Désignées notamment par le concept d'« Alternative Agri-Food Network » (Ilbery et al., 2005 ; Deverre et Lamine, 2010), ces initiatives renvoient à des réalités diverses comme les AMAP ou les magasins de producteurs (Pouzenc et al., 2008). Bien que leur définition ne soit pas encore totalement stabilisée, on peut avancer que ces circuits modifient la relation entre producteurs et consommateurs. Ces nouvelles structures se différencient des AMAP, des marchés ou des systèmes de vente à la ferme par un renforcement de l'action collective, un recours plus marqué aux technologies numériques et ponctuellement par une présence accrue d'organismes d'accompagnement (coopératives, chambres d'agriculture).
2Pour de nombreux auteurs, le développement de ces systèmes est aussi consubstantiel d'un processus de relocalisation de l'agriculture (Marsden et al., 2000 ;Praly et al., 2014). Celui-ci est notamment abordé à travers une redéfinition du lien social entre agriculteurs et consommateurs, mais aussi entre les agriculteurs eux-mêmes (Guiraud, 2016).
