Oligosaccharides can be synthesized using the sugars present in the fruit juices through the dextransucrase acceptor reaction. In the present work, the effect of reducing sugar and sucrose concentration on oligosaccharide formation in lemon juice was evaluated through response surface methodology. The oligosaccharide formation in lemon juice was favored at high concentrations of sucrose (75 g/L) and reducing sugar (75 g/L). At this synthesis conditions, an oligosaccharide concentration of 94.81 g/L was obtained with a conversion of 63.21% of the initial sugars into the target product. Oligosaccharides with degree of polymerization up to 11 were obtained. The lemon juice was dehydrated in spouted bed using maltodextrin as drying adjuvant. The powder obtained at 60°C with 20 % maltodextrin presented low moisture (2.24 %), low water activity (Aw = 0.18) and the lowest reconstitution time (~46 s). The results showed that lemon juice is suitable for oligosaccharides enzyme synthesis and can be dehydrated in spouted bed.
O objetivo deste trabalho foi avaliar microbiológica e sensorialmente produto tipo hambúrguer constituído por proteína de soja texturizada e atum. Estimou-se a quantidade de Coliformes totais e termotolerantes, além da pesquisa de estafilococos coagulase positiva e Salmonella spp. A análise sensorial foi baseada em testes hedônicos e de aceitação. O produto enquadrou-se nos parâmetros microbiológicos estabelecidos pela legislação brasileira vigente para todos os testes realizados, salientando-se a ausência de Salmonella spp. Em relação à análise sensorial, o hambúrguer obteve ótima aceitação, alcançando média de 7,06 e intenção de compra por 65% dos julgadores. Os resultados comprovaram processamento seguro do produto, o qual foi formulado seguindo-se as boas práticas de fabricação, reforçando o potencial alimentício e tecnológico da soja agregada a outras matérias-primas.
A carne de frango está amplamente disponível no mercado e é uma das mais consumidas no mundo, devido ao seu alto valor nutritivo e por ter um preço acessível. O consumo dessa proteína tem aumentado de forma constante nas últimas décadas, embora a preferência do consumidor por tipos de carne, incluindo bovina, suína e de frango, varie entre países, locais e indivíduos. É um alimento altamente perecível e muito suscetível à deterioração microbiana. Microrganismos de produtos de origem animal procedem de sua microbiota superficial, de seu trato respiratório e gastrointestinal, além disso, a carne de frango pode se tornar um veículo de transmissão de muitos deles, muitos dos quais são patogênicos, destacando-se Salmonella sp., Campylobacter sp. Escherichia coli enteropatogênica, Staphylococcus aureus, comumente associados a condições higiênicosanitárias insatisfatórias durante o processamento de aves e por estarem expostos a patógenos desde a criação, abate e manuseio de carcaças no mercado.
Made from the fermentation of sweetened tea from the Camellia sinensis herb by a symbiotic culture of bacteria and yeasts, Kombucha has been gaining ground in the Brazilian and international scene for its benefits and its possible ability to assist in human well-being. This fermented beverage has shown significant growth in the beverage market and, because of this, the present work aimed to carry out a data survey on the set of behavioral characteristics of kombucha consumers in the city of Fortaleza-CE and metropolitan region and the relationship of these individuals with the drink; as well as identifying the attributes that influence the purchase decision and prospecting the population's acceptability for fermented beverages such as kombucha. To carry out the research, the Google forms platform was used, and these forms were distributed through social networks following the snowball technique. XLSTAT software, Maxdiff test and Excel were used for data analysis. Thus, it was found that most kombucha consumers are women, young people, with an income between 1 and 4 minimum salary, single, with higher education and residents of the noblest areas of the city. The attributes that were considered decisive for the purchase decision were: health benefits, probiotic, flavor, increase immunity, contain no chemical additives and high antioxidant content. In this way, it is expected that this study will contribute with a direction to kombucha producers for the elaboration of new products directed to a specific public.
O ácido ascórbico, também denominado vitamina C, é hidrossolúvel e termolábil. Os seres humanos são incapazes de sintetizar o ácido ascórbico, por isso valem-se essencialmente da alimentação através de frutas, hortaliças e vísceras para suprir sua demanda. Além do seu valor nutricional, o ácido ascórbico é empregado como aditivo alimentar devido o seu caráter antioxidante. Este trabalho objetivou analisar criticamente as Instruções Normativas Nº 37 de 01 de outubro 2018, do Ministério da Agricultura, Pecuária e Abastecimento - MAPA e a Instrução Normativa nº 37, de 01 de outubro de 2018 - MAPA: a primeira, a qual requer um teor mínimo de ácido ascórbico de origem natural para determinados sucos e polpas de fruta; e a segunda por, ao mesmo tempo, permitir o uso do aditivo ácido ascórbico (INS 300) para esses tipos de bebidas. A partir desta análise crítica evidenciou-se esta contradição que compromete a ação fiscalizatória do cumprimento dos padrões de identidade e qualidade para sucos e polpas de fruta, pois possibilita mascarar alterações de qualidade provocadas por falhas no pós-colheita, processamento, transporte e armazenamento denunciadas pela degradação da vitamina C. Convém que não seja permitido o uso deste aditivo para tais bebidas.
