The article presents the results of research on the development of custard technology using amaranth flour, starch complex, sunflower oil and protein-polysaccharide mixture (BPS). To enrich the custard, instead of butter, sunflower oil was introduced, which is a source of vitamin E and essential fatty acids (linoleic and linolenic), does not contain cholesterol, and also serves as a source of energy and plastic material for humans. Soy protein isolate and dry whey were intended as a protein in BPS, and sodium alginate, gum arabic and pectin were intended as polysaccharides. On the basis of physical and chemical studies, the optimal combinations of polysaccharides, the percentage of amaranth flour and starch in the cream have been established. It was found that soy-based protein has better physicochemical and organoleptic characteristics in comparison with whey. Research results show that encapsulation in BPS improves the structure of the cream, reduces the density and cost of the product. Custard recipes have been developed based on soy protein isolate and whey powder, with the addition of vegetable oil and amaranth flour. The use of encapsulation allows you to enrich the product with useful oils and dietary fiber. A functional product has been obtained, without the addition of dairy products and wheat flour.
Communication in the public sector is a key tool for responding to sudden crises. It allows to check the interpretation of what is happening in accordance with changing circumstances and prevent the risks of irreversible obligations, when the authorities make management decisions in conditions of the pandemic crisis, which has raised the bar of their responsibility to protect citizens. COVID-19 is considered by the author as a starting point in the transformation of traditional communication schemes and the institutional consolidation of new communication practices and models of crisis communication. Public sector organizations face different challenges in comparison to private ones, because they are influenced by social structures, power dynamics and a higher level of media control. The pandemic accelerated the processes of media convergence and defined in it a communication collaborative strategy for the development of crisis communications in the public sector. The beginning institutionalization of crisis communications makes it possible to systematize communication strategies and increase the effectiveness of the tools and means used for the proper organization of crisis communication in the public sector. The core of modern crisis communications is social media, which, in fact, is equated with traditional media and entered into direct competition with them, primarily due to the ability to monitor crisis problems and decentralized rapid communications. To keep control over the process of informing the citizens in a crisis, the authorities must act in accordance with a certain communication scenario. The model of crisis communication for the public sector is still being formed. It needs to be re-conceptualized in an increasingly personalized, emotional, and hybrid media landscape.
The purpose of the research is to substantiate the rational bread technology and a way to increase its nutritional value of bread by using spelled flour. The article discusses the advantages of using spelt flour in the baking industry. The determination of the rational parameters of the technological process was carried out on the basis of studying the dynamics of the gas-forming ability of the dough in conjunction with the change in acidity at the stage of fermentation of semi-finished products

It was held jointly by the Social Sciences Department of the Russian Academy of Sciences and the Institute of Socio-Economic Studies of Population of the Federal Center of Theoretical And Applied Sociology of the Russian Academy of Sciences. The conference was attended by around 100 researchers from different regions of Russia and foreign countries, including Azerbaijan, Belarus, Poland, Japan. Holding the Readings for the fourth time indicates not only the emergence of tradition, but also a sincere interest of theorists and researchers to investigation of different aspects of saving Russian population, particularly in the current situation of the coronacrisis. Among the topical questions discussed at the conference were: main trends and determinants of the present demographic situation; characteristics of the living standards of the Russian population -both urban and rural; parameters determining now the quality of life of Russians; problems faced by population during the COVID-19 pandemic.The papers of speakers representing different educational institutions, public organizations and establishments, aroused a lively and interested discussion.
