RESUMO O cultivo de ameixa japonesa atende exclusivamente o consumo in natura.Dessa forma, o objetivo deste trabalho foi avaliar o rendimento e a qualidade da secagem da ameixa japonesa, como alternativa para a agregação de valor de frutos próprios para o consumo, porém fora dos padrões estabelecidos para frutas frescas. Na caracterização dos frutos, foram avaliados o teor de sólidos solúveis, acidez titulável e ratio, umidade e textura. Foram estudadas a infl uência do tratamento de superfície e a desidratação osmótica na secagem dos frutos. No tratamento de superfície, foi utilizada uma solução de NaOH 0,15% em ebulição por 20 segundos. Na desidratação osmótica, foi utilizado xarope 65% sacarose, relação mássica de 1:5 frutas:xarope em temperatura de 45 ºC, com agitação, por 16 horas. A secagem foi feita em estufa com circulação forçada de ar a 65 ºC, por um período de 33 horas. A ameixa in natura apresentou grande amplitude nos valores de textura em um mesmo fruto (de 5,05 a 10,54 N). O tratamento de superfície reduziu em 27% o tempo de secagem. Não foi observada grande incorporação de açúcar durante a desidratação osmótica, que diminuiu em 15 horas o tempo de secagem, quando comparado aos frutos sem tratamento de superfície. O rendimento da secagem foi de 175 g de frutos secos por 1000 g de frutos frescos.Palavras-chave: Ameixa japonesa. Ameixa seca. Tratamento de superfície. Desidratação osmótica. Secagem.
