La renovación masiva de cafetales con variedades tolerantes a la roya del cafeto (Hemileia vastatrix Berk y Br.) desarrolladas en centros de investigación y siguiendo el paradigma de difusión de innovaciones (DI) es el escenario convencional actual en las zonas cafetaleras de México. Frente a lo dominante que hace dependientes a los caficultores, la experimentación campesina (EC) brinda herramientas de decisión y opciones con recursos y capacidades locales a los agricultores para enfrentar las perturbaciones de manera más autónoma. Por lo que es necesario identificar cuáles son las variables y circunstancias clave que promueven la EC. Para este propósito se realizaron 128 entrevistas semiestructuradas a integrantes de cuatro organizaciones cafetaleras de la Sierra Madre de Chiapas y entrevistas abiertas a los actores centrales del proceso de renovación de cafetales. Se identificó que, en una situación de crisis como la fuerte incidencia de la roya, el grado de consolidación de las organizaciones a la que pertenecen los caficultores, la presencia e intereses de los actores centrales, la condición agroecológica que favorece o limita la situación de crisis que se enfrenta, la edad y los recursos disponibles de los productores fueron las variables determinantes para la EC.
E n este artículo se analiza el origen y desarrollo de procesos organizativos campesinos orientados hacia la producción de café orgánico y de comercio justo en la Reserva de la biósfera El Triunfo, Chiapas, México; así como los elementos que posibilitan su permanencia. Desde el constructivismo social, y haciendo uso de la metodología cualitativa, se examina la trayectoria de la organización campesina cafetalera CESMACH (Campesinos Ecológicos de la Sierra Madre de Chiapas, Sociedad Civil). Encontramos que el desarrollo y la permanencia de esta organización campesina están fundamentados en las subjetividades compartidas, acciones colectivas permanentes, normas propias, capacidades autogestivas y adaptativas, cadenas de valor apropiadas y en la redistribución de beneficios los cuales impactan en el cumplimiento de la visión, misión y principios tanto de la asociación campesina como los del área natural protegida. Se puede considerar como un caso excepcional, por el acompañamiento y recursos externos recibidos en sus inicios, pero sin crear dependencia.
Desde 1988 las empresas sociales cafetaleras de comercio justo orgánico (ESC) de México venden su producto en el mercado internacional, el cual tiene crecientes barreras de normatividad que lo vuelve cada vez más inaccesible. Debido a ello las ESC requieren incrementar sus ventas en el mercado nacional mexicano, pero para ello primero se necesita valorar y encontrar áreas de oportunidad de funcionamiento de las ESC en dicho mercado. Se realizó adaptación y apropiación de metodologías referentes al contexto de las ESC. La información se recopiló por medio de tres guías de entrevistas y una encuesta dirigidas a personal directivo, de tostado, ventas y promoción; así como socios y socias de las ESC. También se revisaron páginas digitales y de redes sociales de las ESC. Los resultados fueron presentados con las ESC para su discusión. Éstos identifican la necesidad de generar sinergias entre el trabajo de las áreas de tostado, ventas y promoción para asegurar un desempeño empresarial más eficaz y eficiente en las ESC estudiadas y se requiere de mayor presencia de estas en medios digitales. Se evidencian la importancia de los principios, objetivos y personas tanto en el funcionamiento de las mismas empresas como en la confluencia con intereses de las generaciones millenial y Z, principales impulsoras del incremento de consumo de café en México.
The objective of the article was to analyze the trajectory of the fairtrade niche as opposed to the food production and marketing regime. For this purpose, we worked in parallel on two levels, at the macro level with the analysis of the state of the art of fair trade as a niche in relation to the agri-food regime, and at the micro level, we applied open interviews to managers, youth, and women in 10 Mexican fair trade coffee organizations, including pioneers and recent ones. The current situation and the key elements of the niche that hinder further changes in the regime were identified by taking up the analogy of the waves in the development of coffee consumption. From the first to the third wave, the niche achieved an adequate quality of learning and inclusion of actors that strengthened it; however, in the fourth wave, the niche incorporated actors from the regime such as supermarkets and transnational companies to increase the volume of sales, but without achieving that these actors generated second order learning, nor shared the expectations of the founders of the niche and thus did not commit to achieving changes in the regime.
