Carbonyl compounds (CC) can be formed during the craft beer production process, which influence the sensory properties, in addition to their toxicity. The formation of bound-CC, in craft beers, is favored by the high reactivity of these substances. This work aimed to quantify 15 carbonyl compounds, in free and bound forms, in craft beers using hydrolysis (boundCC only) and derivatization reactions. Acetaldehyde concentrations ranged from 8.83 to 466.1 µg L-1 (free fraction) and 22.47 to 1665 µg L-1 (bound fraction). Other compounds found were acrolein (free + boundmax.: 2897 µg L-1), benzaldehyde (free + boundmax.: 1326 µg L-1), heptanal (free + boundmax.: 1140 µg L-1) and formaldehyde (free + boundmax.: 97.73 µg L-1). Craft beers showed a proportion of up to 76% for CC in the bound form, which can be related to undesirable flavors in beverages. The consumption of craft beers containing free- and bound-CC (especially acrolein) could pose a risk to the health of frequent consumers.
This work aimed to perform a brief literature review on methodologies for the determination of carbonyl compounds in beer, their interference in the quality of the beverage and their effects on human health. Bibliographic materials were selected from different databases published between 2017 and 2021. About 50 titles were selected, of which 24 were chosen for this review considering their adherence to the topic. Derivatization was the most used treatment for sample preparation and chromatography the most used technique for measuring analytes. The identification of carbonyl compounds shows the relevance of analytical methods for monitoring these compounds in beer and its components.
Resumo: Este trabalho teve como objetivo realizar uma breve revisão acerca de métodos utilizados para a determinação de HPAs em amostras de ar atmosférico oriundo de ambientes fechados. Os artigos foram selecionados, após consulta em diferentes bases de dados e avaliados de acordo com a aderência ao tema. Membranas de quartzo, filtros de microfibra de vidro e filtro de PTFE têm sido usados durante a etapa de coleta das amostras. No processo de extração dos analitos, diclorometano e mistura de solventes têm sido empregados. Os analitos são quantificados usando as técnicas de GC-MS ou HPLC-FLD. A quantificação de HPAs em ar ambiente evidencia a eficácia dos métodos apresentados, tornando-se importante a implementação de métodos de rotina para o monitoramento destas substâncias em ambientes fechados.
