The objective of the present study was the evaluation of the presence of organic and inorganic contaminants in samples of aged cachaça from the South of the state of Minas Gerais. Furfural, methanol and copper were determined by colorimetric reactions, while the analyses of ethyl carbamate and acrolein were performed by GC/ MS and HPLC, respectively. High levels of furfural and copper were obtained. All samples showed concentrations below the established by legislation for the ethyl carbamate, and for acrolein, only one sample showed higher levels. INTRODUÇÃODe acordo com o Decreto nº 4851 de 2003 e com a Instrução Normativa nº 13 de 30/6/ 2005, aguardente de cana é a bebida com graduação alcoólica de 38 a 54% v/v à 20 °C, obtida do destilado alcoólico simples de cana-de-açúcar ou pela destilação do mosto fermentado do caldo de cana-de-açúcar, podendo ser adicionada de açúcares até 6 g/L, expressas em sacarose. A cachaça, entretanto, foi definida como sendo a denominação típica e exclusiva da aguardente de cana produzida no Brasil, com graduação alcoólica de 38 a 48% v/v à 20 ºC, obtida pala destilação do mosto fermentado do caldo de cana-de-açúcar com características sensoriais peculiares, podendo ser adicionada de açúcares até 6 g/L, expressos em sacarose. 1,2As bebidas alcoólicas fermento-destiladas distinguem-se uma das outras pela presença de componentes secundários que irão formar um "buquê" característico de cada bebida. Esses componentes secundá-rios se formam juntamente com o álcool etílico durante o processo de fermentação do mosto, mudam de caráter e proporção durante a destilação, havendo uma posterior maturação do produto. 3,4 No entanto, alguns compostos são indesejáveis à bebida devido, principalmente, as suas propriedades tóxicas, cancerígenas e características que depreciam a qualidade do produto final.Devido à complexidade da composição química da cachaça esta é dividida em fração orgânica e inorgânica. A primeira é constituída basicamente de alcoóis, aldeídos, ésteres, ácidos carboxílicos, cetonas, carbamato de etila e compostos sulfurados. Dependendo do teor e dos compostos presentes, a bebida pode ser classificada como desejável ou não, em relação à aceitação sensorial, ou em tóxica e não tóxica, em relação à saúde. A fração inorgânica é constituída principalmente por íons metálicos, tais como alumínio, cádmio, cálcio, chumbo, cobalto, cobre, cromo, ferro, etc. 5A legislação brasileira, Decreto n° 2314 de 04/09/1997 estabelece o limite máximo de cobre em 5 mg/L de produto. 6 No entanto, no mercado internacional o limite máximo estabelecido é de 2 mg/L tornando-se, assim, um entrave para as exportações da bebida. 7 Embora nesta concentração o cobre não possa ser considerado como tóxico, a sua presença contribui para ressaltar o sabor ácido na bebida, além de facilitar os processos oxidativo...
RESUMOEste trabalho teve por objetivo a determinação da composição físico-química de cachaças artesanais produzidas no sul do Estado de Minas Gerais e suas misturas. Foram analisados os teores de etanol, acidez volátil, aldeídos, cobre, ésteres, álcoois superiores totais e metanol, além dos álcoois propanol-1, isobutanol e 3-metil-butanol-1. Os resultados apresentam o perfil peculiar desta bebida, que apresentou teores satisfatórios de álcoois superiores, ésteres e aldeídos. O teor de cobre apresenta-se como preocupante já que algumas amostras excederam o limite de 5 mg.L -1 . ABSTRACTThe present study sought the physical-chemical composition of homemade cachaças produced in the south of the state Minas Gerais and of mixtures of the same cachaça samples. The ethanol, aldehyde, copper, higher alcohol, volatile acid and methanol concentrations were determined, in addition to the individual propanol, 2-methyl-1-propanol and 3-methyl-1-butanol concentrations. The results demonstrated the characteristic profile of this beverage, which presented satisfactory concentrations of higher alcohols, esters, and aldehydes. The copper concentrations of some samples exceeded the limit of 5 mg. L -1 . The mixtures produced from some of the cachaça samples presented a viable alternative for the producers and cooperatives because the concentrations of the components were more adequate for exportation.Index terms: Cachaça, quality control, chromatography. INTRODUÇÃOA Instrução Normativa número 13, de 29 de junho de 2005, define como cachaça a bebida com graduação alcoólica de trinta e oito a quarenta e oito por cento em volume, a vinte graus Celsius, obtida de destilado alcoólico simples ou pela destilação do mosto fermentado de canade-açúcar, podendo ser adicionada de açúcares até seis gramas por litro (BRASIL, 2005a). A globalização tem influenciado consideravelmente nos hábitos de consumo de pessoas do mundo todo. Isto faz com que se necessite de um maior controle e conhecimento de produtos comercializados no mercado interno e externo, devendo se efetuar técnicas de padronização, especificação e certificação (FERNANDES et al., 2005). A cachaça é a bebida destilada mais consumida no Brasil. RESUMOEste trabalho teve por objetivo avaliar as concentrações de furfural, álcoois superiores, ésteres, aldeídos, cobre, acidez volátil, metanol e grau alcoólico de aguardentes obtidas de cana, com e sem queima prévia. Foram utilizadas amostras de aguardente artesanal de cana queimada e não queimada, fermentadas com a mesma levedura e destiladas no mesmo destilador; amostras de produtor de aguardente industrial de cana queimada e amostras obtidas de outro produtor artesanal de cana não queimada. As análises físico-químicas e cromatográficas (CG) foram realizadas no Laboratório de Análise Físico-Química de Aguardente -LAFQA/DQI na Universidade Federal de Lavras. ABSTRACTThis work was intended to evaluate the concentrations of furfural, higher alcohols, esters, aldehydes, copper, volatile acidity methanol and alcoholic degree of sugar cane brandies obtained from sugar cane both with and without previous burning. Samples of artisanal brandies from burnt and non-burnt cane, fermented with the same yeast and distilled in the same still, samples of burnt cane from an industrial brandy producer and samples of non-burnt cane obtained from another artisanal producer were utilized. The physicochemical and chromatographic (CG) analyses were accomplished in the Sugar Cane Brandy Physicochemical Analysis Laboratory at the Federal University of Lavras. The concentrations of furfural showed significant differences (P<0.01) among the groups of artisanal brandies obtained from sugar cane with and without previous burning, coming from the same manufacturing process with means of 1.48 mg.100mL -1 ethanol and 0.63mg.100mL -1 ethanol, respectively, although they have been bellow the maximum limit (5.0 mg.100mL -1 ethanol) allowed. The other components of the brandies studied were not affected significantly by the previous burning of sugar cane.
Seventy-one samples of sugarcane spirits from small and average size stills produced in the northern and southern Minas Gerais (Brazil) were analyzed for acrolein using HPLC (High Performance Liquid Chromatography). Ethanol and copper concentrations and volatile acidity were also determined according to methods established by the Ministry of Agriculture, Livestock and Supply (MAPA). A total of 9.85% of the samples tested showed levels of acrolein above the legal limits, while the copper concentrations of 21.00% of the samples and the volatile acidity of 8.85% of the samples were higher than the limits established by the Brazilian legislation. The concentration of acrolein varied from 0 to 21.97 mg.100 mL-1 of ethanol. However, no significant difference at 5% of significance was observed between the samples produced in the northern and southern Minas Gerais. The method used for determination of acrolein in sugarcane spirits involved the formation of a derivative with 2,4-dinitrophenylhydrazine (2,4-DNPH) and subsequent analysis by HPLC.
Ethyl carbamate, also known as urethane, is the ethyl ester of carbamic acid. Animal studies with this compound have demonstrated its carcinogenic potential. In this study, gas chromatography coupled to mass spectrometry (GC-MS) was applied for the determination of ethyl carbamate in sugar cane spirits in the northern and southern regions of the state of Minas Gerais in Brazil. The samples were collected from distillates from small-and medium-scale stills. The concentrations determined for ethyl carbamate in the samples ranged from 23 to 980 μg L À1 . All of the samples analysed from the southern region of Minas Gerais had an ethyl carbamate content below the limit set by the Brazilian legislation for ethyl carbamate of 150 μg L À1 , while a number of samples from northern Minas Gerais exceeded this limit. No correlations were observed between the levels of ethyl carbamate and the alcohol content, acidity or copper concentrations in the samples.
