Ionizing radiation has been widely used in industrial processes, especially in the sterilization of medicals, pharmaceuticals, cosmetic products, and in food processing. Similar to other techniques of food processing, irradiation can induce certain alterations that can modify both the chemical composition and the nutritional value of foods. These changes depend on the food composition, the irradiation dose and factors such as temperature and presence or absence of oxygen in the irradiating environment. The sensitivity of vitamins to radiation is unpredictable and food vitamin losses during the irradiation are often substantial. The aim of this study was to discuss retention or loss of vitamins in several food products submitted to an irradiation process.
Este trabalho avaliou a atuação dos Conselhos Municipais de Alimentação Escolar, criados para assessorar e fiscalizar o programa de alimentação escolar. Analisando-se informações obtidas entre setembro de 1997 e abril de 1998, em 1.378 municípios brasileiros, verificou-se que a atribuição principal dos Conselhos é a fiscalização da aplicação dos recursos destinados ao Programa Nacional de Alimentação Escolar (76,90% dos municípios), seguida pelo acompanhamento do Programa nas escolas (63,45%), pela participação na elaboração do cardápio (50,41%) e pela assessoria na programação, execução e avaliação do Programa (38,90%). O ajuste de modelos próbites multivariados identificou variáveis relevantes para a participação dos Conselhos em diferentes atribuições e mostrou que a descentralização do gerenciamento do Programa aumentou a efetividade da atuação dos Conselhos. Contudo, o conjunto dos resultados evidencia a necessidade de uma atuação mais efetiva dos Conselhos Municipais de Alimentação Escolar como espaço de participação popular e de promoção do Programa Nacional de Alimentação Escolar.
Fish production has increased in Brazil, mainly the fresh-water aquaculture. However, refrigerated fish presents a relatively short shelf-life (approximately 12 days). In view of the increasing demand for fresh products, there is the need of shelf-life lengthening through a combination of methods in order to minimally expose the product to adverse conditions. The use of the modified atmosphere packaging presents the following advantages: lengthening of the products' shelf-life by 50 to 400%, reduction of economic losses, cost reductions by distributing the product over great distances with the need of fewer shipments and the supply of a better quality product. The purpose of this work was to review and discuss the major effects of the modified-atmosphere packaging, especially carbon dioxide (CO 2 ), on seafood preservation, as well as on the survival and growth of seafood pathogenic organisms.

It appears that the concern with the consumption of foods low on fat and cholesterol and of high nutritional value has contributed to the increase in fish consumption (MICHELS; PROCHMANN, 2002).Among the benefits of a fish-based diet are the reduction of cholesterol levels and the low incidence of stroke, heart diseases, and Alzheimer's disease. Fish consumption can improve cognitive function in adults and prevent the birth of underweight infants as well as preterm delivery birth (BURGER, 2008). ResumoO objetivo desta pesquisa foi utilizar-se da técnica de Análise Fatorial Exploratória (AFE) para a adequação de instrumento de avaliação do consumo de pescado e as características envolvidas nesse processo. A coleta de dados ocorreu durante campanha de incentivo ao consumo de pescado no Brasil e contou com a participação de membros de uma comunidade universitária. Foi construído e utilizado um instrumento de avaliação composto por questões de múltipla escolha e em escala Likert de cinco pontos para avaliar a importância de determinados atributos no processo de aquisição e consumo de pescado. A amostra contou com a participação de 224 pessoas, sendo a sua maioria (65,6%) composta por mulheres. Quanto à frequência de consumo de pescado, 37,67% dos voluntários entrevistados responderam que consomem o produto de duas a três vezes ao mês e 29,6%, uma vez na semana. The accumulation of saxitoxins (STXs) in fish from freshwater aquaculture was investigated for the first time in the present study. Cyanotoxins have been monitored in liver and muscle samples of Oreochromis niloticus by chromatographic methods, both before and after the depuration process. The results show that tilapia can accumulate STXs. Our findings suggest that depuration with clean water is an alternative process to eliminate STXs from fish and, therefore, improve the safety of tilapia for consumers.
SUMMARYOne third of the world's fishing produce is not directly used for human consumption. Instead, it is used for making animal food or is wasted as residue. It would be ideal to use the raw material thoroughly and to recover by-products, preventing the generation of residues. With the objectives of increasing the income and the production of the industry, as well as minimizing environmental and health problems from fish residue, chemical silage from Tilapia (Oreochromis niloticus) processing residues was developed after homogenization and acidification of the biomass with 3% formic acid: propionic, 1:1, addition of antioxidant BHT and maintenance of pH at approximately 4.0. Analyses to determine the moisture, protein, lipids and ash were carried out. The amino acids were examined in an auto analyzer after acid hydrolysis, except for the tryptophan which was determined through colorimetry. The tilapia silage presented contents that were similar to or higher than the FAO standards for all essential amino acids, except for the tryptophan. The highest values found were for glutamic acid, lysine and leucine. The results indicate a potential use of the silage prepared from the Nile tilapia processing residue as a protein source in the manufacturing of fish food. Keywords: amino acids, fish residue, by-products. RESUMOASPECTOS NUTRICIONAIS DA SILAGEM DE TILÁPIA-DO-NILO (Oreochromis niloticus). Um terço da captura mundial de pescado não é empregada para o consumo direto na alimentação humana, segue para elaboração de rações ou é desperdiçada como resíduo. O ideal seria utilizar a matéria-prima em toda a sua extensão e recuperar os subprodutos, evitando a própria formação do resíduo. Com os objetivos de aumentar a receita e a eficiência de produção da indústria e, conseqüentemente, minimizar os problemas ambientais e de sanidade, provenientes do resíduo de pescado, procedeu-se à elaboração da silagem química do resíduo de beneficiamento de Tilápia-do-Nilo (Oreocrhromis niloticus) após homogeneização e acidificação da biomassa com 3% de ácido fórmico: propiônico, 1:1, adição de antioxidante BHT e manutenção do pH ao redor de 4,0. Foram realizadas análises para determinação da umidade, proteína, lipídios e cinza. Os aminoácidos foram examinados em auto-analisador após hidrólise ácida, à exceção do triptofano determinado por colorimetria. A silagem de tilápia apresentou valores semelhantes ou superiores ao padrão da FAO para todos os aminoácidos essenciais, exceto para o triptofano. Os valores mais elevados encontrados foram para o ácido glutâmico, leucina e lisina. Os resultados indicam a utilização potencial da silagem, preparada a partir do resíduo de processamento da Tilápia-do-Nilo, como fonte protéica na formulação de ração para peixes, uma vez que esta apresentou teores maiores para todos os aminoácidos contidos na farinha de peixe, com exceção do triptofano.
