Cet article, reposant sur une recherche ethnographique réalisée à Brasília et à São Paulo, se propose de suivre les transformations du café lors de son entrée sur le marché segmenté, lorsqu’il se trouve apprécié pour de nouvelles raisons et devient, en particulier, un art de la dégustation sensorielle. Dans ce but, 17 établissements ont été examinés et des questionnaires appliqués à 29 baristas. Les données recueillies permettent de suggérer une cartographie de la circulation des saveurs et des compétences dans les espaces de consommation du café.

Seguindo Foucault em As palavras e as coisas, recorre-se à exposição das duas mais recentes configurações do conhecimento ocidental, as chamadas epistémês clássica e moderna, no intuito de se problematizar a noção de um “retrato fidedigno do real”. Como saída didática, tomamos o quadro Las meninas, de Diego Velázquez, enquanto objeto heurístico para contrapor as diferentes possibilidades de leitura epistêmica. Por último, a fim de trazer a discussão para o escopo das ciências sociais, o antropólogo norte-americano Gregory Bateson entra em cena como representante de um dos tipos de interpretação, enquanto tentamos construir uma analogia entre a técnica da pintura e os dilemas da etnografia e metodologia científica.
