RESUMOO sorvete é uma sobremesa gelada normalmente mais consumida em regiões quentes. No processo de fabricação, envase e distribuição desta sobremesa, utiliza-se água. A água é indispensável a vida e está presente em todos os processos fisiológicos dos seres, podendo transmitir várias doenças através de sua contaminação. Os principais contaminantes presentes na água são os coliformes totais e termotolerantes. Foram coletadas 6 amostras de água que acondicionam conchas de sorvetes, submetidas a análises de coliformes totais e termotolerantes pelo método quantitativo de tubos múltiplos e método qualitativo do substrato de cromogênico e fluorogênico, ambos se baseiam na identificação dos microrganismos por meio do metabolismo e as enzimas que as constituem. Diante disso das 6 amostras analisadas 5 destas positivaram para Escherichia coli. O maior número mais provável de coliformes foi 1.600/100 ml quando avaliado a presença de coliformes totais e termotolerantes, isso indica que a sobremesa não foi fabricada mantendo um padrão de higiene eficiente ou apresentou falha no aspecto higiênico-sanitário na distribuição e armazenamento pelos manipuladores, podendo indicar contaminação fecal em alguns destes processos. Nos resultados observa-se que todas positivaram para coliformes totais e termotolerantes no teste confirmativo e complementar, não estando dentro dos padrões que se pede na portaria 2.914, de 12 de dezembro de 2011, sugerindo a adotar medidas preventivas para evitar riscos aos consumidores.
