El consumo de carne es importante para el ser humano, debido a las bondades proteicas de alto valor biológico que este alimento contiene. Además del ingreso existen otras variables como las carencias sociales, las cuales también determinan el consumo de carne. Identificar a los consumidores de carne en grupos económicos, contribuirá a entender la relación que tienen el ingreso y la privación social con el consumo de este bien. En julio del año 2014, se realizó una encuesta exploratoria con una muestra de 429 familias mexicanas, los datos son de carácter mixto, apoyándose de un cuestionario de 43 preguntas, de las cuales 20 fueron diseñadas bajo la metodología de la medición multidimensional de la pobreza del CONEVAL, a fin de detectar el índice de privación social de los consumidores encuestados. Se aplicó una prueba de F para comprobar homogeneidad de varianzas en el consumo semanal de carne de los tres grupos económicos detectados (vulnerables por carencias sociales, pobres multidimensionales moderados y pobres multidimensionales extremos) por último, se realizó la prueba T de Student para comprobar si existe diferencia de consumo de carne entre los tres grupos económicos. Los resultados demostraron que efectivamente existe diferencia de consumo para la carne de res, cerdo y pollo entre el grupo vulnerable por carencias sociales y pobre multidimensional extremo con una t de 2.8254, 2.686 y 2.2367 respectivamente. Por lo anterior se concluye que, efectivamente la privación social y el ingreso influyen directamente en el consumo semanal de carne.
An economic assessment of the value of agricultural water was conducted at the subdistrict (module) level within the Alto Rio Lerma Irrigation District 011 in Guanajuato, Mexico. The assessment employed positive mathematical programming (PMP), a deductive valuation methodology, which self-calibrates to baseline production input use. Production and water use values for the 2016–2017 agricultural year, and the averages of the 2014 to 2017 agricultural years for yields, agricultural commodity prices, and production costs were employed disaggregated per irrigation module. Results indicate that the economic value of water is 1.8 to 4.7 times higher than the rate currently paid by users, about US$7.89 dam−3 (cubic decameters). The differences among the rate and shadow prices could create a pricing water policy focused on water conservation and its efficient use. This work also conducts an assessment of a formal water market in the irrigation district as way to achieve economically efficient water allocations and reduce the potential economic impacts of water shortage during droughts. Modeling results show that an active water market would allow the irrigation district to adapt to scarcer water conditions by shifting cropping patterns and trading water among subdistricts, by reducing loss in net income at the irrigation district. A successful implementation of this system would be feasible, provided that the irrigation modules are able to import and export water, under water scarcity scenarios considered for the water market model. Potential distributional effects and policy insights from this assessment are discussed.
En esta investigación se explican los factores resilientes identificados en micro y pequeñas empresas rurales (MIPyMES), a partir de la construcción de un listado de factores obtenidos de proyectos de la Red Nacional Desarrollo Rural Sustentable (RENDRUS) y confirmados mediante estudio de casos de unidades económicas localizadas en el municipio de Ziracuaretiro en el estado de Michoacán, México. Las MIPyMES son medios de desarrollo rural para México y objetos de estudio por su capacidad de sobrevivencia. Las principales contribuciones de este trabajo son: ayudar a establecer una definición de resiliencia empresarial, identificar los factores resilientes, a partir de los factores de riesgo y protectores, y contribuir con una idea del tipo de situaciones críticas que atraviesan las empresas rurales en México. El método de estudio tiene dos partes. La primera consistió en la revisión de literatura y la segunda en la elaboración de estudios de caso, con mayor análisis en la parte sociocultural y en la estructura organizacional de la empresa rural. Los principales factores resilientes identificados fueron: el logro de una mayor coordinación grupal, un mayor compromiso grupal, honestidad, adquirir más disciplina grupal y productiva, así como establecer alianzas estratégicas, entre otras.
El huevo es una de las fuentes de proteína más accesible y con disponibilidad amplia en el mercado. El objetivo de este trabajo fue desarrollar un modelo de series de tiempo para pronosticar los precios nominales mensuales de huevo blanco pagados al productor en México (PPHBP) mediante modelos de función de transferencia (MFT) y evaluar su relación con los precios promedios rurales del sorgo (PPSRG). Los parámetros y las predicciones se estimaron con el método de máxima verosimilitud y fueron estadísticamente apropiadas y significativas. El mejor MFT que representó el comportamiento de los PPHBP fue el de dos coeficientes autorregresivos, tres de media móvil, dos grados de denominador “râ€, un grado de numerador “s†y un coeficiente “bâ€. Se encontró que el PPSRG impacta un mes después en los PPHBP, disminuyendo la varianza original del PPHBP de 0.01036 a 0.009771 con el modelo de transferencia. El MFT genera mejores pronósticos de los PPHBP que el modelo SARIMA, debido a que el primero, toma en cuenta la evolución temporal del PPSRG logrando estimaciones más cercanas a la realidad, útiles para planificar y tomar decisiones en el sector avícola a corto y mediano plazo.
El agua para consumo humano se distribuye entre los f ines que la demandan: doméstico, agropecuario e industrial. De acuerdo a lo reportado por la FAO y UNESCO la agricultura consume 69%, el consumo doméstico utiliza 10% y la industria el 21%. Dada la importancia del agua en la agricultura se requiere conocer la asignación óptima del recurso dado un patrón de cultivos, así como el valor económico del líquido. El objetivo de este trabajo fue el obtener un patrón óptimo de cultivos en el Distrito de Riego (DR) 100 Alfajayucan Hidalgo, así como el de estimar el precio económico del agua ante distintos escenarios. La hipótesis establece que las tarifas pagadas por los agricultores en el DR 100 no reflejan su verdadero valor de escasez. Se instrumentó un modelo de programación lineal para maximizar el ingreso neto de los agricultores con 17 actividades agrícolas cíclicas y perenes, sujetas a 57 restricciones de superf icie, agua, mano de obra y maquinaria. Los resultados indican que el ingreso neto del DR 100 se incrementaría en 273 millones de pesos si se establece el patrón óptimo de cultivos, en comparación con el obtenido en el ciclo agrícola 2015-2016. El precio económico del agua arrojado por el modelo fue de $1.44 m-3, muy superior al pagado actualmente por las cuotas de riego ($0.02 m‑3), se conf irma la existencia de un fuerte subsidio al consumo de agua: por lo que se recomienda se incrementen las cuotas pagadas por los agricultores.
