Telang flower (Clitoria Ternatea L.) is one of the herbal plants that can be used as a functional drink in the form of tea which has a high antioxidant content. This study aims to analyze the effect of shape, temperature, and brewing time on organoleptic properties and antioxidant activity of Telang flower herbal tea. The design of this study was an experimental study with a factorial randomized design. Tea brewing was distinguished by 3 factors, namely shape, temperature, and brewing time. Panelists used in this study were semi-trained panelists to assess organoleptic as many as 30 people. The organoleptic test used was a hedonic test and hedonic quality based on color, aroma, and taste attributes were assessed using a 5 scales questionnaire. The shape of the flower used in this study was the shape of a whole flower (B) and a smooth flower (H). The temperature (M) used consisted of 3 levels, namely M1 (750C), M2 (850C), and M3 (950C). The brewing time (T) used consisted of 2 levels, namely T1 (5 minutes)17 and T2 (9 minutes). Statistical analysis in this study was ANOVA and Duncan's further test was used to analyze the effect of shape, temperature, and brewing time on hedonic quality and hedonic. HM1T2 treatment is a formula chosen by the panelists based on the attributes of color, taste, and aroma. Based on the analysis of the antioxidant capacity of the selected HM1T2 was 135,29 ppm (moderate antioxidant activity). The conclusion of this study showed that the panelists preferred the treatment of HM1T2, namely smooth flowers with a temperature of 75oC and a brewing time of 9 minutes based on the attributes of color, taste, and beverage aroma.ABSTRAKBunga telang (Clitoria Ternatea L.) merupakan salah satu tanaman herbal yang dapat digunakan sebagai minuman fungsional berupa teh yang memiliki kandungan antioksidan yang tinggi. Penelitian ini bertujuan untuk menganalisis pengaruh bentuk, suhu, dan lama penyeduhan terhadap sifat organoleptik dan aktivitas antioksidan teh herbal bunga telang. Desain penelitian ini adalah eksperimental studi dengan rancangan acak faktorial. Terdapat tiga faktor penyeduhan yang diamati, yaitu bentuk, suhu, dan lama penyeduhan. Panelis yang digunakan dalam penelitian ini adalah 30 panelis semi terlatih untuk menilai sifat organoleptik. Uji organoleptik yang digunakan yaitu uji hedonik dan mutu hedonik berdasarkan atribut warna, aroma dan rasa yang dinilai dengan menggunakan kuesioner 5 skala. Bentuk bunga yang digunakan pada penelitian ini yaitu bentuk bunga utuh (B) dan halus (H). Suhu (M) yang digunakan terdiri dari 3 taraf yaitu M1 (750C), M2 (850C), dan M3 (950C). Lama penyeduhan(T) yang digunakan terdiri dari 2 taraf yaitu T1 (5 menit) dan T2 (9 menit). Aktivitas antioksidan dianalisis menggunakan metode DPPH. Hasil uji organoleptik dan aktivitas antioksidan dianalisis menggunakan metode ANOVA dan uji lanjut Duncan. Perlakuan HM1T2 merupakan formula terpilih oleh panelis berdasarkan atribut warna, rasa, dan aroma. Berdasarkan analisis kapasitas antioksidan terpilih HM1T2 yaitu sebesar 135,29 ppm (aktivitas antioksidan sedang). Kesimpulan pada penelitian ini menunjukkan bahwa panelis lebih menyukai perlakuan HM1T2 yaitu bunga bentuk halus dengan suhu 75oC dan lama penyeduhan 9 menit berdasarkan atribut warna, rasa, dan aroma.Kata kunci: bentuk, suhu, lama penyeduhan, teh bunga telang
Smokers are at high risk of oxidative stress. Many previous studies proved that tea is a source of antioxidants which might reduce oxidative stress. White tea is known to have the highest antioxidant capacity compared to other kinds of tea. Yet there was no sufficient evidence regarding the effect of white tea, especially against oxidative stress on smokers. This study was aimed to analyze the effect of white tea on oxidative status of smokers, using a pre-post experimental design. Nine medium smokers (11-21 cig/day) aged 30-45 years were instructed to drink 200 ml white tea three times a day for 4 weeks. Total Antioxidant Capacity (TAC) of blood serum was measured 3 times. The first at baseline, the second after four weeks intervention, and the third 2 weeks after intervention period. The level of TAC significantly increased from 1,17 m mol/L to 1,42 m mol/L after 4 weeks intervention (P=0.000). The increase in the TAC was only temporary, TAC significantly decreased from 1.42 m mol/L to 1.18 m mol/L 2 weeks after the intervention (P= 0.000). These results prove that drinking 200 ml of white tea 3 times a day for 4 weeks has a significant benefit on the oxidative status of smokers, although temporary. Smokers are advised to consume white tea continuously for to sustain these positive effects.
Covid-19 pandemic that is happening in Indonesia and throughout the world has caused changes in people’s eating habits. Food and beverages which can increase immunity become the main focus for the community during this pandemic. This study aimed to analyze the drinking habits on the immunity of SMA Muhammadiyah 25 Pamulang students. This study used a cross-sectional design. There were 78 subjects at the age of 16-17 years old who are 12th grade of SMA Muhammadiyah 25 Pamulang. Drinking habits were collected into 11 beverages types and divided into three categories (1: tea, coffee, and boba drinks; 2: fresh milk, powdered milk, sweetened condensed milk, ice cream containing milk, and yogurt; 3: date juice, honey, and traditional herbal medicine). Data were analyzed descriptively by applying the univariate test method. The results show that 66,67% of subjects consumed boba drinks more often. 32,05% of subjects always consumed coffee, and the last 39,74% of subjects rarely consumed tea. Furthermore, there are 62,82% of subjects more often consume ice cream, 25,64% of subjects constantly consume powdered milk, and 47,44% of subjects rarely consume fresh milk. Hereafter, there are 64,10% of subjects who always consume date juice. subjects often consume honey (47,44%) as well as traditional herbal medicine (46,15%). Subjects drink various beverages such as tea, milk, and their processed products, date juice, honey, and traditional herbal medicine to increase their immunity due to nutrient and antioxidant contents, to protect themselves from virus infection, including Covid-19.
BACKGROUND: West Java is ranked 4th as the province with the highest number of COVID-19 cases in Indonesia up to December 1, 2020. The COVID-19 pandemic has a major impact on human health, lifestyle changes, and economic life. AIM:The purpose of this study was to analyze the impact of the COVID-19 pandemic on lifestyle changes among the community of West Java. METHODS:The study was conducted in September 2020 using a cross-sectional study design. A total of 2502 people aged ≥12 years living in West Java were involved in this study as a sample, willing to fill out a questionnaire in the form of a Google form that was distributed online through social media (WhatsApp, Facebook, and Instagram). RESULTS:The results showed that the COVID-19 pandemic had an effect on lifestyle changes in the people of West Java. During the COVID-19 pandemic, the people of West Java became more frequent to wash their hands, do regular exercise, sunbathe in the morning, consume more vegetables and fruits, and consume vitamins or supplements to increase endurance (p < 0.05). CONCLUSION:Based on the result, the community should continue to improve the COVID-19 prevention practices in breaking the chain of transmission.
