Este trabalho teve o objetivo de avaliar a qualidade microbiológica e físico-química do gelo que é utilizado na conservação do camarão. O estudo foi conduzido em cinco supermercados que comercializam camarões resfriados utilizando gelo de fabricação própria ou terceirizado, na cidade de São Luís-MA, em cada estabelecimento foi realizada uma coleta, durante seis meses, totalizando 30 amostras. Os resultados deste trabalho revelaram quando as análises microbiológicas, que a maioria das amostras apresentaram contagens de coliformes totais e termotolerantes acima dos padrões estabelecidos pela legislação. Para a contagem de Enterococcus foi verificado que as amostras seguiram o padrão da legislação. Nas análises físico-químicas, os teores de cloro residual livre estavam abaixo do valor permitido pela legislação. E em relação ao pH e a turbidez, as amostras seguiram a legislação vigente. Dessa forma, sugere-se que os estabelecimentos avaliados tenham um maior controle da água utilizada na fabricação do gelo e do próprio gelo, visto que esse produto tem contato direto com o camarão e os grupos bacterianos avaliados podem conter agentes de infecção alimentar para o ser humano.
O objetivo deste trabalho foi pesquisar indicadores de contaminação microbiológica em carne de sururu comercializada nas feiras de São Luís - MA. O local da pesquisa foram feiras denominadas de A, B, C e D. De cada uma das quatro feiras, foram colhidas 18 amostras de sururu totalizando 72 amostras. Para a pesquisa de coliformes utilizou-se a técnica do Número Mais Provável (NMP) e para a estimativa da enumeração de Enterococcus sp. utilizou-se a técnica de Contagem Padrão em Placas. As médias das populações/g nas feiras analisadas foram elevadas variando de 3,6x108 a 5x109 NMP/g para coliformes totais, 1x109 a 5x109 para coliformes termotolerantes e 1,4x109 a 8,1x109 UFC/g para Enterococcus sp. As contagens de coliformes totais nas amostras de sururu apresentaram diferença significativa (P=0,006) com maior prevalência no período chuvoso. Entretanto, em relação a coliformes termotolerantes (P=0,23) e Enterococcus sp. (P=0,42) as amostras não tiveram diferença significativa durante os meses de coleta. Em relação às populações bacterianas nas feiras analisadas não houve diferenças significativas, indicando que as médias não sofreram influência do local de comercialização. Todas as feiras apresentaram porcentagens elevadas em relação ao quesito não conformidade com aplicação do “check list”. Concluiu-se que existem elevadas populações de coliformes e Enterococcus sp. em carne de sururu “in natura” comercializada nas feiras de São Luís – MA, independentemente do tipo de feira. O período chuvoso pode influenciar nos níveis de contaminação por coliformes totais. A infraestrutura inadequada dos locais de comercialização pode ter contribuído para alta contaminação.
