Dabei werden z.B. Makrophagen oder T-Lymphozyten stimuliert, Immunzellen dazu angeregt, Zytokine wie TNF-α, Interferon-γ oder Interleukine zu produzieren. Insbesondere das immunmodulierende Polysaccharid β-1,3-D-Glycan induziert biologische Reaktionen durch Bindung an komplementäre Rezeptoren auf der Oberfläche der Immunzelle und bewirkt so die zelluläre Stimulation. Komplexe Glycane und Proteoglycane haben nicht nur ein grö-ßeres Potenzial für strukturelle Variabilität als Proteine oder Nukleinsäuren, sondern sind auch durch eine höhere Kapazität für biologische Informationen und zelluläre Interaktionen gekennzeichnet. Aminosäu-ren und Nukleotide tragen nur einen definierten Bindungsort für die Vernetzung zu Makromolekülen. Monosaccharide können jedoch an verschiedenen Positionen untereinander Bindungen eingehen und so eine Vielzahl linearer oder verzweigter StruktuZahlreiche höhere Pilze enthalten medizinisch wirksame Stoffe, die zur Immunmodulation, Tumorbehandlung, Bekämpfung bakterieller und viraler Infektionen oder zur positiven Beeinflussung von Zivilisationskrankheiten wie Arteriosklerose und Diabetes beitragen können. Bis dato wurden ca. 200 Pilzarten als medizinisch wirksam beschrieben. Es soll im Folgenden aber primär auf immunstärkende und tumorhemmende Eigenschaften einiger Pilze eingegangen werden. Grundlegend sind hier Biopolymere, wie Polysaccharide oder Proteoglycane, die überwiegend in der Zellwand lokalisiert sind und bei der Zellerkennung eine Schlüsselrolle spielen. Bisherige Forschungsergebnisse verweisen darauf, dass die antikarzinogenen Wirkungen der Pilze auf solche Biopolymere zurückzuführen sind. Die Wirkungen sind durch immunologische Prozesse zu erklä-ren, wobei sowohl angeborene als auch erren ausbilden und sind dadurch zu einer molekularen Mimikry fähig. Medizinische Heil-und Speisepilze werden bereits seit Jahrtausenden in der Traditionellen Chinesischen Medizin verwendet und haben moderne ostasiatische Wissenschaftler seit Ende der 60er-Jahre dazu veranlasst, das überlieferte Wissen mit naturwissenschaftlichen Methoden zu über-prüfen -eine Entwicklung, die bis heute anhält. Auch in den USA, Kanada, Lateinamerika, Europa und Australien beschäfti-gen sich naturwissenschaftliche Arbeitsgruppen zunehmend mit den Inhaltstoffen von Pilzen und deren medizinischen Wirkungen.Die hier näher beschriebenen Pilzarten (Tab. 1) bilden nur einen kleinen Ausschnitt aus den heute bekannten Pilzen mit medizinischer Wirkung. Sie wurden aufgrund ihrer Eigenschaften als kultivierba-ZUSAMMENFASSUNG Seit vielen Jahren sind in der Medizin verschiedene Inhaltstoffe von Pilzen von großem Interesse.
