A beterraba e a banana possuem diversos benefícios para a saúde, a raiz e o fruto destacam-se principalmente por serem ricas em nutrientes, vitaminas e minerais. Neste sentido, o objetivo deste trabalho foi produzir e avaliar sensorialmente a geléia de beterraba com banana com casca visando promover a aceitação de um novo produto alimentício. Para a produção da geléia os ingredientes foram adquiridos em comércio local, sendo os mesmos a banana prata com casca (170 g), beterraba (160g), açúcar (240 g) e água filtrada (160 mL). Os atributos de aparência, cor, odor, sabor e impressão global foram analisados por 56 julgadores não treinados, utilizando uma escala hedônica de 9 pontos. Foi analisado também o perfil dos julgadores, bem como intenção de compra da geléia. Os resultados mostraram que a maioria dos julgadores consomem geleia ocasionalmente. Todos os parâmetros ficaram com notas entre gostei regularmente (nota 7) e gostei moderadamente (nota 8). O atributo que mais se destacou nas avaliações foi a cor (nota 8,5), já o de menor evidência foi o odor (nota 7,2). Os resultados mostraram que o produto obteve boa aceitabilidade, além de uma ótima intenção de compra (87%).
As indústrias alimentícias demonstram grande interesse em óleos essenciais, aplicando no desenvolvimento de novos produtos ou utilizando em produtos já existentes para conferir propriedades antimicrobianas. Esses óleos são substâncias complexas e propensas à degradação, o que dificulta a sua conservação e aplicação, sendo que uma alternativa viável é o microencapsulamento. Neste sentido, esta pesquisa teve como objetivo avaliar a capacidade antimicrobiana dos óleos essenciais nerol e melaleuca, e de microcápsulas de β-ciclodextrina contendo estes óleos. A avaliação da atividade antimicrobiana dos óleos essencias puros e microencapsulados em β-ciclodextrina foi realizada por meio da técnica de difusão em meio sólido (DMS) a partir de orifício e pela concentração inibitória mínima (CIM) frente aos microrganismos Staphylococcus aureus e Escherichia coli. Observou-se que tanto os óleos nerol e melaleuca puros, quanto as microencápsulas, tiveram ação antimicrobiana frente aos microrganismos estudados. O mesmo comportamento observado para os óleos puros foi constatado com as microcápsulas, sendo que para S. aureus o nerol foi mais efetivo e para E. coli o óleo melaleuca teve maior inibição.
