The objective of the present study was the evaluation of the presence of organic and inorganic contaminants in samples of aged cachaça from the South of the state of Minas Gerais. Furfural, methanol and copper were determined by colorimetric reactions, while the analyses of ethyl carbamate and acrolein were performed by GC/ MS and HPLC, respectively. High levels of furfural and copper were obtained. All samples showed concentrations below the established by legislation for the ethyl carbamate, and for acrolein, only one sample showed higher levels. INTRODUÇÃODe acordo com o Decreto nº 4851 de 2003 e com a Instrução Normativa nº 13 de 30/6/ 2005, aguardente de cana é a bebida com graduação alcoólica de 38 a 54% v/v à 20 °C, obtida do destilado alcoólico simples de cana-de-açúcar ou pela destilação do mosto fermentado do caldo de cana-de-açúcar, podendo ser adicionada de açúcares até 6 g/L, expressas em sacarose. A cachaça, entretanto, foi definida como sendo a denominação típica e exclusiva da aguardente de cana produzida no Brasil, com graduação alcoólica de 38 a 48% v/v à 20 ºC, obtida pala destilação do mosto fermentado do caldo de cana-de-açúcar com características sensoriais peculiares, podendo ser adicionada de açúcares até 6 g/L, expressos em sacarose. 1,2As bebidas alcoólicas fermento-destiladas distinguem-se uma das outras pela presença de componentes secundários que irão formar um "buquê" característico de cada bebida. Esses componentes secundá-rios se formam juntamente com o álcool etílico durante o processo de fermentação do mosto, mudam de caráter e proporção durante a destilação, havendo uma posterior maturação do produto. 3,4 No entanto, alguns compostos são indesejáveis à bebida devido, principalmente, as suas propriedades tóxicas, cancerígenas e características que depreciam a qualidade do produto final.Devido à complexidade da composição química da cachaça esta é dividida em fração orgânica e inorgânica. A primeira é constituída basicamente de alcoóis, aldeídos, ésteres, ácidos carboxílicos, cetonas, carbamato de etila e compostos sulfurados. Dependendo do teor e dos compostos presentes, a bebida pode ser classificada como desejável ou não, em relação à aceitação sensorial, ou em tóxica e não tóxica, em relação à saúde. A fração inorgânica é constituída principalmente por íons metálicos, tais como alumínio, cádmio, cálcio, chumbo, cobalto, cobre, cromo, ferro, etc. 5A legislação brasileira, Decreto n° 2314 de 04/09/1997 estabelece o limite máximo de cobre em 5 mg/L de produto. 6 No entanto, no mercado internacional o limite máximo estabelecido é de 2 mg/L tornando-se, assim, um entrave para as exportações da bebida. 7 Embora nesta concentração o cobre não possa ser considerado como tóxico, a sua presença contribui para ressaltar o sabor ácido na bebida, além de facilitar os processos oxidativo...

A cachaça, tradicional e popular bebida brasileira, é obtida por meio da destilação do mosto fermentado de cana de açúcar. Dentre as etapas do processo de produção da bebida, o envelhecimento natural consiste em armazená-la em recipientes de madeira apropriados por um tempo determinado, onde ocorrem alterações na composição química, aroma, sabor e cor da bebida. Este trabalho teve como objetivo realizar um acompanhamento da composição fenólica em diferentes períodos de envelhecimento da cachaça em tonel de carvalho (Quercus sp.). Foram realizadas coletas periódicas durante o período de envelhecimento da cachaça em tonel de carvalho e realizaram-se análise de treze compostos fenólicos utilizando a técnica de cromatografia líquida de alta eficiência com detector de arranjo de diodos (HPLC-DAD). Foi constatado um aumento progressivo na concentração dos compostos analisados ao longo do período analisado, sendo que os compostos encontrados em maior concentração foram siringaldeído e ácido gálico.Cachaça is a traditional and popular Brazilian drink obtained by distilling fermented sugar cane juice. Among the steps involved in its production, natural aging in wood containers for a certain period of time can lead to alterations in the chemical composition, aroma, flavor and color of the beverage. The present work sought to determine the concentration of phenolic compounds after different periods of aging of the cachaça in an oak (Quercus sp.) barrel. Periodic collections during the aging period were performed, and thirteen selected phenolic compounds were determined by high performance liquid chromatography with a diode-array detector (HPLC-DAD). A progressive increase in the concentration of the compounds analyzed was observed, with syringaldehyde and gallic acid as the compounds encountered in the highest concentration.
Propolis is a complex mixture of resinous and balsamic material collected from the exudates of plants, shoots, and leaves by bees. This study evaluated red propolis extracts obtained by conventional (ethanolic) extraction and ultrasound-assisted extraction of six samples from different regions of northeastern Brazil. The total phenolic compounds and flavonoids, in vitro antioxidant activity, concentration of formononetin and kaempferol and the cytotoxicity against four human tumor cell lines were determined for all twelve obtained extracts. Significant variations in the levels of the investigated compounds were identified in the red propolis extracts, confirming that the chemical composition varied according to the sampling region. The extraction method used also influenced the resulting propolis compounds. The highest concentration of the compounds of interest and the highest in vitro antioxidant activity were exhibited by the extracts obtained from samples from state of Alagoas. Formononetin and kaempferol were identified in all samples. The highest formononetin concentrations were identified in extracts obtained by ultrasound, thus indicating a greater selectivity for the extraction of this compound by this method. Regarding cytotoxic activity, for the HCT-116 line, all of the extracts showed an inhibition of greater than 90%, whereas for the HL-60 and PC3 lines, the minimum identified was 80%. In general, there was no significant difference (p>0.05) in the antiproliferative potential when comparing the extraction methods. The results showed that the composition of Brazilian red propolis varies significantly depending on the geographical origin and that the method used influences the resulting compounds that are present in propolis. However, regardless of the geographical origin and the extraction method used, all the red propolis samples studied presented great biological potential and high antioxidant activity. Furthermore, the ultrasound-assisted method can be efficiently applied to obtain extracts of red propolis more quickly and with high concentration of biomarkers of interest.
RESUMOEste trabalho teve por objetivo a determinação da composição físico-química de cachaças artesanais produzidas no sul do Estado de Minas Gerais e suas misturas. Foram analisados os teores de etanol, acidez volátil, aldeídos, cobre, ésteres, álcoois superiores totais e metanol, além dos álcoois propanol-1, isobutanol e 3-metil-butanol-1. Os resultados apresentam o perfil peculiar desta bebida, que apresentou teores satisfatórios de álcoois superiores, ésteres e aldeídos. O teor de cobre apresenta-se como preocupante já que algumas amostras excederam o limite de 5 mg.L -1 . A produção de misturas foi estudada e esta apresenta-se como uma alternativa viável ao produtor e cooperativas.Termos para indexação: Cachaça, controle de qualidade, cromatografia. ABSTRACTThe present study sought the physical-chemical composition of homemade cachaças produced in the south of the state Minas Gerais and of mixtures of the same cachaça samples. The ethanol, aldehyde, copper, higher alcohol, volatile acid and methanol concentrations were determined, in addition to the individual propanol, 2-methyl-1-propanol and 3-methyl-1-butanol concentrations. The results demonstrated the characteristic profile of this beverage, which presented satisfactory concentrations of higher alcohols, esters, and aldehydes. The copper concentrations of some samples exceeded the limit of 5 mg. L -1 . The mixtures produced from some of the cachaça samples presented a viable alternative for the producers and cooperatives because the concentrations of the components were more adequate for exportation.Index terms: Cachaça, quality control, chromatography. INTRODUÇÃOA Instrução Normativa número 13, de 29 de junho de 2005, define como cachaça a bebida com graduação alcoólica de trinta e oito a quarenta e oito por cento em volume, a vinte graus Celsius, obtida de destilado alcoólico simples ou pela destilação do mosto fermentado de canade-açúcar, podendo ser adicionada de açúcares até seis gramas por litro (BRASIL, 2005a). A globalização tem influenciado consideravelmente nos hábitos de consumo de pessoas do mundo todo. Isto faz com que se necessite de um maior controle e conhecimento de produtos comercializados no mercado interno e externo, devendo se efetuar técnicas de padronização, especificação e certificação (FERNANDES et al., 2005). A cachaça é a bebida destilada mais consumida no Brasil. Estima-se um consumo de dois bilhões de litros anualmente, envolvendo um capital de dois bilhões de dólares, distribuídos em todas as classes sociais (DRINKS..., 1994; IMPACT..., 1996).A produção de cachaça de modo artesanal resulta em algumas peculiaridades no produto final. Trabalhos de Faria (1989) relatam que o cobre usado nos destiladores catalisa algumas reações e retira alguns odores desagradáveis encontrados em cachaças produzidas em alambiques de outros materiais, como o aço inoxidável e outros. Minas Gerais is the highest producer of handmade spirits. Research has been carried out aiming to contribute to progress. Thus, the goal of this work is to evaluate the quality of spirits in three different regions of Minas Gerais state. We analyzed ethyl carbamate, alcoholic grade, volatile acidity, higher alcohols, aldehyde, esters, methanol, furfural and copper. The values obtained for ethyl carbamate varied from undetectable to 643.5 µg L -1 , with only one region not following the legislation (150 µg L -1 ). Most of the compounds in the spirits were present within the limits estabilished by the legislation.
RESUMOEste trabalho teve por objetivo avaliar as concentrações de furfural, álcoois superiores, ésteres, aldeídos, cobre, acidez volátil, metanol e grau alcoólico de aguardentes obtidas de cana, com e sem queima prévia. Foram utilizadas amostras de aguardente artesanal de cana queimada e não queimada, fermentadas com a mesma levedura e destiladas no mesmo destilador; amostras de produtor de aguardente industrial de cana queimada e amostras obtidas de outro produtor artesanal de cana não queimada. As análises físico-químicas e cromatográficas (CG) foram realizadas no Laboratório de Análise Físico-Química de Aguardente -LAFQA/DQI na Universidade Federal de Lavras. As concentrações de furfural apresentaram diferença significativa (P<0,01), entre os grupos de aguardentes artesanais, obtidas de cana-de-açúcar com e sem queima prévia, oriundas de um mesmo processo de produção, com médias de 1,48 mg.100mL Termos para indexação: Cachaça, cana queimada, cana não queimada, característica físico-química, furfural. ABSTRACTThis work was intended to evaluate the concentrations of furfural, higher alcohols, esters, aldehydes, copper, volatile acidity methanol and alcoholic degree of sugar cane brandies obtained from sugar cane both with and without previous burning. Samples of artisanal brandies from burnt and non-burnt cane, fermented with the same yeast and distilled in the same still, samples of burnt cane from an industrial brandy producer and samples of non-burnt cane obtained from another artisanal producer were utilized. The physicochemical and chromatographic (CG) analyses were accomplished in the Sugar Cane Brandy Physicochemical Analysis Laboratory at the Federal University of Lavras. The concentrations of furfural showed significant differences (P<0.01) among the groups of artisanal brandies obtained from sugar cane with and without previous burning, coming from the same manufacturing process with means of 1.48 mg.100mL -1 ethanol and 0.63mg.100mL -1 ethanol, respectively, although they have been bellow the maximum limit (5.0 mg.100mL -1 ethanol) allowed. The other components of the brandies studied were not affected significantly by the previous burning of sugar cane.
