Se estudiaron los métodos de salado usados en la provincia de Manabí para los cantones de Flavio Alfaro, Chone, Pedernales y el Carmen, se tomaron 245 muestras de la población total de productores de la zona donde se determinó que el 60% de los productores prefiere el uso de sal en grano gruesa, el 81% del total de las producciones lecheras realiza el salado después del desuerado, existe una relación directamente proporcional entre el tamaño de la producción y la cantidad de sal utilizada, los Cantones Pedernales, Flavio Alfaro y Chone se caracterizan por una producción de menor a 25 libras por día en el 70% de las fincas solamente en el Carmen las producciones en el 43% de los casos son entre 25 y 50 libras diarias, el 17% de los productores están dispuestos a cambiar de método de salado si este aumenta su rendimiento.
Recibido: 23 de mayo de 2019Aprobado: 12 de junio de 2019Esta investigación fue realizada en los laboratorios de la Universidad Técnica de Manabí (UTM) extensión Chone, con el objetivo de monitorear el proceso de fermentación alcohólica de cuatro licores de frutas (maracuyá Passiflora edulis; Naranja Citrus cinensis; mandarina -Citrus nobilis; y Citrus máxima) elaborados artesanalmente. Los parámetros evaluados están regidos en normativas europeas para los vinos y contemplan parámetros como el pH, Azúcar, grado alcohólico; desarrollo de las levaduras y temperatura. Los resultados relacionados a los parámetros como pH, densidad y Temperatura no reflejaron diferencia en los análisis siendo su comportamiento muy similar; sin embargo, en el comportamiento de las levaduras en el mosto de toronja presento un desarrollo precoz en el primer día y en los otros tres mostos alcanza el máximo desarrollo al tercer día. Respecto a los °Brix presento un comportamiento regular partiendo de 22 °Brix y llegando hasta 8 °Brix.
La investigación es tipo exploratorio – descriptivo por cuanto tiene como objeto caracterizar la materia prima e identificar la aceptabilidad de cuatro licores artesanales de frutas tropicales (Maracuyá, Mandarina, Naranja y Toronja), de gran nivel de producción en el Cantón de Chone de la provincia de Manabí – Ecuador. La materia prima procesada para su caracterización se encuentra en concordancia con lo establecido por la Norma Técnica Ecuatoriana NTE INEN-CODEX 192:2013, constituida para bebidas y cotecteles. La aceptación del vino por parte de panelistas imparciales, concuerda con los estándares establecidos para la aplicación de pruebas hedónicas de degustación. Se recomienda intensificar su producción con fines de elevar la productividad y comercialización de los mismos.
