Após a desidratação do alimento, se faz necessário uma avaliação nutricional, já que, altas temperaturas e tempos longos de secagem induzem a perdas de nutrientes. Sendo assim, o objetivo deste trabalho foi determinar em qual temperatura de secagem a polpa da pupunha vermelha integral, sofre menores perdas no seu conteúdo nutricional. As temperaturas de secagem utilizada foram, 45, 55 e 65°C. A temperatura mais eficiente na retirada de água livre da polpa de pupunha foi a 65oC. Apesar dos lipídeos apresentarem-se mais concentrados a temperatura de 45oC, foi a 65oC que houve maior concentração de proteínas e fibras. A polpa desidratada a 55 e 65oC, podem ser consideradas como fonte de fibra alimentar segundo a legislação. O menor teor de cinzas, foi obtido no tratamento a temperatura de 45oC. Os carboidratos e os carotenóides foram significativamente influenciados pelas maiores temperaturas de secagem. Portanto, dependendo da finalidade nutricional ou tecnológica para desidratar o fruto de pupunha, as três temperaturas analisadas nessa pesquisa, devem ser utilizadas para atingir o objetivo proposto.
O fruto da pupunheira é utilizado como alimento em várias receitas culinárias pela população da região Amazônica. A casca e a polpa do fruto apresentam alto valor nutricional, em função das concentrações de minerais, fibra alimentar e quantidade significativas de carotenóides biodisponíveis. Em função disso, este trabalho teve por objetivo melhorar a composição centesimal do pão comum que é fonte predominante de carboidratos através da adição da polpa de pupunha desidratada integral, por conter carotenóides e óleos essenciais, bem como, a fibra alimentar. As formulações dos pães foram definidas através de ensaios preliminares, sendo escolhidas as formulações contendo 100 e 150 g de polpa de pupunha desidratada integral. As amostras foram submetidas às analises microbiológicas de coliformes termotolerantes a 45°C, Staphylococus aureus e Salmonella spp e de composição centesimal de proteína, cinzas, lipídios, umidade, fibras, carboidrato, valor calórico total, além dos carotenóides totais. Os resultados indicam composição química superior em cinzas (4,51 e 4,73 g/100g), lipídios (0,94 e 1,07 g/100g) e fibra alimentar (0,53 e 0,95 g/100g) para os pães com 100 e 150 g de polpa de pupunha desidratada integral, respectivamente, quando comparados ao pão controle. Porém, apresentaram menores concentrações de carboidratos e valor calórico, além de boas quantidades de fibra alimentar e carotenóides totais, quando comparado ao pão comum, o que credencia o mesmo a ser utilizado como alimento funcional e saudável, e assim, propiciar benefícios à saúde do consumidor.
O objetivo deste trabalho foi analisar farinhas de mandioca comercializadas no mercado municipal Elias Mansur em Rio Branco-Acre e, comparar os resultados obtidos com outros publicados na literatura e, principalmente com os padrões mínimos de identidade e qualidade previstos na legislação brasileira. Dez amostras composta de 2 quilos de farinha de mandioca foram coletadas e submetidas a análises de composição centesimal de umidade, cinzas e fibras e químicas de acidez e teor de amido, além, de análises físicas de granulometria, teor de impurezas e matéria estranha. Todas as farinhas analisadas apresentaram resultados de composição centesimal, química e física próximos aos comparados com outros estudos citados na literatura consultada, mesmo que para regiões diferentes ou no local onde o estudo foi realizado, com pequenas discrepâncias para algumas comparações. Em relação à legislação, as farinhas foram classificadas como sendo, 30% pertencentes ao grupo intitulado farinha seca, classe fina e tipo 1 e, 70% classificadas no mesmo grupo e tipo, porém, pertencentes à classe grossa. Entretanto, todas as farinhas analisadas atenderam aos parâmetros de identidade e qualidade previstas na legislação brasileira. Cem por cento das farinhas apresentaram baixa acidez e teor de umidade abaixo do valor máximo indicado pela legislação, garantindo assim, segurança alimentar, sob o ponto de vista microbiológico, durante o período de comercialização se for armazenada de maneira correta.
Buscou-se desenvolver um iogurte artesanal enriquecido com diferentes concentrações de polpa de cupuaçu e semente de linhaça dourada, resultando em um produto com alto valor agregado comercial, nutritivo e funcional, valorizando sobretudo o cupuaçu, por ser um fruto amazônico típico da região Norte, e que está inserido na cultura alimentar local. Três formulações de iogurte, foram elaborados. Realizou-se análises de composição centesimal e físico químicas, além de análises microbiológicas de coliformes totais, termotolerantes, bolores e leveduras. Os iogurtes apresentaram teores de proteínas, valores de pH e ácido láctico de acordo com a legislação, além, de baixos teores de carboidratos, valor calórico e, altos teores de fibra alimentar e concentrações de vitamina C. Os teores de gorduras, acima do que estabelece a legislação, classificou os iogurtes como cremoso. Os ingredientes adicionados na formulação dos iogurtes, resultaram no valor nutricional considerado satisfatório. A presença de micro-organismos nos iogurtes, abaixo do que determina a legislação, garante a segurança alimentar para o consumo humano. Embora o material não tenha sido submetido à análise sensorial, testes preliminares, demonstraram que a formulação do iogurte 1, foi a que apresentou as melhores características sensoriais, principalmente de sabor.
