффективных на функциональные компоненты, управлять качеством, структурой и себестоимостью продукта. Изучено влияние природы белковой основы эмульсионного геля на качество конфетной помадной массы. Установлено, что эмульгирующая и пенообразующая способность БПС влияет на плотность конфетной массы и создает в жидкой фазе помады эмульсионно-пенную структуру, которая, в свою очередь, оказывает влияние на гранулометрический состав твердой фазы помады. Установлена роль полисахаридов в стеновом материале эмульсионного геля, что связано с повышенной водопоглотительной способностью (гуммиарабика, карбоксиметилцеллюлозы) и, как следствие, повышенной влажностью помадной массы. Выявлено, что БПС образуют гелевую структуру в сплошной среде, что также влияет на зарождение и рост кристаллов сахарозы. Кроме того, такие полисахариды, как карбоксиметилцеллюлозы, в процессе хранения теряют воду и могут являться зародышем для кристаллизации сахарозы. Томографические исследования структуры опытных помадных масс подтвердили, что они имеют мелкие кристаллы и включения воздуха. Так, в контрольном образце объемная доля воздуха составила 6 %, а в опытных помадных массах на основе изолята белка сои (ИБС) и сухой молочной сыворотки (СМС) -9 и 5 % соответственно. Можно заключить, что совершенствование рецептурного состава и технологии молочной помады приводит не только к улучшению пищевой ценности, структуры, сроков годности и расширению функциональности конфетных масс, но и к ее удешевлению и сокращению времени на производство.Ключевые слова: молочная помада, конфетные массы, эмульсионный гель, белок-полисахаридные смеси, томограф, инкапсуляция Для цитирования: Исследование влияния состава стенового материала инкапсулированного орехового масла на структуру и качество молочной помады / В. In recent years, development of confectionery industry is aimed at creating products of increased nutritional value, enriched with macro- and micronutrients, for dietary and prophylactic purposes. One of the most common flour confectionery products in Russia is raw gummy gingerbread. The aim of the research is to study the impact of amaranth flour and encapsulated vegetable oil wall material on the quality of raw gummy gingerbread, development of technology and formulations for raw gingerbread. The optimal ratio of the mixture of starch and amaranth flour has been determined, amounting to 70 and 30 %, respectively. Amaranth flour showed to reduce the density of raw gingerbread to 732 kg/m3 , and moisture content increases to 14.1 % for gingerbread with BPS on IBS, and for gingerbread on BPS with whey - 743 kg/m3 , and humidity increases to 14.9 %. At the same time, organoleptic characteristics and structure of the crumb are fundamentally different from those inherent in gingerbread products: porous structure of the crumb, fragility, irregular shape, uneven color, tears on the surface of gingerbread. Direct impact of protein structural component of encapsulation in the nut oil emulsion on organoleptic indicators of the gingerbread quality (taste, color, smell, appearance, shape, surface, and others) has been revealed. It has been determined that moisture content in gingerbread cooked according to the developed formulation was 1.0-2.0 % higher and they have longer shelf life compared to traditional gingerbread. Formulations with high and low fat content and technology for production of raw gingerbread with encapsulated nut butter have been developed. The developed technology received a patent of the Russian Federation No. 2734 620 “Gingerbread with vegetable oils and milk whey”, which testifies not only to its scientific, but also practical significance.
Предпосылки проведения исследования: Шоколадно-ореховая начинка для кондитерских изделий традиционно производится с твердым жиром, что не соответствует современным критериям здорового питания. Замена твердого жира на жидкое растительное масло имеет ряд технологических проблем, которые не были ранее исследованы и решены. Заполняемый пробел в существующем знании и цель исследования: Авторы статьи предложили вводить в начинку растительное масло в форме эмульсионного геля, структурированного белково-полисахаридной смесью. В формировании физических свойств эмульсионного геля большое значение имеет состав белково-полисахаридной смеси, которая служит стеновым материалом, стабилизирующими эмульсию. С целью совершенствования рецептуры шоколадно-ореховой начинки было исследовано влияние состава белково-полисахаридной смеси на ее способность формировать эмульсионные гели из подсолнечного масла и использование их для замены твердого жира в начинке. Материалы и методы исследования: Белково-полисахаридные смеси готовили из изолята белка сои и полисахаридных комплексов, состоящих из альгината натрия, гуммиарабика, карбоксиметилцеллюлозы и пектина. Проведены исследования пенообразующих и эмульсионных свойств белково-полисахаридных смесей, состоящих из изолята белка сои и отдельных полисахаридов, бинарных и тройных смесей полисахаридов. По результатам исследования приготовлены эмульсионные гели из подсолнечного масла и получены образцы шоколадно-ореховых начинок. Результаты и их применение: Установлено, лучшие функциональные свойства имеют белково-полисахаридные смеси, содержащие изолят белка сои и тройные смеси полисахаридов, с преимуществом полисахаридного комплекса, содержащего альгинат натрия, гуммиарабик и пектин. Белково-полисахаридная смесь указанного состава позволяет сформировать из подсолнечного масла устойчивый эмульсионный гель, который может полностью заменить в начинке молочный жир (в составе молока сгущенного) без ухудшения физико-химических и органолептических показателей начинки, при повышении ее пищевой ценности. Разработана рецептура шоколадно-ореховой начинки с введением подсолнечного масла за счет применения белково-полисахаридной смеси, состоящей из изолята белка сои и комплекса полисахаридов – альгинат натрия, гуммиарабик, пектин. Полученные результаты открывают возможности создания серии новых рецептур шоколадно-ореховых начинок для разных видов кондитерских изделий с введением растительных масел, обладающих высокой биологической ценностью.
