Para caracterizar la población de productores que distribuyen hortalizas orgánicas en la Gran Área Metropolitana (GAM) de Costa Rica, se aplicó una encuesta semi-estructurada a 30 de ellos, ubicados en distintos puntos de venta durante noviembre del 2013 a febrero del 2014. Estos productores fueron categorizados en 3 grupos: el primero, con más de 10 años de experiencia en el sector, está dedicado exclusivamente a esta actividad, utiliza mano de obra familiar, cultiva alrededor de una hectárea, diversifica la producción, se encuentra agremiado y certificado y tiene la escolaridad más baja, comparada con los otros grupos. El productor del segundo grupo se caracteriza por tener alrededor de 7 años en la actividad y dedicación casi exclusiva, hace poco uso de la mano de obra familiar, cultiva menos de media hectárea, no está necesariamente agremiado y/o certificado y posee un nivel de escolaridad intermedio. El tercer grupo corresponde a productores con menos años de experiencia en esta actividad y la más baja dedicación a la misma; hacen menos uso de la mano de obra familiar; tienen el área de cultivo más pequeña y diversifican poco la producción; pueden o no estar agremiados y/o certificados; poseen la más alta escolaridad. Se concluye que la producción de hortalizas orgánicas es un mercado en crecimiento, que requiere apoyo externo en forma de créditos y asistencia técnica para consolidarse, e incluso compensaciones por los servicios ambientales que produce; de cumplirse estas condiciones se podrá asistir en los próximos años a un crecimiento importante del sector.
O buriti (Mauritia flexuosa L.) é uma fruta nativa da Região Amazônica, fonte de vitaminas A, C e E e nutrientes importantes para a nutrição humana. A inserção da polpa da fruta em iogurtes surge como alternativa funcional e benéfica, de alto valor agregado e importância sociocultural. Dessa forma, o objetivo deste trabalho foi desenvolver um iogurte tipo grego com adição de doce de buriti e avaliar sua aceitabilidade sensorial. O iogurte grego foi preparado com leite UHT desnatado no Laboratório de Bioenergia, da Universidade Federal do Amazonas. Para testar a aceitabilidade, foi realizada uma análise sensorial com 50 provadores não treinados, onde foi aplicada uma ficha de avalição com uma escala hedônica de nove pontos com os extremos “gostei extremamente” e “desgostei extremamente”, submetidos para uma avaliação de atributos sensoriais (aroma, aparência, cor, sabor e textura). O atributo sabor obteve a maior nota média (8,08), seguido pela cor (7,54), a textura (7,42), o aroma (6,94) e a aparência (6,9). O produto elaborado mostrou ser um potencial competitivo em comparação a outros iogurtes gregos produzidos com doces de frutas amazônicas e frutas convencionais, sendo fortemente recomendado como uma ideia inovadora no mercado de iogurtes com identidade regional.
RESUMOO cubiu é uma espécie componente da biodiversidade amazônica, com potencial econômico para geração de renda a pequenos agricultores. Possui aroma e sabor agradáveis, além de apresentar nutrientes, alto teor de pectina e ter potencial para formulações de outros produtos como compotas, geleias e sucos. O objetivo deste trabalho foi desenvolver uma geleia de cubiu, e posteriormente, avaliar a viabilidade econômica e a intenção de compra por consumidores de uma feira da agricultura familiar em Manaus -Amazonas. A geleia foi preparada com 70% de polpa de fruta, 50% de açúcar e 50% de amido, considerando 1kg de cada ingrediente. A viabilidade econômica foi analisada a partir de indicadores como custos de produção, preço de venda, receita bruta e indicador de rentabilidade. A intenção de compra foi avaliada por meio da aplicação de questionários aos consumidores da feira, que indicaram nota de 1 a 5, sendo a nota 1 equivalente a certamente não compraria e a nota 5, equivalente a certamente compraria. Os resultados encontrados foram positivos, demonstrando um potencial mercadológico, pois a geleia de cubiu apresentou boa intenção de compra entre os consumidores e uma rentabilidade satisfatória nas condições estudadas.
