In this study we evaluated the effects of Bacillus cereus var. Toyoi and Saccharomyces boulardii on the immune response of lambs to Escherichia coli K88ab and Bovine Herpes Virus type 5 (BoHV-5) vaccines. Thirty, 3-month-old lambs were randomly grouped in three lots of 10 each and vaccinated at days 0 and 30 of the experiment. They grazed on the same pasture and were fed ad libitum twice a day with commercial sheep feed supplemented with either B. cereus var. Toyoi at a concentration of 1 )10 6 viable spores gr (1 , S. boulardii at a concentration of 1 )10 6 CFU gr (1 , or non-supplemented feed. Blood samples were collected at weekly intervals over eight weeks and antibody titres were analysed by ELISA. The mean seroconversions against E. coli and BoHV-5 of the fed probiotics groups were higher (p B0.001) than the controls. Both probiotics enhanced the humoral immune response of lambs to the vaccines.
RESUMO: O objetivo deste trabalho foi mostrar a presença da Salmonella na cadeia de produção de suínos e o risco em potencial para a saúde pública. As bactérias do gênero Salmonella são importantes agentes causadores de doenças transmitidas por alimentos (DTAs) em humanos. Estima-se que cerca de 10% do total de casos de salmonelose sejam veiculados por produtos de origem suína. A transmissão ao homem pode ocorrer pelo contato direto com animais, tanto nas granjas quanto nos frigoríficos, mas principalmente devido à ingestão de alimentos contaminados. A infecção de lotes suínos pode ocorrer em qualquer fase zootécnica e o principal ciclo de infecção é fecal-oral, podendo a bactéria se alojar nos linfonodos e ser excretada quando o animal for submetido a um fator estressante, como o transporte e/ou o reagrupamento. O uso inadequado de antimicrobianos também gera cepas multirresistentes. Os equipamentos e utensílios, de uma forma geral, estão relacionados à contaminação cruzada, agindo como veículos de propagação do micro-organismo dentro da indústria. Para garantir a segurança alimentar do consumidor, conclui-se que cuidados como limpeza, desinfecção e biossegurança devem se iniciar na granja de criação, com a utilização correta de antibióticos, passando pelo transporte evitando a superlotação e com medidas higiênico-sanitárias rigorosas durante o abate desses animais.
The objective of this work was to evaluate the influence of lairage periods on the temperament, physiological indicators of stress, and meat quality of beef cattle. Thirty-two castrated Aberdeen Angus x Nellore crossbred steers were distributed into four lairage periods: 12, 18, 24, and 48 hours. The following variables were evaluated: serum levels of the physiological indicators of stress glucose and cortisol (upon arrival at the slaughterhouse, after the lairage period, and at bleeding), animal temperament (movement, resistance to approach, and aggressiveness), and meat quality (final pH, water-holding capacity, color parameters, and tenderness). With a longer lairage period, the temperament score was higher, indicating that the animals were more agitated and resistant to human approach. Serum cortisol and glucose levels correlate positively with animal temperament and negatively with meat quality. At bleeding, an increase was observed in glucose and cortisol levels, respectively, for lairage periods longer than 24 hours and of 12 hours. The lairage of 48 hours reduces meat tenderness and water-holding capacity.
Cisticercose, fasciolose e hidatidose são doenças parasitárias que afetam os animais de produção. Além disso, elas são consideradas importantes zoonoses e são endêmicas em vários lugares do mundo e estão entre as mais importantes economicamente e no ponto de vista de segurança alimentar. O objetivo deste trabalho foi investigar a prevalência de lesões correspondentes a cisticercose, fasciolose e hidatidose em bovinos, suínos, ovinos e bubalinos abatidos nos estabelecimentos de abate de todo o estado do Rio Grande do Sul inspecionados pelo Serviço de Inspeção Estadual (SIE). A partir dos relatórios submetidos, foi computado o total de abates por espécie e o número de animais com as lesões correspondentes as doenças. O total de animais abatidos foi de 620.488 e foram encontradas 48.191 casos de lesões causadas pelas doenças estudadas. Isto representa 7,77% do total de animais abatidos. A doença mais prevalente foi a fasciolose, com prevalências de 6,5%; 6,8%; 0,51% e 0,004% em bovinos, bubalinos, ovinos e suínos, respectivamente. A prevalência de hidatidose foi de 15,49%; 4,72%; 3,84% e 0,003% em ovinos, bovinos, bubalinos e suínos, respectivamente. Os suínos e bubalinos não tiveram casos detectados de cisticercose, e a prevalência da mesma nos bovinos foi de 0,6% e nos ovinos 0,81%. O conhecimento de tais dados poderá servir de base para a prevenção e o controle das doenças estudadas e também para avaliação da eficácia dos sistemas produtivos para manter os rebanhos livres dessas doenças.
