El presente trabajo evaluó el efecto del clarificado y la pasteurización en la capacidad antioxidante y compuestos bioactivos del zumo de arándanos. Se ensayaron dos técnicas de clarificado (estacionario y con placas filtrantes) y tres tratamientos térmicos de pasteurización letalmente equivalentes (85°C x 30,36 min; 90°C x 21,87 min y 95°C x 15,02 min). Se observó que el tratamiento de clarificado estacionario de los zumos logró una mayor retención de la capacidad antioxidante al obtener 64,19 ?mol TROLOX eq./g de muestra (91,03%) y en los compuestos bioactivos evaluados en el zumo de arándanos, siendo estos de 546,77 mg de ácido gálico/100 g de muestra (98,84%), 13,76 mg de ácido ascórbico/100 g de muestra (92,54%) y de 199,15 mg de cianidina 3-glucósido/100 g de muestra (95,75%). Finalmente, respecto a la pasteurización, se determinó que aplicando un tratamiento térmico a 95°C x 15.02 min se alcanzan retenciones en la capacidad antioxidante de 47,66 ?mol TROLOX eq./g de muestra (67,68%) y en los compuestos bioactivos evaluados, 478,62 mg de ácido gálico/100 g de muestra (86,52%), 11,21 mg de ácido ascórbico/100 g de muestra (75,39%) y de 193,55 mg de cianidina 3-glucósido/100 g de muestra (93,06%) en los zumos clarificados por el método estacionario.
