This article presents the results of the veterinary-sanitary inspection and research of upland game carcasses. During the primary inspection, we paid special attention to the presence of abnormal changes typical of infectious and invasive diseases, based on the standard rules for inspecting the meat of domestic fowl. We also took into consideration the nature of injuries, dehematizing levels, product quality, and freshness. The preservation of the upland game meat depends not only on the rapid removal of intestines from carcasses but also on the type and area of injuries, and the level of dehematization. The study matter for this research is represented by the carcasses of upland game, namely their muscle tissues. During the research, we used organoleptic, physical, chemical, bacteriological, pathomorphological, and mathematic methods. During the organoleptic tests, the highest appraisal of upland game products on a 9-point scale was within the range of 8.4-9, which complies with the standards. The content of amino-ammonia nitrogen was 0.78±0.01. The primary protein breakdown product test showed that the fresh meat produced clear stock without flaking. The fat acidity value test showed an increase from 0.8±0.01 to 3.9±0.01 mg/KOH; the fat peroxide value increased from 0.01±0.01 to 0.74±0.5% J. The pH value varied from 5.99±1.79 for fresh meat to 7.70±0.01 for stale upland game meat. The microbiological tests did not find any pathogenic germs, including salmonella and Listeriamonocytogenes bacteria.
The article provides data on the reproduction of cows and heifers in three farms of the Republic of Sakha (Yakutia), specializing in meat cattle breeding: Integrated agricultural production centre "Soloosun" (Megino-Kangalas district), LLC "Konezavod Berte" (Khangalas district) and Integrated agricultural production centre "Krestyah” (Suntar district). The material for research is the reporting data of farms for 2014-2019. The experience of reproduction of the herd of meat direction was summarized, dynamics of insole and calving was studied. By results of calculation of KIVSK according to N.M. Kramarenko, a high rate of a uterine livestock was in LLC "Konezavod Berte" (108.9%), a good indicator by the index of fertility in herds of the meat cattle in Integrated agricultural production centre "Krestyah” (51.2) and Integrated agricultural production centre “Soloosun” (51.0). High coefficient of reproducibility of mother stock was in LLC "Konezavod Berte" (1.09).
The results of scientifi c and production experiment in fattening of steers of Kalmyk breed under farm environments of feeding have been presented in the article. The ration of the experimental group of steers included local natural mineral feed additives: Khongurinsky zeolite and Kempendyskaya salt, the deposit of them is located in the Suntarsky district in the Republic of Sakha (Yakutia). It has been found when adding 200 g/head/day of zeolite and 45 g of salt to the ration for fattening steers the growth of young animals has increased by 12,0 % compared to the control group. The research has confi rmed the prospects of using local natural mineral feed additives in the ration of fattening steers in order to increase the growth and development of animals. In a short period of fattening after feeding (for 60 days), you can get an absolute gain in live weight from 40 to 50 kg with an average daily gain of 700–800 g with a daily feed consumption of 8 to 9 EFU with the fi nal live weight of 350 to 400 kg at the age of 18 months in farm environments of feeding. The feed conversion rate was 9,77. The level of profi tability from rearing of steers of Kalmyk breed by the age of 18 months has increased in comparison with the 15-month age, and in all age periods young Kalmyk cattle were more profi table than their herdmates of other local zoned breeds. For example, the superiority at 15 months of age was 8,2–3,5 %, at 18 months – 11,7–3,4 %. Economic calculations have shown that the prime-cost of 1 kg of meat at slaughter is 143,34 rubles, profi t per 1 ruble of costs – 2,14 rubles, profi tability – 186,13 %. Higher profi ts and profi tability obtained in the sale of the Kalmyk steers. Rational use of fattening-off and organization of fattening of steers leads to minimizing the prime-cost and increasing the effi ciency of beef cattle breeding in Yakutia.
