Resumo -Este trabalho teve como objetivo caracterizar frutos de genótipos de cajazeira (Spondias mombin L.) visando identificar materiais de interesse industrial e para trabalhos de melhoramento. Frutos de 30 genótipos foram caracterizados avaliando-se: pH, sólidos solúveis totais (SST), acidez total titulável (ATT), vitamina C, relação sólidos solúveis total/acidez total titulável, açúcares totais, rendimento industrial, massa total do fruto, massa da semente, massa da casca, massa da polpa e porcentual de rendimento de polpa. Os resultados (médias de três amostras) foram avaliados por estatística descritiva utilizando-se medida de tendência central (média) e de variabilidade de dados (desvio-padrão e coeficiente de variação). Foram realizadas análises estatísticas multivariadas, utilizando-se as técnicas de análise de agrupamento e análise de componentes principais. Os frutos que apresentaram melhores características para o processamento foram os provenientes dos genótipos AJ04UB, VS07UB, TF25TN, TF26TN, TF29TN, TF30TN e TF31TN. A análise de agrupamento mostrou a formação de quatro grupos de genótipos, o que demonstra a variabilidade genética existente na espécie.Termos para indexação: Spondias mombin, característica agronômica, variação genética, melhoramento de plantas. Physical, physico-chemical and chemical characterization of fruits of true yellow mombinAbstract -The objective of this work was to characterize fruits of true yellow mombin (Spondias mombin L.) genotypes to identify materials of industrial interest and for breeding works. Fruits of 30 genotypes were characterized by evaluation of pH, total soluble solid (TSS), titratable total acidity (TTA), vitamin C, TSS/TTA rate, total sugars, industrial income, total fruit mass, seed mass, rind mass, pulp mass, and percentage of pulp income. The results (average of three samples) were evaluated by descriptive statistics using central trend (average) and variability of data (standard error and coefficient of variation). Multivaried statistical analyses were carried out, by means of grouping and main components techniques. Fruits from the genotypes AJ04UB, VS07UB, TF25TN, TF26TN, TF29TN, TF30TN and TF31TN presented the best features for processing. A banana é uma fruta tropical muito apreciada, principalmente devido às suas características sensoriais e por ser fonte de nutrientes. Apesar da diversidade de variedades existentes no Brasil, poucas apresentam potencial para exploração comercial. Além das características agronômicas, a composição química das frutas é uma qualidade a ser considerada para a seleção de variedades. O objetivo do presente trabalho foi avaliar as características físicas e químicas de frutas de dez genótipos de bananeira do Banco Ativo de Germoplasma da Embrapa Mandioca e Fruticultura. Os genótipos avaliados foram: 'Pacovan' e seus híbridos PV03-44 e PV03-76; 'Prata Anã' e seus híbridos 'FHIA-18,' 'Pioneira' e 'Prata Graúda'; 'Caipira', 'Nanica' e 'Thap Maeo'. As frutas foram analisadas quanto à massa, diâmetro, comprimento, pH, teores de sólidos solúveis totais (SST), umidade, pH, acidez total titulável (ATT), açúcares totais (AT), redutores (AR) e não redutores (ANR), amido e ácido ascórbico. A cultivar Pacovan, seus híbridos PV03-44 e PV03-76 e a cultivar Prata Anã apresentaram os maiores teores de SST, AT e AR, características relacionadas com a qualidade sensorial da banana, enquanto a maior relação SST/ATT foi observada na cultivar Caipira. O maior teor de ácido ascórbico foi observado na cultivar Prata Anã. A cultivar Thap Maeo apresentou o maior rendimento de polpa, parâmetro importante para a indústria de produtos concentrados e desidratados.
The objective of this study was to select strains of Beauveria bassiana for controlling Cosmopolites sordidus (Germ.) in plantain farms (cv. Terra) of the “Recôncavo” and southern regions in the state of Bahia, Brazil. The virulence of 32 B. bassiana isolates against C. sordidus was determined under laboratory conditions. Three isolates (CNPMF 407, CNPMF 218, and CNPMF 416) were selected for evaluation under field conditions in plantations located in the counties of Mutuípe and Wenceslau Guimarães. Population of C. sordidus was estimated every 15 days by using pseudostem traps. The efficiency of the three strains of B. bassiana was compared to chemical control (carbofuran, 4g/trap) and absence of control. Carbofuran caused around 90% of adult mortality after 12 months, with a reduction in the population of C. sordidus since the first evaluation. A low number of trapped insects was observed in the fungus-treated plots, suggesting the efficiency of the isolates in controlling the C. sordidus population. The strain CNPMF 218 was the most efficient in controlling C. sordidus adults in both locations, causing around 20% mortality, leading to 40% population size reduction after 12 months.
Resumo -A industrialização pode ser uma opção para o aproveitamento de excedentes de produção e de frutos com aparência comprometida para consumo in natura, ao proporcionar aumento da vida-de-prateleira e agregação de valor ao produto. Frutos de diferentes variedades de bananeira (Musa spp.), obtidas em programas de melhoramento genético, podem apresentar características diferenciadas no que se refere à adequação à determinada forma de processamento. O objetivo deste trabalho foi avaliar o produto banana-passa, obtido a partir de frutos de diferentes genótipos de bananeira. Os genótipos avaliados foram: Caipira; Nanica; Pacovan e seus híbridos PV03-44 e PV03-76; Prata Anã e seus híbridos FHIA-18, Pioneira e Prata Graúda. O processamento da banana-passa incluiu a aplicação de tratamento antioxidante, com ácido ascórbico (0,25%) e ácido cítrico (0,30%), e desidratação osmótica, com sacarose (40%, a 70°C). A desidratação foi completada em secador de cabine com circulação forçada de ar. Os produtos obtidos foram avaliados quanto aos aspectos físicos, físico-químicos, químicos e sensoriais. O maior rendimento de produção foi obtido pela cultivar Pacovan. As bananas-passa tiveram boa aceitação sensorial, com médias superiores a 6 (gostei ligeiramente) para os atributos aparência, cor, aroma, sabor e textura. Evaluation of dehydrated banana obtained from fruits of different genotypesAbstract -Industrialization can be a good option for using production surplus and fruits with poor appearance for in natura consumption, because of its capacity to extend shelf life and to aggregate value to the product. Fruits from different banana (Musa spp.) varieties obtained from breeding programs may have differentiated characteristics regarding their adaptation to a certain fruit processing. The objective of this work was to evaluate the dehydrated banana product obtained from fruits of different genotypes. The genotypes used were: Caipira; Nanica; Pacovan and its hybrids PV03-44 and PV03-76; Prata Anã and its hybrids FHIA-18, Pioneira and Prata Graúda. Antioxidant treatments were ascorbic acid (0.25%), citric acid (0.30%); and osmotic dehydration treatment was sucrose (40%, at 70°C). Dehydration was completed in a dryer with forced air circulation. Products obtained were appraised for physical, physico-chemical, chemical and sensory aspects. The highest yield was obtained with Pacovan. Dehydrated bananas produced by the genotypes studied had good sensory acceptance, with means higher than 6 for the following attributes: appearance, color, aroma, flavor and texture. Pioneira was the genotype with highest sensory acceptance.
