Antibiotics are widely used for the prevention and treatment of infectious diseases in medicine and veterinary medicine, as well as growth stimulants in animal husbandry. The presence of residual traces of antibiotics in animal products, and further in food products derived from it, poses a danger to both humans and the environment as a whole. The irrational use of antibiotics in agriculture stimulates the emergence of antibiotic-resistant bacteria that can cause infectious diseases in humans and animals that cannot be treated with modern medicines. Due to the potential risk to human health in many countries, the maximum permissible limits for the content of residual traces of antibiotics are regulated. Therefore, the development of new highly sensitive, accurate, simple and cost-effective methods for their determination remains an urgent task. This review is aimed at analyzing recent work in the field of identification of residual traces of antibiotics in food products.
Controlling the level of amphenicol antibiotics in animal products is an important task for the contemporary food industry. Amphenicols are widely used in agriculture. Residual antibiotic substances enter the human body with food of animal origin, e.g. milk, and may lead to resistance to antimicrobial drugs. The research objective was to analyze scientific publications on various methods for identifying residual amphenicol antibiotics in milk and dairy products. The review covered six years of Russian and foreign publications from the PubMed databases of the National Center for Biotechnology Information (USA), Scopus and ScienceDirect databases of the Elsevier, the Web of Science platform, and the domestic electronic library eLibrary.Ru. Screening and quantification proved to be the main methods for their determination. Chromatographic methods, i.e. various types of high performance liquid chromatography, appeared to be especially effective. These methods often experience problems with sample preparation because milk tends to clog the capillary. Thus, food science needs further studies in the field of milk purification and isolation of amphenicols. The article describes the main methods for identifying amphenicol antibiotics in milk and dairy products and defines the prospect of further research.
Аннотация. Антибиотики сегодня находят широкое применение как в лечении людей, так и в фермерских хозяйствах для кормления животных с целью предотвращения развития заболеваний, способствующих в некоторых случаях полному уничтожению поголовья и большим экономическим потерям. Однако не редки случаи, когда происходит злоупотребление в применении антибиотиков, что приводит к их накоплению в продуктах животного происхождения, которые поступают на прилавки магазинов. Употребление человеком таких продуктов способствует появлению и развитию резистентных бактерий, устойчивых к действию антимикробных препаратов. В конечном итоге это приведет к тому, что применение антибиотиков в лечении вирусных заболеваний будет бесполезным, а смертность даже от простых респираторных болезней вырастет в несколько раз. В этой связи важным является полный контроль содержания антибиотиков и их остатков в продукции животноводства, которое из-за неконтролируемого использования препаратов может превышать в несколько раз. На сегодняшний день известно несколько способов определения концентрации антибиотиков в продуктах, однако самым распространенным считается метод высокоэффективной хроматографии. В работе рассмотрена возможность применения методики высокоэффективной жидкостной хроматографии с масс-спектрометрическим детектором к анализу продукции животноводства на остаточное количество антибиотиков группы амфениколов: хлорамфеникол (ХАФ), флорфеникол (ФЛО), флорфеникол амин (ФЛО А). Была поставлена методика и исследовано наличие амфениколов в продукции животноводства, полученном от различных фермерских хозяйств. Из общего количества представленных образцов остатки амфениколов обнаружены в 21,5 % проб, что свидетельствует о несоответствии данного вида сырья действующему законодательству.Ключевые слова: антибиотики, амфениколы, продукция животноводства, высокоэффективная жидкостная хроматография, постановка метода, хроматограмма
Аннотация. Пищевые продукты животного происхождения в настоящее время нередко представляют собой опасность для жизни и здоровья населения в силу содержания различных пищевых и лекарственных добавок, используемых как на этапе выращивания животного, так и на этапе производства и хранения продукции. Одним из таких элементов в мясной продукции могут являться антибиотики различных классов, используемые в животноводстве и ветеринарии в качестве стимуляторов роста или для профилактики и лечения ряда заболеваний. Важной задачей производства стоит не допускать такого рода продукцию для употребления, как в виде самостоятельного продукта, так и в качестве сырья. Для решения подобных задач необходимы точные и эффективные методики определения антибиотиков в пищевых продуктах. В работе рассмотрена возможность применения методики высокоэффективной жидкостной хроматорафии с масс-спектрометрическим детектором к анализу мясного сырья на остаточное количество метаболиотов нитрофуранов-3-амино-2-оксазолидинон (НФ-АОЗ), 1-амино-гидантоин (НФ-АГД), 3-амино5-морфолинометил-2-оксазолидинон (НФ-AМОЗ). Была проведена валидация методики и исследовано наличие данной группы противомикробных препаратов в мясном сырье, полученном от производителей и хозяйств Кемеровской области. Из общего количества представленных образцов остатки метаболитов нитрофуранов обнаружены в 18,6% пробах, что свидетельствует о несоответствии данного вида сырья действующему законодательству.
