Background: Vegan has become a diet that started to be many people's choice. Low intake of iron and vitamin B12 is factors that Method: This research uses cross sectional design. The population in this study are all adolescent vegan in the Buddhist Pusdiklat Maitreyawira. Samples in this study were 31 peoples. Independent variable is an intake of iron, vitamin A, vitamin B12, and vitamin C was obtained by SQ-FFQ, while the dependent variable was Hb with hemoglobin testing system quick-check set. Analysis of the data in this study using Pearson correlation and multiple linear regression. Results: There is a relationship intake of iron (p=0,000), vitamin B12 (p=0,037), and vitamin C (p=0,000) to Hb level of adolescent vegan in Buddhist Pusdiklat Maitreyawira, there is no relationship intake of vitamin A with a Hb level of adolescent vegan (p=0,220). The result of multivariate analysis using multiple regression analysis of the variables that most infl uence haemoglobin levels of adolescent vegan is the intake of iron and vitamin C. Latar Belakang: Anak sekolah belum mengerti tentang keamanan makanan jajanan, mereka membeli jajanan menurut kesukaan mereka tanpa memikirkan bahan-bahan yang terkandung didalamnya. Pemberian edukasi gizi terhadap anak sekolah membutuhkan alat bantu untuk mempermudah penyampaian materi yaitu dengan menggunakan media permainan ular tangga. Ular tangga merupakan metode pembelajaran bermain yang cocok diterapkan pada siswi SD. Tujuan: Mengetahui peningkatan pengetahuan dan sikap siswa/i kelas 4 SD tentang keamanan makanan jajanan anak sekolah. Metode: Jenis penelitian quasy experimental dengan rancangan penelitian Pretest Posttest Control Group dengan subjek sebanyak 60 responden yaitu 30 responden kelompok perlakuan dan 30 responden kelompok kontrol. Variabel yang diteliti adalah pengetahuan dan sikap pada kelompok perlakuan dan kelompok kontrol berdasarkan nilai pre-test, post-test1, dan nilai post-test2. Pengambilan data menggunakan kuesioner yang dianalisis menggunakan Wilcoxon Signed Rank Test. Hasil: Penelitian ini menunjukkan bahwa ada peningkatkan pengetahuan tentang keamanan makanan jajanan anak sekolah sebesar 22,9% dari sebelum diberikan intervensi, sedangkan sikap positif siswa/i tentang keamanan makanan jajanan anak sekolah meningkat sebesar 20% setelah diberikan intervensi. Hasil uji statistik menggunakan Wilcoxon Signed Rank Test diperoleh hasil pengetahuan dan sikap p=0,000 sehingga p<0,05 yang berartiditerima, yang artinya ada peningkatan pengetahuan dan sikap yang signifikan antara pre-test, post- test 1 dan post-test 2 sehingga permainan ular tangga berpengaruh terhadap pengetahuan dan sikap tentang keamanan makanan jajanan anak sekolah. Permainan ular tangga dapat meningkatkan pengetahuan dan sikap tentang keamanan makanan jajanan anak sekolah serta metode pembelajaran dengan permainan ular tangga dapat menjadi salah satu media yang efektif untuk menyampaikan informasi pada anak sekolahdasar. One of the problems arising from overconsumption of meat is degenerative diseases and many people are turning to vegetarianism. Vegetarians tend to experience protein deficiency problems, therefore one of the most popular food preparations for the community and have high nutritional value is making jerky analogue of banana hearts with the addition of black soybean tempeh flour. To analyze differences in nutrient content and acceptability (color, taste, aroma and texture) with the addition of black soybean tempe flour. This type of research is an experimental study, there are 4 formulations with a ratio of black soybean tempeh flour banana heart and in analog jerky, namely F0 (100%), F1 (15%: 85%), F2 (20%: 80%), F3 (25%: 75%). The Nutritional Testing which was conducted was the analysis of proximate levels and crude fiber content. Organoleptic assessment uses a Likert form with a scale of 1-5 against 50 consumer panelists. Based on the assessment of the results of nutrition and consumer panelists, the selected formulations were F3 with 27.24 g protein, 11.23 g fat, 22 g carbohydrates, 5.71 g crude fiber content, 36.05 g moisture content and ash content 3.46 g. There is an effect of adding black soybean tempe flour to the nutritional value of analog jerky. There is a significant difference in the acceptability of texture and taste in analog jerky.
ABSTRAK Salah satu masalah gizi pada remaja adalah kurangnya konsumsi air sehingga rentan mengalami dehidrasi yang disebabkan oleh banyaknya aktifitas fisik yang menguras tenaga dan juga cairan tubuh. penyebab kurangnya konsumsi cairan adalah kurangnya pengetahuan terhadap fungsi cairan bagi tubuh. Tidak efektifnya pendidikan gizi pada remaja berdampak pada pengetahuan yang kurang pula sehingga menyebabkan perilaku makan dan minum yang salah. Oleh sebab itu, salah satu kewajiban setiap perguruan tinggi adalah menyelenggarakan kegiatan pengabdian msyarakat, yang pada kegiatan ini bertujuan utuk memberikan informasi mengenai manfaat konsumsi cairan pada remaja, meningkatkan pengetahuan, sikap dan tindakan remaja mengenai konsumsi cairan, serta mengetahui efektifitas media permainan monopoli terhadap terjadinyaperubahan pengetahuan, sikap, dan tindakan remaja terhadap konsumsi cairan. Metode yang digunakan dalam kegiatan ini adalah sosialisasi menggunakan media permainan monopoli dengan sasarannya yaitu remaja di SMPN 220 Jakarta Barat. Hasil dari kegiatan ini yaitu terjadi perubahan dan peningkatan pada pengetahuan, sikap, dan tindakan konsumsi cairan pada remaja sebelum dan sesudah kegiatan permainan monopoli sehingga dapat disimpulkan bahwa media permainan monopoli merupakan media yang efektif sebagai media pembelajaran pada usia remaja. The the lack of fluid intake causes the lack of knowledge on the function of body fluids. Ineffectiveness of nutrition education in adolescents impact the lack of knowledge is also causing to bad eating and drinking behavior. Therefore, one of the obligations of each college is organizing community service activities. The aim of this activity weeks to provide information about the benefits of fluid intake in adolescents, to improve knowledge, attitude, and practice regarding the liquid consumption in adolencents, and determine the effectiveness of media monopoly game against changes in knowledge, attitudes, and actions toward adolescent consumption of fluids. The method used in this activity is socialization using media monopoly game with the target is students in SMPN 220 Jakarta Barat. The results of this activity are changes and increased knowledge, attitudes, and practice in fluid consumption of adolescents before and after the game of monopoly activities, so that it can be concluded that monopoly game is an effective media as a learning media in adolescents.
