The pericarp of passion fruit can be processed to be used as a new ingredient in the food industry, or as source of pectin. Pericarp samples were taken with a 5 mm cylindrical metal probe to measure the apparent density. Pericarp fractions of eighty fruits at three maturation stages were dried and their flours were quantified and evaluated by instrumental color. The pectin was extracted and its degree of esterification (DE) was quantified. The yield of flour of epicarp and mesocarp reached 3.4% and 4.6% (dry basis) at different maturation stages of passion fruit, respectively. The content of pectin was higher in mesocarp flour, also, its DE increased deeply with the fruit maturation. The mesocarp with the lower density can be separated from the epicarp in a water flow system, which allows the production of clearer flour with the highest content of pectin and the highest DE in ripe fruits. Practical Application:The industrialization of passion fruit produces a huge amount of rinds that can be processed to be used as a new ingredient in the food industry due to its high content of pectin, which confers rheological properties such as stabilizing, thickening and gelling during food processing. The rind of passion fruit is divided into epicarp, mesocarp and endocarp. The separation and processing of these materials can enable to produce better quality mesocarp flour.

O resíduo foi suspenso em água e agitado a 1000 rpm por 60 min para separar os componentes, sendo secos em papel-toalha para realizar as medidas de densidade aparente pelo método do balão volumétrico, utilizando álcool etílico (96 °GL) para as sementes decantadas, e hexano para os materiais suspensos em água, com 10 repetições. A densidade aparente de sementes decantadas foi de 1160 kg m -3 ; o arilo apresentou 912 kg m -3 . As sementes suspensas de Padrão 1 (sementes imaturas finas e brancas) mediram 950 kg m -3 ; Padrão 2 (sementes claras e/ou com início de pigmentação escura) apresentaram 897 kg m -3 ; Padrão 3 (escuras) mediram 851 kg m -3 . Concluiu-se que a densidade aparente das sementes decantadas é maior do que a densidade da água, possibilitando o uso do processo de separação por decantação das sementes puras e o arraste do material suspenso, de densidade inferior à densidade da água. O processo de separação do arilo por meio da remoção de sementes em suspensão não pode ser realizado em meio aquoso. AbstractThe objective of this work was to evaluate the apparent density of the pulp residue components (aryl and seeds) aiming to develop a physical separation process for these components. The residue was suspended in water and stirred at 1000 rpm for 60 min to separate the components, which were then dried on paper towelling before carrying out the apparent density measurements using the volumetric balloon method with ethyl alcohol (96 °GL) for the decanted seeds, and hexane for the material suspended in the water, with 10 replicates. The apparent density of the decanted seeds was 1160 kg m -3 and that of the aryl 912 kg m -3 . The suspended seeds of Standard 1 (immature, fine, white seeds) measured 950 kg m -3 ; of Standard 2 (white and/or with the start of dark pigmentation) presented 897 kg m -3 ; and Standard 3 (dark seeds) measured 851 kg m -3 . It was concluded that the apparent density of the decanted seeds was higher than that of the water, making it possible to develop a physical process to separate pure decanted seeds and drag out the suspended material, which has a density lower than that of water. The process of separating the suspended seeds from the aryls cannot be carried out in an aqueous medium.
The passion fruit juice production generates around 70% of by-products comprising rind, seeds and arils that are commonly discarded. The seeds consist of 4% of fruit weight with the potential to produce around 2,500 ton/year of high added-value oil in Brazil. In this work, passion fruit seeds from different juice manufacturers and the effect of the seed moisture were evaluated towards oil quality and extraction efficiency, using a continuous expeller press of 100 kg/h capacity. The seeds were washed and dried before pressing. The main fatty acids detected were linoleic (67% to 68%), oleic (16% to 17.4%) and palmitic (11%). The oil quality and oil recovery depended on the seed oil content, i.e., the seed moisture before pressing and the different provenances of the seeds. Significant differences were observed for oxidative stability, acidity and conjugated dienes (p < 0.05) for oils from different fruit juice manufacturers. Among them, only one met the requirements of Brazilian regulation regarding oil acidity (less than 2%), thus indicating the need for an effective waste treatment process after juice extraction. Regarding the seed moisture, the highest Oil Stability Index (OSI) (7.4 h) and lowest free fatty acid content (0.63%) were obtained for the oil from the lowest seed moisture content. The oil recovery varied from 78% to 89% and the cake oil content was lower than 8% showing the elements of the feasibility of the process to obtain good quality oil.
Este trabalho teve como objetivo aproveitar o soro de leite bovino como revestimento protetor em morangos, cultivar Dover, avaliando-se aspectos biológicos e sensoriais dos frutos durante o armazenamento a 10ºC e 20ºC. Os morangos foram pré-selecionados, lavados em água corrente, sanificados com cloro e secos. Utilizaram-se 10 caixas de morangos para cada tratamento contendo oito frutos cada. A aplicação do soro ocorreu pela imersão dos frutos em recipiente contendo soro a 100%, 50% e 0% (controle). A perda de peso nos frutos armazenados a 20ºC e tratados com soro a 50% e 100% foi de 1,2% e 1,3%, respectivamente, tendo o controle apresentado perda de 2,5%. Nos frutos armazenados a 10ºC, a perda de peso foi de 1,8% nos frutos tratados com soro a 50% e 100% e de 3,2% para o controle. A menor contaminação por bolores e leveduras ocorreu no tratamento com soro 100%/10ºC. O soro conferiu aspecto brilhante aos frutos, menor ressecamento e sépalas mais verdes, especialmente no tratamento a 100%. Concluiu-se que a aplicação do soro diminuiu a incidência de fungos e preservou características importantes dos frutos, mantendo seu aspecto visual original.
RESUMO No Brasil, o mercado de produtos cárneos embutidos está crescendo, detendo, atualmente, uma participação considerável na dieta humana. Com baixo custo de produção as linguiças possuem potencial de comercialização, sendo o produto cárneo mais consumido no país. O objetivo deste trabalho foi avaliar as características físico-químicas (centesimal, atividade de água e pH), cor e textura instrumental de linguiça defumada de carne ovina com reduzido teor de gordura e NaCl (cloreto de sódio). As formulações se enquadram nos padrões de identidade e qualidade para linguiça defumada. Não houve alteração na atividade de água durante o período estudado (90 dias), porém, o pH se manteve constante após 45 dias. A cor instrumental foi influenciada com a redução da gordura com diminuição dos valores L* e a* e aumento do b*. Todos os parâmetros de textura foram afetados com a redução da gordura e NaCl. Conclui-se que as linguiças defumadas de carne ovina, analisados no presente estudo, apresentaram características nutricionais e tecnológicas adequadas, demonstrando sua viabilidade comercial.
